1.
Create a Rule:

Popup:  If all criteria are met

Is not from a mailing list  (add this if your contacts are in lists that you
receive mail from)
>From is in category Book People

Move Message  Book Group Folder

Next create an outgoing rule. Just click the tab in Rules for Outgoing.
Select New to create a rule.

Any recipient is in group Book People
Move message to (Book group folder)
Remove Attachments (only if you do not want to keep attachments)

3.
Now that you are set with your rules, you can use the rule on your old
messages that you might have missed. Go back to your InBox and select all
(command- A) messages then control click on the messages and select Apply
Rules....select your Rule and they will all be sorted correctly. Same for
your sent mail.

As you have seen from other replies there are many ways of working with your
mail.
