Jeff,

in the Access database format your Gerbers/drill do not have to be
external to the database. They will be generated within the database and you
can have them automatically exported to an external directory at any
location you want to specify at the same time as an option. Anything in the
database can be exported with relative ease at anytime you wish, Gerbers,
Drill, PCBs, Schematics, Boms, you name it. Just make sure that the file is
not in an open edit window and right-click (do not left-click, what a pain)
the file in the left Explorer Pane, select export and choose your location
to send it to.
The only people who seem to not be using the Access database format
are a few who have rigid company policies and controls on individual file
revisions, or those who simply don't want to for some reason (usually they
just never took the time to review and change their practices).
