Refried Beans
2¼ hours 5 min prep 
6-8 servings 

2 teaspoons oil 
2 jalapenos, chopped fine 
2 medium onions, chopped medium 
4 cloves garlic, minced (not traditional) (optional) 
4 (14 ounce) cans black beans (or red kidney or pink kidney-black has the most 
flavor) 
1 can beer


In a large pan saute the onions and garlic to just translucent. 
Add the jalapenos and continue to saute until JUST begining to brown. 
Add the beans, 2 cans rinsed and drained, two with juice. 
Bring to a boil, reduce heat and simmer for around 1 1/2 hours, adding beer as 
needed. 
You don't want the beans to dry out. 
If there's any remaining beer left drink it. 
Sometimes 2 cans are needed. 
Don't add salt until dish is done and taste first.

Makes 16 servings
ingredients
5 whole graham crackers, broken up
1/3 cup toasted hazelnuts
1 tablespoon plus 1/3 cup sugar
1/8 teaspoon salt
5 tablespoons unsalted butter, melted 
4 pints dulce de leche ice cream
2 pints strawberry sorbet 
2 1/2 pounds strawberries, sliced 
Purchased caramel sauce (optional)
preparation
Preheat oven to 350°F. Combine crackers, nuts, 1 tablespoon sugar, and salt in 
processor. Blend until nuts are finely chopped. Add butter; blend until mixture 
is evenly moist. Press mixture over bottom (not sides) of 10-inch-diameter 
springform pan. Bake crust until golden, about 8 minutes. Cool completely. 
Slightly soften 1 1/4 pints ice cream; spread over crust. Freeze until firm, 
about 1 hour. Slightly soften 1 pint sorbet; spread over ice cream. Freeze 
until firm, about 30 minutes. Slightly soften 1 1/4 pints ice cream; spread 
over sorbet. Freeze until firm, about 1 hour. Slightly soften 1 pint sorbet; 
spread over ice cream. Freeze until firm, about 30 minutes. Slightly soften 1 
1/2 pints ice cream; spread over sorbet for top layer. Cover; freeze until 
firm, at least 3 hours and up to 1 week. 
Stir berries and 1/3 cup sugar in large bowl. Let stand until berries release 
their juices, about 30 minutes. 
Cut around cake to loosen. Release pan sides. Cut cake into wedges; arrange on 
plates. Spoon berries atop wedges; drizzle with caramel sauce, if desired.

Tortillas from Scratch

Corn Flour
Corn tortillas are made with a type of specially treated corn flour called masa 
harina. To make masa harina, whole corn kernels are boiled with an alkali until 
the hulls loosen and float to the top. The kernels are then drained, crushed, 
and dried. The resulting flour is mixed with water and kneaded into a pliable 
dough in order to make tortillas. You can find dry masa harina at many 
supermarkets. At specialty stores and Mexican grocers, you may even find fresh 
masa, which needs to be used right away.


Making Corn Tortillas
Even though they're such a simple item, it takes years of practice before cooks 
can effortlessly make a perfect tortilla. (A tortilla press makes flattening 
the rounds much easier.) For corn tortillas, divide the dough into small 
balls--about the size of a walnut. Keep the dough wrapped in plastic while you 
work with one piece at a time.
The best way to bake the tortillas is to use a cast iron griddle--the kind that 
stretches across two burners of your stove. Two cast iron skillets will work, 
as well.
Heat one burner to medium-high and one to medium. There's no need to add oil to 
the pans: you aren't frying the tortillas, just heating them until the dough is 
cooked but they're still pliable, not crisp. 
If you have a tortilla press, flatten the dough and begin baking. If you're 
using your hands, the easiest way to flatten the masa balls is to use a 
gallon-sized plastic freezer bag to prevent the dough from sticking to the 
counter. 
Flatten the dough in between the sheets of plastic into a round as thin as you 
can make it without tearing. Peel it from the plastic and transfer it to the 
hottest griddle. 
To lay the tortillas in the pan, your knuckles will be close to the heat 
source, but don't panic: working from left to right, lay the left-hand edge of 
the tortilla onto the griddle, and gently sweep your hand away--don't jerk it. 
The edge of the tortilla will stick to the griddle, so as you move your hand, 
the tortilla will fall into place in the pan. 
After about a minute on the hot griddle, flip the tortilla over into the cooler 
skillet. 
Using tongs--or your fingers, if you're brave and heat-tolerant--gently touch 
the center of the tortilla until it starts to puff slightly. 
The tortilla should be done, developing brown spots, after 30 seconds to a 
minute. 
Wrap the hot tortillas in a clean kitchen towel while you shape and bake the 
rest of the dough.
Making Flour Tortillas
Flour tortillas are different from corn tortillas in that they contain wheat 
flour rather than corn flour, and include additional ingredients like 
shortening or lard and sometimes a pinch of baking powder. These pale cousins 
of the corn tortilla are usually made larger and thinner because the gluten in 
the wheat flour allows the dough to be stretched without falling apart, plus 
the fat in the dough keeps them from cracking and tearing. They can be 
flattened with a rolling pin. To bake them, follow the process outlined above 
for corn tortillas.

