The beans are cheap, to be sure, but veggies aren't.  At least, not here 
in NY State.  Also, some people don't have a fridge to store the 
veggies. (a rare example, to be sure).  I do think that in all but the 
most dire situations, you could supplement some of the junk with some of 
the cheaper better foods, but you need to be educated.   ( I mean, as 
far as food goes - I was a Physics major, and still thought I was eating 
healthy because it was "Pasta and Meat!") 

I'm doing a lot more of growing my own foods, and making my own cheaper 
and healthier pro-biotic foods.  I've given a talk or two to the local 
libraries showing people how to cheaply make good sprouts, yogurt, 
sauerkraut, sourdough, etc.  Most of the people who show up though, are 
already the health-conscious crowd, so it's so far been preaching to the 
choir.  :-(

A good book to read about how the poor survive in the U.S. in real life 
is "Nickeled and Dimed", by Barbara Ehrenreich

She went undercover and lived like the Box-Mart greeters did for a 
year.  It was a real eye-opener, both to her and those who read the 
book.  Before she did this, she had the same "they only have themselves 
to blame" mentality that a lot of us do.
