On the external drive issue, you could do what I've done.

Get a second 500GB to go along with the one you've just bought. Set up
an automatic sync (one-way only!) to get your primary 500GB SlimServer
data source drive backed up to the secondary drive when you make any
changes to it (e.g. adding new FLAC files, fixing tagging errors). I've
found that Microsoft SyncToy is simple and perfectly adequate for this.

It will take you months - I reckon at least 6 months - to get all your
CDs ripped to FLAC and properly tagged with the correct artwork. Once
you reach the 500GB limit, which will be after about 1400 to 1500
albums so in several months' time, buy a 1TB drive (they'll be cheaper
by then!) You then can use the 1TB as your Slimserver primary data
source, and you have 2x500GB already available to use as backups for
the 1TB drive.

The key points to this (with so many CDs) are:
- Do it in FLAC (future proof)
- Get it right first time (you really don't want to have to rip 2000
CDs ever again)
- BACK IT ALL UP! 

On the red wine front, you'll find that a fruity Merlot generally
allows you to keep typing into the night, whereas a heavier Bordeaux
means you'll start introducing tagging errors and you'll regret it in
the morning :)
