Yeah, that started when the first iteration of iOS 17 came out. They
haven't fixed it yet.
You have to go into Settings if you want to change the tone, but then
it's changed for every book the same.

I have a suggestion for you that might help as far as making it easier to set
the timer.
You can say to Siri set timer for 25 minutes.
This will start the timer and then turn off the audio after 25 minutes has gone
by.

After I use Siri to set a sleep timer and Play, I use the three finger double
tap to turn off speech. Otherwise, when it does shut off, the announcement that
it is shutting down inevitably wakes me up.
