tap on the album Art button. I know that sounds strange but I believe that is
what I had to do to get the extra controls.

In more recent versions of List Recorder the Tilt Gestures are off by
default. you will need to turn them on in settings to use them.

No You can't increase the volume but you can increase the recording
quality. I think the default is 22 KHZ you can up it to CD quality in the
settings area. That may give you the higher recording level you are asking
about.

The iPhone volume will not effect the recording.
