I was talking to John Crieff (Pluralsight) before the launch event a few weeks back and he said he's got a whole new bunch of introductory content coming to Pluralsight for H16. But in the meantime I can highly recommend Adam Swaab's course at Learn Squared. He's a brilliant tutor who's great with the why as well as the how. The first link is an hour or so chat with Adam which gives a good indication of his teaching style.

The Principled Shader is based on the Renderman RIS Disney Shader and is super easy to use so there's nothing to be scared of now you know where to find it. :) As for whetting your whistle with a fluids project using a brand new H16 feature, that's probably on the braver side of things but who dares wins and all that jazz...
