Andrew, Princess Mononoke is a good one. I seen it at a friends a couple of years ago. Another excellent example of a good animated nature-spirit film is " My Neighbor Totoro " where a girl befriends a large spirit and two smaller companions. Her father tells her that the large spirit, Totoro is the Keeper of the Forest.
I would highly recommend this one.
