Joe, Last time I was in the Intelligentsia in LA I took a few minutes to chat with the barista that made my drink about the settings they use. I've since adjusted what I do at home with Black Cat on my BII and have seen some improvement.
Here is what he said: Brew temp 198F-199F 20g (I would say 18-20) 1.25 to 1.5 oz in 25-30 second range. For a Brewtus II that's 92-93C.
