the specifications for each watch and I think you can do a comparison.
When I was looking into buying the Apple Watch, the simplest differences were
that the Series 1 and Series 2 were pretty much identical.

You can actually label a picture in your Photos app by performing the
two-finger double tap and hold. This is the same gesture when re-labelling a
button in an app.

I've looked in the Settings on the Watch directly and could not find anything

you will find the My Account button. Click on that and then on View Apple ID.
You will need to sign in with your password.
Then when the page is loaded, find the section titled Subscriptions and below
I don't believe there is another way of muting the mic itself then to pressing
the button on the screen. I normally have headphones on so if I use my phone
while being in a call, the other person on the call will not hear VoiceOver,
only I hear it.
