Rita Davenport ================================= APPLE RAISIN BREAD 1-1/2 cups flour 2 tea. baking powder 1/4 tea. baking soda 1 tea. salt 1-1/4 teaspoon cinnamon 1/4 tea. nutmeg 2/3 cup packed brown sugar 1 cup quick oats 1-1/2 cups grated apple 1/4 cups chopped walnuts 1/4 cup raisins 2 eggs 1/4 cup milk 1/4 cup vegetable oil. Preheat oven to 350. Grease and flour loaf pan. In a large brown, combine flour, baking powder, soda, salt, cinnamon, nutmeg and oats add apples, nuts raisins, eggs, milk and oil. Mix until dry ingredients are moistened. Bake 55-60 min, or depending on your oven, until done. Cool on wire rack. Geraldine Haskiell Wva ===== If anyone has extra cucumbers to use up this salad is really good. Dilly Cucumber Salad 8 oz. sour cream 1/4 C. Realemon lemon juice 3 T. sugar 1 tsp. salt 1/2 tsp. dill weed 1 medium cucumber, seeded and sliced 1 medium white onion, sliced and separated into rings In a medium bowl, combine sour cream, Realemon, sugar, salt and dill weed; mix well. Add cucumber and onion. Cover; chill. refrigerate leftovers Makes about 3 cups. Carolyn - Illinois ===== Graham Cracker Pumpkin Dessert 24 graham crackers (crushed) 1/3 c. sugar 1/2 c. butter Mix these ingredients for crust and place in 9 x 13 x 2 pan. 2 eggs (beaten) 3/4 c. sugar 8 oz. pkg. cream cheese Mix eggs and cream cheese, beat until smooth. pour into crust, bake 20 minutes in 350 degree oven. Dissolve 1 envelope plain gelatin in 1/4 c. water. Set aside. Mix together: 3 egg yolks 1/2 c. sugar 2 c. pumpkin 1/2 c. milk 1 tsp. salt 1 tsp. cinnamon Cook over low heat until thickened. Remove from heat and ad dissolved gelatin. Cool. Beat 3 egg whites and sugar, fold into pumpkin mixture, pour over crust and first layer. Refrigerate. Top with cool whip and nuts. Source: http://www.free-greetingcards.co.uk/halloween-free-ecards.html ===== PUMPKIN BREAD (CUPCAKES) 3 cups all-purpose flour 2 cups granulated sugar 2 tsp baking soda 1 tsp ground cloves 1 tsp ground cinnamon 1 tsp ground nutmeg 1 tsp salt 1/2 tsp double-acting baking powder 1 (15 oz) can pumpkin (or 2 cups fresh pumpkin puree) 2/3 cup salad oil 3 large eggs, slightly beaten 1/2 cup black walnuts (or chopped English walnuts or pecans) (optional) Preheat oven to 350°. Spray 2 (9 x 5-inch) loaf pans with non-stick cooking spray (or grease well). Place the flour, sugar, baking soda, ground cloves, ground cinnamon, ground nutmeg and salt in a large mixing bowl and using a fork mix well. Add the remaining ingredients and mix until the mixture is just blended. Pour the batter evenly into the prepared pans. Bake in preheated oven for 1 hour or until a wooden toothpick inserted in the center comes out clean. Cool in pans on wire rack for 10 minutes; remove from pans and cool completely on racks. After the bread has cooled, wrap each loaf in plastic wrap and store at room temperature. Note: If using the recipe for cupcakes, the oven time will be lessened to about 35 to 40 minutes. After 30 minutes check often to prevent over baking.
