The choice of an operating system is largely a matter of personal 
preference. OS 8.1 covers a great many of Apple's computers everything 
from the Quadras through the Wallstreets, first  iMacs and G3s. I have 
always found 8.1 to be excellent on my old Quadra. Using 8.1 on the 
newer computers will cost you features, but overall I always found 8.1 
to be very reliable. If 8.1 is meeting your needs there is no real 
reason to move on.

Besides a few OpenDoc applications I do not believe that 8.6 really 
caused any problems with any applications that I use and I prefer it on 
a PPC Macs. OS 9 has become the "classic environment" for OS X and that 
is my only experience with it. And generally if I wish to run in a 
classic OS I start in 8.6 rather than in OS 9, which seems to have 
caused some problems with earlier applications. With the carbon lib 
installed in 8.6 it is generally possible to run the newer carbon 
applications, while maintaining compatibility with older applications.

The idea of has a startup disk with your application and OS of choice 
on a removable disk and saving the data to the hard drive is a somewhat 
unique idea. I am not sure I trust the reliability of Zip disks for 
that chore, and I would think it would create a horrid performance hit 
on any system you ran from a Zip. A workable alternative would be to 
use the startup control panel from OS 9 and have multiple systems 
installed on your computer. The startup control panel from OS 9 will 
work with older systems as well as newer systems, the only draw back 
being that it is a PPC application and will not run on a Quadra. For 
newer computers it will allow you to use whichever OS provides the best 
compatibility with your applications and workflow.
