As it turns out, in iBooks, at least, Speak Screen results in two different
scenarios, the second of which is exactly what I want or, more accurately,

Huh? I tried speak screen but normally I just swipe two fingers down in iBooks
and it reads continuously anyway, I still have not seen the true value of speak
screen. However, my brain is pretty fried trying to complete training for a
new job.

no, the simple answer is you can't. However, there are ways that you can do
it.. the only easy way you can view the contents is via iTunes. And you can't
copy and pace files and foulders that you like from or to iphone...

The advantage of speak screen is that it continues to read even when the
screen locks, whereas voiceover will cease reading on a locked screen. In
addition you have the option to select a different voice and speed with
speak screen, not available with the normal voiceover read-all.
