Another Crockpot Enchilada Casserole
1 pound ground beef
2 (10 ounce) cans enchilada sauce
1 (10.75 ounce) can cream of onion soup
1/4 teaspoon salt
1 (8.5 ounce) package flour tortillas, torn
3 cups shredded Cheddar cheese
In skillet, brown beef, drain. Add enchilada sauce, soup and salt. In 
crockpot, layer one-third beef mixture, tortillas and cheese. Repeat layers 
twice. Cover. Cook on low for 6 to 8 hours.

In crockpot, combine soup, soup mix and water. Place roast into crockpot. 
Coat with soup mixture. Cover. Cook on high for 3 to 4 hours, or on low for 
8 to 9 hours.

1 (2 to 3 pound) whole chicken, cut up
Salt and pepper to taste
1 teaspoon paprika
Wad three pieces of foil into 3 to 4 inch balls. Place into crockpot. Rinse 
chicken, pat dry. Season with salt, pepper and paprika. Place into crockpot 
on top of crumbled foil. Cover. Cook on high for 1 hour. Reduce temperature 
to low. Cook for 8 to 10 hours, or until no longer pink and juices run 
clear.

  Title: Crock Pot Pizza

  Yield: 8 Servings
 
  1 1/2 lb Ground meat
  1 cn Pizza sauce (14 oz)
  1 pk Noodles (12 oz)
  4 oz Cheese, mozzarella
  1 cn  Mushrooms
  1 md Onion
  1 cn Spaghetti sauce (14 oz)
  4 oz Cheese, cheddar
  1 pk Pepperoni; sliced
  1 md  bell pepper
 
  Brown meat and onion. Drain grease. Add sauces. Simmer. Boil noodles
  until tender; drain. In crock pot, put a layer of noodles, meat
  mixture, cheeses and pepperoni. Repeat layer one more time. Cook on
  high for 30 minutes, then on low for 1 hour or until cheese melts.
  This may also be baked in a 350 oven until cheese melts.

Here goes.  The ground beef comes in a shrink wrapped block, or sometimes

tube.  I put the whole thing in a frying pan and try to break it up in
pieces with a spatula.  The problem is that the pieces aren't uniform in
size and aren't small enough.  So, the beef gets cooked unevenly.  How do
you accomplish this task?

In general, meat loaves are in a large loaf, so you don't  tend to cook the
meat beforehand. And though this one calls for two pounds of ground beef,
traditional meat loaves tended to use a mix of ground meets -- beef, pork,
and lamb were the common ones used, so you could go with a pound each of
ground beef and ground pork, for example, or a pound of ground beef and a
half pound each of pork and lamb.
Just an option. And of course, too, you can use game meats like boar or
venison, of course ground.

[CnD] cooking chicken

I have a recipe that calls for cooking chicken strips on med heat
until no longer pink in the middle.  I've never tried to cook chicken.
 Any tips?  When I'm browning meat like ground beef or sausage I can
tell when browned by the sound and the texture of the meat.  Will I be
able to do simillar with chicken?  thanks

Garlic Brown Sugar Chicken

1 to 1 1/2 pounds chicken pieces
1 cup packed brown sugar
2/3 cup vinegar
1/4 cup lemon lime soda
2 to 3 tablespoons minced garlic
1 green bell pepper, cut into strips
2 tablespoons soy sauce
1 teaspoon pepper

Place chicken in slow cooker. Mix all remaining ingredients and pour
over chicken. Cook on low for 6 to 8 hours. Serve over rice or noodles.

[CnD] Slow-Cooker Hungarian Goulash

Slow-Cooker Hungarian Goulash

2 pounds beef stew meat, cut into 1-inch cubes
1 large onion, sliced
1 clove garlic, minced
1/2 cup catsup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
2 teaspoons salt
2 teaspoons paprika
1/2 teaspoon dry mustard
1 cup water
1/4 cup flour

Place meat in slow-cooker; cover with sliced onion. Combine garlic,
catsup, Worcestershire sauce, sugar, salt, paprika and mustard. Stir in
water. Pour over meat. Cover and cook on low for 9 to 10 hours. Turn control
to high. Dissolve flour in small amount of cold water; stir into meat
mixture. Cook on high 10 to 15 minutes or until slightly thickened. Serve
goulash over noodles or rice. Makes 5 to 6 servings.

