Actually, I was thinking about a spring centered on the point where
the cat harness "would be" based on a known acceleration curve.  This
gets you around the problem of "tuning" the force appropriately for
the aircraft, and you can just set a target launch speed instead.

Unfortunately, the same trick won't work for the arrestor wires
because their "track" isn't fixed, but based on the landing velocity
of the aircraft.
