I heard a product called PeerSync mentioned earlier in this thread so I contacted them about mirroring servers and here is their response if anyone is interested.
<Start> Let me give you a brief explanation of what PeerSync can do, and can't do. If you would like to mirror Mail Server A to Mail Server B, no problem, I suggest PeerSync Pro III ($499). You'll need one copy of PeerSync installed on Server A. If you would like to do the mirroring while the Mail Server is Live, and if the mail files are opened and locked, then you need our Enhanced Package ($349). The Enhanced Package includes Embedded Open File Manager (EOFM). EOFM allows PeerSync to copy open and locked files. You can download an evaluation copy of PeerSync with EOFM and give it a try. I suppose the problem here is that it is not a true "mirror" and you would therefore need a separate iMail license.
