I haven't heard a valid reason yet why someone can't wait until 2.5 to breed.
 Nor have I heard any substantive reasoning as to why it is good practice.  I
have not had a problem breeding girls past 2.5 and have not heard or read of
any increased incident of problems by waiting until 2.5

maybe the problem is people can't get enough litters out of the girl as they
want (should they turn out to produce well) if they wait and/or don't forget
every year is the risk of something cropping up that would indicate the
girl/boy should be removed from the program so breeding as soon as possible
eliminates that risk.
