If you are talking about creating a filter that would put certain messages into one folder, and other messages in another folder, you cannot do that on the iPhone. Depending on which mail service you are using, you could create folders in your application on its web interface or on a computer

ok, first you need to double tap and hold on the file you wish to move. you will hear it say moving. put that app inside another app. that creates the folder. then go where it says clear text. do that and go to where it says editing text and put in name of folder.

Double tap and hold on the app you want to add to a folder. When you hear the tones, move the app over on top of another app you want in the same folder and release. A new folder will be created containing those two apps. Your iPhone will pick a name for you for the folder, but you can edit this.
