Hi Søren, Once your trial expires, you won't be able to access any content that requires storage, so that your iDisk, sync, IMAP mail services, etc. go away. You keep your username (at least, you do under .Mac; I don't know about Mobile Me), so you can still use iChat with other .Mac or AOL users. You can also still use any .Mac groups that you've joined if someone else is hosting the group pages. (I haven't used this feature).
As David says, anyone can access a public folder that has been set up on an active .Mac user's iDisk. Supposedly, if you reactivate your account, you can regain your services -- I don't think content you put in these areas goes away immediately, because otherwise there would be problems with late renewals. However, I don't know how long your mail and disk content stays around on .Mac. If they move to Mobile Me, the content might not get moved over for an inactive account.