1 lb ground beef 
1/2 cup chopped onions 
2 cups shredded cheddar cheese 
1 (20 ounce) can enchilada sauce 
8 flour tortillas


Brown meat and onions in large skillet. 
Add 1 cup enchilada sauce and 1 cup cheese. 
Mix well. 
Put filling along center of each tortilla. 
Roll up and place seam side down in a 9x13 pan. 
Pour remaining sauce over. 
Sprinkle remaining cheese over. 
Bake at 350F degrees for about 30 minutes till cheese is bubbly.

A spicy beef and bean filling is all bundled up in a south of the border 
burrito.


1/2cup butter
1(1.25-oz.) pkg. Old El Paso® Taco Seasoning Mix
1 1/2lb. boneless beef sirloin tip steak, cut into thin bite-sized strips
1(16-oz.) can Old El Paso® Refried Beans
1(10.5-oz.) pkg. (12 tortillas) Old El Paso® Flour Tortillas for Soft Tacos  
Fajitas
8oz. (2 cups) shredded Cheddar cheese
3green onions, thinly sliced
1(10-oz.) can Old El Paso® Red Enchilada Sauce
4oz. (1 cup) shredded Mexican cheese blend



1 .  Heat oven to 400°F. Melt butter in large skillet over medium heat. Stir in 
taco seasoning mix. Add beef strips; cook and stir 5 to 6 minutes or until of 
desired doneness. Drain.
2 .  Meanwhile, place refried beans in microwave-safe dish. Microwave on HIGH 
for 2 minutes, stirring once or twice.
3 .  Spread each tortilla with refried beans to within 1/4 inch of edge. Top 
each with beef, Cheddar cheese and onions. Roll up, folding in sides. Place, 
seam side down, in ungreased 13x9-inch (3-quart) glass baking dish. Pour 
enchilada sauce over burritos. Sprinkle with Mexican cheese blend.
4 .  Bake at 400°F. for 7 to 12 minutes or until burritos are thoroughly heated 
and cheese is melted.

Fix it early and pop this Mexican casserole in the oven at dinnertime. 


1lb lean (at least 80%) ground beef
2cups frozen bell pepper and onion stir-fry (from 16-oz bag)
1can (11 oz) Green Giant® super sweet yellow and white corn
1can (4.5 oz) Old El Paso® chopped green chiles
1package (1.25 oz) Old El Paso® 40% less-sodium taco seasoning mix
1jar (8 oz) Old El Paso® taco sauce
3cups coarsely broken white corn chips (about 5 oz)
2cups shredded Mexican cheese blend (8 oz)



