It will read the tags to get artist track name etc. Your Itune tags "should" work fine. You might have to play around with some. It's really good that you are diving in and get this all figured out as it will help you in the long run. The setting in mediamonkey is under options and then Tags and Playlists. Click update tags when editing properties.
