If I install AR Server 8.1, and choose the server option. The Email Engine
will not run from services. (it does run from EmailStart.bat)
If I install AR Server 8,1 and choose server and client option. The Email
Engine runs from services.

You can upgrade to AIE 7.6, it is supporteed to run with AR 7.5
(running AIE 7.6 on a AR 7.1 server here)

Had the same issue. The solution was to add the file mfc71.dll in path.
This file is not included in the EmailEngine install, and we needed to
copy it from a 32-bit server.
