Glad you asked.

You know, that's an interesting question.  The setup you described is
similar (albeit simpler) to the setup I was running at one time. You
are correct in the assumption that the 512k I am referring to is the
original 512k with the small ROMs, not the 512ke.

I had a 400k boot disk that booted System 2.0 with AppleShare and then
loaded the HD 20 INIT.  Or maybe it loaded the HD 20 INIT and then
AppleShare.  Anyway, you get the picture. You are probably familiar
with this INIT.  It gave the 512k the ability to access
larger-than-400k volumes, and in doing this, added HFS support.  I'm
sure this had an effect on the number of files the Mac could see at
one time.

What it *DIDN'T* fix was the Mac's ability to view volumes larger than
a certain size (2 gigabytes?).  When I was initially setting up this
network, the 512k kept bombing immediately upon establishing an
AppleTalk connection.  I eventually discovered this was because the
server volume was too large (capacity-wise, not file-count wise) for
the 512k to understand.  I could have repartitioned the server disk
into small fragments, but this would have been a tremendous
undertaking seeing as how much crap I already had on that drive.

What I ended up doing in the end was serving the 512k off a ZIP-100
disk in the server.  I'm sure the small partition solution would've
been great but it was just too much work that I didn't want to deal
with. I had tons of files on the 100MB ZIP disk that served the 512k
and never had any problems whatsoever with it being able to see them
all. Just don't try to mount a high-capacity volume or it'll bomb on
you.
