I used to have an m class license for my moped years ago and let lapse
because well, I hadn't had a moped in over 6 years. I never took a
class for it, I just went in read the book and took the written test. I
was wondering though if the electric bikes require the moped license or
the motorcycle license. But then again different states have different
rules, so I guess this should be aimed at the folks in Texas.

Michael,

I only drive my bike at the strip, but a license is technically
necessary.
I went to this shady guy in a parking lot and rode his moped around for
$40.
Plus had to pass the written at the DMV.

A couple of buddys of mine went to a two day class at a college. Might
be
good if you want/need to learn some things.

Couple different options.
