As being on the both sides of the issue (both competition pilot and task setter) I'd think that organizers are quite a bit reluctant to "offer" the task for competitors electronically - mainly for the same reason that you had (being afraid of jeopardizing the day because of incorrect data as compared with the paper version of task, giving great opportunity to protests ;)). The organization is often very busy and errors are even more prone to happen than with the pilots (not to talk about changes on troublesome day).