1 .  Spray 12x8-inch (2-quart) glass baking dish and sheet of foil (large 
enough to cover dish) with cooking spray. In 12-inch nonstick skillet, cook 
ground beef over medium-high heat 5 to 7 minutes, stirring frequently, until 
beef is thoroughly cooked; drain.
2 .  Stir in bell pepper and onion stir-fry, corn, chiles and taco seasoning 
mix. Cook 5 minutes, stirring frequently, until bell peppers and onions are 
tender. Stir in taco sauce. Remove from heat.
3 .  Spoon half of beef mixture evenly in bottom of baking dish. Cover with 2 
cups of the chips. Sprinkle 3/4 cup of the cheese over chips. Spoon remaining 
half of beef mixture evenly over cheese. Sprinkle with 1 cup cheese. Top evenly 
with remaining 1 cup chips. Cover baking dish tightly with foil, sprayed side 
down. Refrigerate at least 4 hours or overnight.
4 .  When ready to bake, heat oven to 375°F. Bake casserole covered 20 minutes. 
Uncover; sprinkle with remaining 1/4 cup cheese. Bake uncovered 5 to 10 minutes 
longer or until casserole is thoroughly heated and cheese is melted. Cut into 
squares.



High Altitude (3500-6500 ft):Bake covered 35 minutes. Uncover; add cheese. Bake 
5 to 10 minutes longer.

6 boneless, skinless chicken thighs 
1 tablespoon Creole seasoning, recipe follows 
1 tablespoon olive oil 
1 medium yellow onion, medium diced 
2 stalks celery, medium diced 
1 tablespoon chopped garlic 
2 teaspoons paprika 
1 1/2 cups long-grain rice 
1 cup dry white wine 
1 (14-ounce) can diced tomatoes, juice and all 
1 1/4 cups chicken broth 
1 (4-ounce) jar diced pimientos 
1 (4-ounce) can diced green chiles 
1/4 cup thinly sliced green olives 
1 teaspoon saffron threads 
1 bay leaf 
3/4 teaspoon salt 
3/4 cup frozen English peas 
3/4 cup frozen yellow corn 
2 tablespoons chopped fresh parsley leaves, for garnish 
Season the chicken well on all sides with the Creole seasoning. Add the oil to 
a Dutch oven and heat over medium-high heat. Add the chicken and evenly brown, 
about 2 minutes per side. Transfer the chicken to a plate and set aside. 
Add the onions, celery, garlic and paprika to the pot. Cook, stirring, until 
the vegetables begin to wilt, about 4 minutes. Add the rice and cook, stirring, 
for 1 minute. Add the white wine and the tomatoes and cook for 1 minute. Add 
the broth, pimientos, green chiles, olives, saffron, bay leaf, salt and chicken 
to the pot and replace the lid. Cook for 20 minutes, opening twice to stir. Add 
the peas and corn, cover, and cook an additional 3 minutes. Serve, topped with 
chopped parsley. 
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast): 
2 1/2 tablespoons paprika 
2 tablespoons salt 
2 tablespoons garlic powder 
1 tablespoon black pepper 
1 tablespoon onion powder 
1 tablespoon cayenne pepper 
1 tablespoon dried oregano 
1 tablespoon dried thyme 
Combine all ingredients thoroughly. 
Yield: 2/3 cup

1 1/4 cups shredded white cabbage
1 1/2 cups shredded red cabbage
1/4 cup chopped green onions
1/2 cup thinly sliced green pepper
1 cup roasted cashews, optional
1/2 cup rice vinegar
2 Tbs. sesame oil or salad oil
1 1/2 tsp. cumin
1 Tbs. lemon rind 
Directions
Combine cabbages, onions, green pepper and cashews.

In separate bowl, mix vinegar, oil, cumin and lemon rind.

Pour over vegetables. Toss to blend thoroughly. Cover and chill for 2 to 3 
hours before serving.

Before serving, garnish with extra sliced green pepper and slivered lemon rind.

Ingredients
4 oz. salad macaroni
2 hard-cooked eggs, sliced
1/4 cup finely chopped green onion
2 large sweet pickles, chopped
1/2 jar (6 oz) salad-style green olives, sliced
1/2 cup salad dressing
1 Tbs. prepared mustard
1 tsp. dried dill weed
2 Tbs. sweet pickle juice 
Directions
Cook macaroni according to package directions. Drain and let cool.

In a large bowl, combine macaroni, eggs, onion, pickles and olives.

In a separate bowl, combine remaining ingredients, blending well.

Pour over macaroni mixture. Mix thoroughly. Cover and chill for 1 hour before 
serving.

