Chow Mein Hot Dish (Casserole)
1-l/2# ground beef, ground pork, or turkey (leaner the better)
1 large onion, diced
1 cup celery, chopped
2 cans cream of mushroom soup
1 can chicken rice soup
1 package (*precook) frozen mixed vegetables, or Chinese vegetable
stir-fry package. *Cook and save the water.
2 cups chow mein noodles
1 Tablespoon soy sauce
1 small can mushroom pieces
Spray fry pan with Pam. Brown meat and onions. Add the celery, soups,
precooked vegetables with water, the soy sauce, mushrooms and 1 cup
of chow mein noodles. Mix well. Spray casserole with Pam, add the
cooked mixture. Cover top of casserole with remaining cup of chow
mein noodles. Bake 350 degree for 1 hour.
*Note: I often wing this by using fresh vegetables, as green beans,
bean sprouts, bok choy, mushrooms, etc. Instead of using the creamed
soups, I add 1 cup of uncooked long grained rice and 2 cans of
chicken or beef broth. Follow recipe's directions for noodles and
baking.
