There will be no newsletter on Tuesday. I have to drive to Amarillo
for personal business and it is a 2 hour drive each way.

Cheese Biscuits
1 stick butter
1 cup flour
3 ounces cream cheese

Soften butter and cheese. Blend in flour. Shape in small biscuits or 
roll out and cut. Bake at 450 degrees about 12-15 minutes or until 
light, golden brown.

Skillet Pineapple Upside-Down Cake
1/4 cup butter or margarine
1 cup firmly packed brown sugar
1/2 cup chopped pecans
1(15 1/4oz. can pineapple slices, undrained
3 eggs (separated)
1 cup all-purpose flour
1 cup sugar
1 tsp. baking power
1 tsp.  salt
6 or 7 maraschino cherries

Melt butter in a 9 inch cast iron skillet. Add brown sugar, pecans. 
Mix well. Drain pineapple ,reserving 1/4 cup plus 1 Tbsp. pineapple 
juice, set aside. Arrange pineapple slices in a single layer over 
brown sugar mixture, set aside. Beat egg yolks until thick and lemon 
colored. Gradually add sugar, beating well. Combine  flour, baking 
power and salt, Add to egg mixture. Stir in reserve pineapple juice. 
Beat egg whites (at room temperature) until stiff peaks form. Fold 
into flour mixture. Spoon batter evenly over pineapple slices. Bake 
at 375°for 30 to 35 minutes. Immediately invert cake onto a serving 
plate. Place cherries in center of pineapple rings. yield one 9-inch 
cake.
