That is the default behavior even with an external bluetooth QWERTY keyboard. I think Apple assumes text messages are not needing paragraphs, or even hard returns. In Excel, you can do alt-Enter, but I have no idea if that works in text messages. I doubt it. I just use punctuation in messages.
