I was thinking of doing just the moped version of the bike, since I am
only going to the post office and back.

Here in Michigan there's two things that define a moped.  It has to 
be 50cc and less and it can't go faster than 30 mph. I think.  Don't 
quote me on that.  Since we're riding electrics, I think I'd worry 
about the speed thing. If one had to, I suppose one could tell the 
controller to limit the power during inspection...