Serves 8

RECIPE INGREDIENTS


Dressing:

1/2 cup olive oil

2 tablespoons red wine vinegar

1 clove garlic, crushed

1 tablespoon finely chopped flat-leaf (continental) parsley

1 tablespoon capers, finely chopped

1 tablespoon finely chopped anchovy fillets

1 teaspoon tomato paste

1/2 teaspoon sugar

Freshly ground pepper


2 lbs (1 kg) eggplant, sliced into 1/2 inch rounds

salt

2 red bell peppers

1 yellow bell pepper

1/2 cup all-purpose flour

Olive oil, for frying

13 oz plum tomatoes, sliced lengthwise

10 oz fresh mozzarella cheese (bocconcini), sliced





RECIPE METHOD


FOR DRESSING: Combine all of the dressing ingredients in a bowl. Whisk together 
thoroughly.


Place the eggplant slices in a colander. Lightly sprinkle with salt and set 
aside for 30 minutes.


Halve the bell peppers and remove the seeds and membrane. Place the bell pepper 
halves under a heated broiler (or on a grill) and cook until the skins are 
blackened. Place the halves in a plastic bag and let cool. When they are cold 
enough to handle, peel off their skins and slice thinly. Set aside.


Rinse the eggplant slices and drain on kitchen paper. Dust the slices lightly 
with flour. Heat sufficient oil in a large frying pan to fry the eggplant 
slices in batches. Cook all of the slices until golden on both sides. As each 
slice is cooked, dip it in the prepared dressing and arrange around the serving 
platter.


Cook the tomato slices for a few seconds on each side in the same pan as the 
eggplant. Place the tomato slices on top of the eggplant. Top the tomato with 
the cheese slices. Spoon a little dressing over each mozzarella slice. Arrange 
the pepper slices in the center of the serving platter. Spoon on the remaining 
dressing. Let stand at room temperature for at least 1 hour before serving.

Idaho Potato and Pesto Chicken Salad

2 pounds Idaho Potatoes, well scrubbed (peeled, if desired) 
1 pound fresh green beans, washed and trimmed 
1 tablespoon olive oil 
1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch cubes 
3/4 cup prepared pesto sauce 
3 to 6 cups mixed salad greens such as Boston, bibb or mesclun mix (optional) 
Over high heat, in a large, heavy pot with tight-fitting cover, bring half a 
pot of water to boil. 
Meanwhile, cut the potatoes in half lengthwise, then cut them crosswise in 
1/2-inch slices. Add potatoes to boiling water, cover and return to boiling; 
cook 3 minutes. 
Add green beans to pot with potatoes and cook another 4 minutes; drain potatoes 
and beans and set aside. (Vegetables should be firm.) 
In the same pot, heat olive oil over high heat and cook the chicken, stirring 
for 6 to 8 minutes or until meat is completely cooked through. 
Remove from heat; stir in pesto sauce, then gently stir in potatoes and green 
beans, taking care not to break up the vegetables. 
Serve salad warm or at room temperature on a bed of salad greens, if desired. 
Makes 8 servings.

Taco Salad

1 lb ground beef
1 small onion, chopped
1/2 cup taco sauce
1/2 cup sour cream
1/4 teaspoon salt
4 cups shredded lettuce
3/4 cup shredded cheddar cheese
2 medium tomatoes, chopped
sliced pitted ripe olives
tortilla chips

In a medium skillet, cook and stir ground beef and onion over medium-high heat 
until meat is brown and onion is tender. Drain thoroughly. In a bowl, combine 
meat mixture, taco sauce, half of the sour cream and salt. Cover and chill for 
20 to 30 minutes. To serve, place lettuce on 4 individual plates. Sprinkle with 
cheese and tomatoes. Spoon meat mixture over salads. Top with remaining sour 
cream and garnish with olive slices. Serve with tortilla chips.

RECIPE INGREDIENTS


One Ready-to-bake pie crust, precooked according to directions

2 cups heavy cream

2 egg yolks and 4 whole eggs, lightly beaten

1 cup Stonewall Kitchen Maple Pumpkin Butter





RECIPE METHOD


Preheat oven to 325 degrees F.


