I never Use Umax scanners , so I don't know ... take a look @ :
http://www.umax.co.uk/support/drivers/d001B.htm

<Version 3.5 (USB and SCSI) is primarily a maintenance release adding
support for new scanner models (eg Astra 2000 and 2100 series),
VistaAccess [control strip shortcut to VistaScan], Omnipage LE). This
driver includes full support for the G3 BW systems with third-party SCSI
cards (prior to this release MagicScan 4.2 + G3 patch are recommended).>

Actual version for scsi is 3.5.1 ... They are speaking about BW G3 ...
they are not about system nb.

But on another page they said --> Vista S6 --> VistaScan 2.4.3 .. so I
dunno if 3.5 is useful for your Vista 6, anyway there is a simple way to
test when owning a big drive -> just format it with 3 partitions : 1 for
usual system, 1 for test system and 1 for data, make tests on test
partition ... if all is fine, instal on your *real* system.

>But if a G4 is better then maybe I should go that route instead of an
>IMac with the flat screen.

G4 is powerfull for sound, images and video ... but no difference for
your scanner !!!
I don't see any way to use your scsi on iMac g4 flat pannel ...

anyway you can upgrade your G3 with a G4 processor for as low as 200 $

Actually second hand G4/400 towers are as low as 400 to 600 S ... maybe
it will be a way...
