Because Reply-To munging is frowned upon. I can't remember why, exactly; there are regular flame wars and explainations on MTA lists about why Reply-To is a "Bad Thing (tm)" so I won't recap it all here. The main reason usually given is that it increases traffic on high-volume lists, and makes it harder to reply to off-topic stuff off-list. Of course, a good MUA such as pine or mutt will handle this gracefully (pine asks whether to honor the reply-to, and mutt offers offer list-reply features).
