I too spent quite a while thinking about how to minimise power consumption and noise.
Considered the VIA route, but they struck me as expensive for what they would offer. Considered low noise, low power consumption kit made by Tranquil and Hush, designed primarily for 'Home Theatre' use, but these were way over my budget even if attractive beyond use just for SlimServer. But they put me onto the idea of using a Pentium M based system, so checked out the limited range of motherboards as well as barebones systems from Shuttle and others. Final choice came down to Mac Mini vs Pentium M laptop, and went with the latter as I found better value in a refurbished (cosmetically damaged) Dell Inspiron 510M laptop through their outlet store on ebay, using an external USB2.0 hard drive for music storage. It runs cool and quiet, and has relatively low power consumption; and being significantly overspecified, it can also cope as a desktop substitute for simple tasks.
