I've not seen any triple insulated wire conforming to EN61558, only EN60950
and EN60065. There's another manufacturer - Totoku - http://www.totoku.com/ .

I cannot help with your immediate question regarding a source, but I used
this type of wire several years ago and was unable to make a transformer
that complied with EN 60335-1 despite the wire being appropriately rated. I
would strongly recommend an alternative solution.
