What I normally do for working with older printers (at least in OS X) is to get 
an ethernet to parallel device (like an external HP Jetdirect device) and then 
I can treat the printer as an external TCP/IP printer.

I have an old Epson 1520 wide-format inkjet printing from all my Macs using one 
of those - and until it died I had an HP series II laserjet working the same 
way (now updated to an HP4050) - both printers working thru their parallel 
ports.
