If you move something to the trash folder, it will be deleted from the
Gmail servers after 60 days (I think it's 60.). Google assumes you want
to keep everything forever. So the messages in your All Mail folder will
keep growing until that 60 days kicks in. Shouldn't be a problem on your
phone
immediately, or
Google holds them for a time, just in case. In actuality, the messages are
never moved in gmail servers, just the label is changed.

I got the impression that any email moved to a folder then receives that
label and that's usually good enough

Hi, honestly I think that if you are already using exchange for your
gmail stuff like contact syncing, you are fine. No need for iTunes. What
problems do you have with using exchange specifically?

AS long as we're comparing the mail and Gmail apps, is it possible to
apply multiple labels to a message in both apps? I mainly use Gmail on
a Windows computer and in a web browser. Most of my mail is setup to
have filters applied when new messages come in that fit certain
