Here is the correct procedure:
1. Open iChatAV.
2. Under the iChat menu (next to the Apple Menu), you will see an option to "Revert to iChat 1.0."
3. Select that.

FYI (since you probably don't have iChat AV to look at) Chaz is quite correct. (As usual)* The option to revert is right there in the iChat menu.
Dang! I missed that too! Might make you feel a bit more secure about trying the AV version again. Looks like it's pretty simple to revert if you decide against it.
