I figured it out by running good old aplay and .wav test tracks (and stripping my setup back to the basics). (I meanwhile also run the 4.4. kernel btw.)
The problem has something to do with the DSP filters on the PCM5122. If the "High Attenuation with DSP" is set, samplerates > 48kHz get this metallic background noise. (This filter setting looks pretty good from a filter perspective in the datasheet though) If "Fixed Process Flow" is set, there is NO sound at any samplerate. All other settings seem to work for samplerates up to 96kHz.
