I'm not sure if just removing that kernel will put it back to stock, that's why I've heard people talk about doctoring to do so.
As far as doctoring, it will remove any photos and videos you have, so you'll need to back those up to your computer, but pretty much everything else is saved on your palm profile. As soon as you log into it after a doctor, getting a replacement Pre, etc., it will start downloading all your apps and will prompt you to log into your various accounts to redownload all your email, calendars, contacts, etc. However, it won't save application data, such as scores in games, etc. There is a homebrew program out there, though, called Save/Restore which saves application data from a bunch of different apps, but not every app out there. It also saves all your Preware patches as well I believe. I just got a replacement Pre today and it's still downloading all my data from the cloud, tomorrow I'll do a restore from save/restore (you copy the data from save restore from your Pre to your computer, then put it back on the new Pre (or newly doctored Pre) and do a restore. I've never actually done this before, but I'm hopeful it will work well...
