Thanks for the great feedback. I filled my husband in about these
options, and he surprised me by saying he doesn't feel like he has to
use iTunes. He apparently lost his playlists at some point, and doesn't
use the iTunes store, so switching to another program to manage his
music library would be fine with him. He does have an iPod (or two) and
synching with those would be good (although it's been a couple years
since he last synched!). 

1. Does that mean that MediaMonkey is the way to go?? Is the gold
version worth it? Is that program better than iTunes or any other
option? Is there anything to know about converting from iTunes managing
to MediaMonkey?

2. Is dppoweramp preferable to MediaMonkey for ripping? It will be
about 300 cds.

2. Let's say we do use MediaMonkey for music organizing. It sounds like
it works fine with AAC, which is important since about 700 cds are
already in that format. We're thinking of ripping the rest in FLAC
format (I guess then I'll have to take a close look at the posts about
how to maintain parallel flac and i-pod format directories, ugh. In the
meantime, my husband doesn't seem to mind not being able to add them to
his iPod).

In case it helps, my husband doesn't necessarily want/need all his CDs
to be able to be added to his iPod.

I just ordered my hp MediaSmart (I posted about it on the 3rd party
hardware forum) to store all of this on, so figuring out these
questions is the next step.
