Dilled Cucumbers
2 medium cucumbers, peeled and sliced
1/2 tsp. salt
1/2 c. sour cream
1 TBS lemon juice
2 TBS green onion, chopped
1/8 tsp. pepper
1/4 tsp sugar
1/2 tsp dried dill weed 

In small bowl, toss cucumbers with salt. Allow to stand for 10 
minutes. Meanwhile, combine all remaining ingredients. Drain 
cucumbers and combine with sour cream mixture. Chill until ready to 
serve.

Rice Pudding
1/2 gal. milk
1 stick (1/2 c.) butter
3/4 c. sugar
1 c. rice (uncooked)
8 oz. heavy cream
1 egg
1 tsp. vanilla
cinnamon
In saucepan bring to a boil the 1/2 gal of milk, butter and sugar. 
Add the rice, simmer approx. 45 minutes, stirring frequently. In 
separate bowl mix together the heavy cream, 1 egg and vanilla. Add to 
the rice mixture. Note...to avoid the egg mixture from scrambling, 
add several small amounts of the hot mixture to the egg mixture to 
warm it up.
