1. Buy a 512MB stick of RAM to add to your existing RAM. You'll be REALLY glad you did this later.
2. Run Diskwarrior or Norton Utilities (from the CD) on your existing OS 9 to make certain the directory is in good shape. This is a CRUCIAL step to avoiding problems later on. You might want to defrag the drive too.
3. Use your new hard drive to make a complete backup.
4. Install OS X. It won't erase your OS 9 unless you tell it to erase the entire hard drive (don't do that).
5. After the reboot and registration, open the program Disk Utility (it will be in the Applications -> Utilities folder) and Repair Permissions.

All good advice but since we are talking a legacy iMac, be sure to update the firmware if you have not done so already. Save you from experiencing the: "Hunh what happened to my monitor?" syndrome. OS X runs fine on the early iMacs, you'll be pleased with the upgrade.
