You do not say how you are sharing your dial-up modem between computers. Is it possible that you and your daughter are knocking each other offline by connecting while the other is already connected? (It's been a long time since I used dial-up service, but I do remember this happening.)

Does the working iBook use the same cabling as the two problematic computers? If not, try using the known GOOD cable on the problematic computers. If nothing else, this should eliminate the cabling as suspect.
I think that it may also be possible that OS X may be having (compatibility) problems with your dial-up modem that OS 9 does not have.
Have you tried different modem strings to see if it helps? Have you contacted your modem manufacturer for advice?

We are about to go back to OS9 because this is way to time consuming to sit for hours waiting for the stupid thing to disconnect, or restart to make it stop disconnecting.
