I'm using xfce (not having used any other I don't really know what that
means).  I'm frankly terrified of trying another version of linux and
climbing another learning curve. I don't think some experts realise how
daunting all this is to a mere user.  I also note you have introduced
yet another term I was unaware of (LTS).  That illustrates to me how
complex all this is.  As I have said, I foolishly believed this was a
fairly straightforward activity.  For me, there's too much to learn.

Server on Windows 7 Ultimate 64 bit, 2 CPU, 2GHz, 4GB, FLAC files. Touch
on Ethernet (in another room).  Analogue out over 'a bit of wire' to
ageing Quad Hi-Fi. An old (wireless) laptop controls the server using
Chrome.