Slow-Cooker Au Gratin Potatoes and Ham

  6   cups  potatoes -- (6 medium), peeled and sliced
  1 medium  onion -- coarsely chopped
  1 1/2   cups  cooked ham -- cubed
  4 ounces  shredded American cheese -- (1 cup)
  1   10 3/4-ounce can  condensed 1/3-less-salt cream of mushroom soup
 1/2   cup  milk
 1/4  teaspoon  dried thyme leaves -- (¼ to ½ teaspoons)

In slow cooker, layer half each of the potatoes, onion, ham and cheese;
repeat layers.  In small bowl, combine soup, milk and thyme; pour over top.
Cover; cook on high setting for 1 hour.  Reduce to low setting; cook for 6
to 8 hours or until potatoes are tender.
7 (1-cup) servings.

Crockpot Shepherd's Pie

 3/4 pound  extra lean ground beef
  1 tablespoon  vinegar
 3/4  teaspoon  salt
 1/4  teaspoon  hot sauce
  1   teaspoon  paprika
 1/4  teaspoon  dried oregano
 1/4  teaspoon  black pepper
  1   teaspoon  chili powder
  1  small  onion -- chopped
  1 15 oz. can  corn -- drained
  3  large  potatoes unpeeled
 1/4   cup  skim milk
  1   teaspoon  fat-free margarine
 1/4  teaspoon  salt
  dash  pepper
fat-free cheddar cheese -- shredded

1.  Combine ground beef, vinegar, and spices.  Cook in skillet until brown.  Add
onion and cook until onions begin to glaze.

2.  Spread in bottom of crockpot.  Spread corn over meat.  

3.  Boil potatoes until soft.  Mash with milk, margarine, 1/4 teaspoon salt
and dash of pepper.  Spread over meat and corn.

4.  Cover and cook on low 3 hours.  Sprinkle top with cheese a few minutes
before serving.

Slow-Cooked Caramel Apple Pudding Cake
Makes: 6-8 Servings 

1 cup flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon or 1/4 teaspoon ground cardamom
1/2 cup milk
2 tablespoons oil
1/2 cup chopped pecans, toasted
1/4 cup dried apples or pears
1 cup packed brown sugar
1 cup water
1 cup apple juice or pear nectar
2 tablespoons butter or margarine
1 tablespoon finely chopped crystallized ginger
Vanilla ice cream or light cream, optional

In a mixing bowl, combine flour, sugar, baking powder, cinnamon or cardamom. 

Add milk and oil. Stir until combined. Stir in the nuts and dried fruit. Spread 
batter 

evenly in bottom of a 3-1/2 to 4 quart slow cooker. In a small saucepan, 
combine 

brown sugar, water, apple juice or nectar, margarine or butter, and ginger. 
Bring 

to a boil. Boil for 2 minutes.

Pour mixture evenly over batter in cooker. Cover. Cook on HIGH for 2 to 2-1/2 

hours or until a toothpick inserted in the cake's center comes out clean. Let 
stand 

uncovered for 30-40 minutes to cool slightly before serving. Serve warm with a 

scoop of vanilla ice cream or drizzle with light cream as desired.

Ask them for the recipe.  You never know.  That is how the fudge recipe came 
into our family years ago.  The Waldorf Astoria hotel, in New York, made 
some of the best fudge my Grandmother ever tasted.  She asked for the 
recipe, and was given a hand written copy by the head chef.

lot of authentic Mexican restaurants, the white cheese dip. I have found a 
lot of recipes online for some, but they have stuff in them that is not in 
the kind that I am talking about. We have a restaurant here where I live 
called The Border and they have the best white cheese dip that I have ever 
tasted.

All of the Queso Blanco Dips that I am finding have green chilies as one of 
the ingredients. The dip that I am referring to has nothing like that in it. 
It is just a white creamy, slightly spicy dip.

Perhaps the trick is to go with a broccoli cheese soup recipe, sans the
broccoli, and then substitute Mexican white cheese or Monterrey Jack for
some of the yellow cheese, and add a bit of spice through cumin, chili
powder, minced onion, or a touch of pepper juice.

One of the potential problems of not cubing it is that you might scorch the
cheese, which will introduce off flavors to the dip. But cubing it and
pouring the Ro-tel into it will help to lubricate the cheese and help keep
it from scorching.
I can't do raw Velveeta -- it's only good to me in recipes.

