If I was going for overall flexibility it'd have to be a 73/5/600 PowerMac I've had 7500 and 7300 Macs in the past and they were as solid as houses, both mentally and physically. If you want to go for a true Powerhouse PowerMac, the later high-speed 9600s are seriously hot suff, and cheap. I believe the last 604e Mach5 model (9600/350?) actually matched up pretty well to the 233MHz G3 on performance.