[CnD] uses for VelVita cheese - Re: cheese dip recipe for crock pot

It was rather unexplainable how we used to leave the summer cabin with 2 
cans of whole kernel corn and a 1-pound box of VelVita cheese, which we were 
going to use as fish bait when fishing for trout in Arizona, and come home 
with no remaining bait and, sometimes very few fish, and other times loads 
and loads of fish.  Would you believe that the fish kept working the corn 
and cheese off of the hook?  Oh, one more thing:  We didn't take anything to 
eat for lunch, but we did take soda for drinking.

[CnD] Schwans web site access problem

I'm curious to know, is it an issue with window-eyes, or with the site?  In 
most instances, I, at least, can no longer find add-to-cart links or buttons.

I haven't looked in a while, but I just did.  I use Jaws, which announces a
link just after the quantity.  It doesn't say Add to Cart but hitting that
link does add the item.

I'm noticing more and more that websites are being updated and becoming

I'm curious to know, is it an issue with window-eyes, or with the site?  In
most instances, I, at least, can no longer find add-to-cart links or
buttons.  Has anyone else noticed this?  If so, you might want to write to
Schwans, as shopping there used to be very accessible.

[CnD] making cookies

Hi all,

 

 I am making cookies but have a problem.  How do you tell as a blind
person when the cookies are done besides smelling them burn (grin).

Hi Walt, Check them after the shortest time in the recipe has arrived.
 touch a cookie very lightly - if it seems solid, it's probably ready!
 Cookies often firm up during the minute or two after you remove the
baking sheets from the oven, so unless the recipe states otherwise,
wait a couple of minutes before you begin to remove the cookies by
sliding a spatula underneath.  Good luck and enjoy!

p.s., if you have it, lining the cookie sheet with parchment paper,
really cuts down on the instances of burned or stuck cookies!

 Here's a pretzel recipe I found on the web when I was in college. My
ex-fiance used to make this all the time and it is really good!! I even
bought us a rock salt grinder so we could grind rock salt for our pretzels. 
It makes them delicious, in my opinion!!

Pretzels (Buttery soft pretzel sandwich) Ingredients
3 and 1 half cups flour.
3 tablespoons sugar.
2 teaspoons salt
1 package active dry yeast.
1 and 1 fourth cups hot water
2 tablespoons butter
salt or Sesame seeds for topping.
Instructions
Combine flour, sugar, salt, and yeast into a mixing bowl.
In a small sauce pan warm the water.
Place the butter in the water and mix until it melts.
Water mixture should not exceed 120 degrees f. or you will ruin the yeast.
Add the liquid mixture to the dry ingredients and mix until well combined
about 4 minutes.
Kneed the dough until smooth and supple, about 7 minutes.
place the dough into a buttered bowl, coating the entire dough with the
butter.
Cover with plastic wrap and allow to rise for 40 minutes.
Place the dough onto a cutting board and cut it into 8 or 12 different
pieces.
Shape the dough and place on to a cookie sheet lined with buttered parchment
paper.
Sprinkle on your favorite toppings.
Cover with a cloth and allow to rise for 8 minutes.
Bake at 375 degrees for about 20 minutes until golden brown.

 I'm sure, instead of using buttered parchment paper, you could use
Silpat sheets and butter them, if you have them. My ex never tried it with
those, but they weren't around then.

I usually put them in for 8 to 10 minutes.
Then I time them.
I take the sheet out and then just touch them with my fingers very lightly. 
If they are firm and not squishy. then they aren't done.

maybe that's my problem.  I always try to use a frying pan, but I find them
a bit too shallow.  So there's no problem with cooking it in something a
little bigger?

Hi, Walt,

Check the cookies after the shortest time in the recipe.  When you touch a 
cookie lightly with your fingertip, it should spring back if the cookies are 
done.  If it doesn't, leave them in for another minute.  

I remember some one on the list suggested doing a test bake with one cookie to 
determine the bake time for that recipe.  You could also do that then you would 
have a good idea how log they would take to bake.  

Your reference to smelling them isn't so far off, but there is a certain smell 
when they are done-hard to describe, but it isn't that of burning.  So, trust 
your nose as well.