Heat cream in a small, heavy saucepan. Warm thoroughly but do not simmer. 
Remove from heat and stir gradually into beaten eggs.


Add Maple Pumpkin Butter and mix well.


Pour custard into prebaked pie shell.


Bake approximately 35-45 minutes or until custard is set. An inserted knife or 
toothpick will come out clean.


Cool before serving.


Tips and Garnishes:
Serve with whipped cream flavored with vanilla.

RECIPE INGREDIENTS


3 1/2 oz shiitake mushrooms

5 oz button mushrooms

5 oz oyster mushrooms

1 bunch asparagus

1/4 cup walnut oil

1 bunch watercress, washed and dried

2 tablespoons raspberry vinegar





RECIPE METHOD


Clean the mushrooms with a damp cloth. Halve any large ones. Cut the asparagus 
into 2 inch lengths. Cook the asparagus in boiling salted water until just 
tender. Plunge into cold water. Drain.


Heat the walnut oil in a large wok or frying pan. Add the button and shiitake 
mushrooms and stir-fry for 2 minutes. Add the oyster mushrooms and stir-fry for 
2 minutes. Add the asparagus and stir to combine. Season with salt and freshly 
ground black pepper to taste.


Arrange the watercress on a serving plate. Pile the mushrooms and asparagus in 
the center.


Bring the raspberry vinegar to a boil in the pan used for the mushrooms. Pour 
the vinegar over the salad and serve.

Hearty Beef Salad with Horseradish Dressing

8 ounces green beans 
1 1/2 cups packaged, peeled baby carrots 
12 ounces beef sirloin steak, cut 1-inch thick 
4 cups torn Boston or Bibb lettuce 
1 (16-ounce) can julienne beets, rinsed and drained 
Horseradish Dressing (recipe follows) 
Freshly ground pepper or cracked pepper 
Wash green beans; remove ends and strings. Cut beans in half crosswise. In a 
covered medium saucepan, cook beans in boiling water for 5 minutes. Add baby 
carrots and cook for 10 to 15 minutes more or until vegetables are tender; 
drain. Cover and chill for 4 to 24 hours. 
Trim fat from meat. Place meat on the unheated rack of a broiler pan. Broil 3 
to 4 inches from the heat to desired doneness, turn once. Allow 10 to 12 
minutes for medium rare or 12 to 15 minutes for medium. Thinly slice across 
grain into bite-size strips. 
Divide torn lettuce among dinner plates. Arrange green beans, baby carrots, 
meat slices and beets on lettuce. Spoon the Horseradish Dressing over salads. 
Sprinkle with pepper, if desired. 
Makes 4 servings.

1 teaspoon grated lemon peel

1 pastry shell (9 inches), baked

MERINGUE:

3 egg whites

1/4 teaspoon salt

1/2 cup sugar
DIRECTIONS
In a medium saucepan, combine sugar, cornstarch, flour and salt. Gradually stir 
in water. Cook and stir over medium heat until thickened and bubbly. Reduce 
heat; cook and stir 2 minutes more. Remove from the heat. Gradually stir 1 cup 
into egg yolks; return all to saucepan. Bring to boil. Cook and stir for 2 
minutes. Remove from the heat. Stir in the butter, lemon juice and peel until 
smooth. Pour into pastry shell. In a mixing bowl, beat egg whites and salt 
until stiff but not dry peaks form. Gradually beat in sugar until soft peaks 
form. Spread over pie, sealing edges to pastry. Bake at 350° for 12-15 minutes 
or until meringue is golden. Cool. Store any leftovers in the refrigerator. 
Yield: 6-8 servings.

1 package (1/4 ounce) active dry yeast

1/2 teaspoon sugar

1-1/2 cups warm water (110° to 115°)

3 tablespoons olive oil, divided

1/2 teaspoon salt

4-1/3 cups all-purpose flour

2 cans (15 ounces each) pizza sauce, divided

2 large Vidalia or other sweet onions, thinly sliced

4 medium tomatoes, thinly sliced

2-1/2 cups (10 ounces) shredded part-skim mozzarella cheese

1-1/2 cups (6 ounces) shredded cheddar cheese
DIRECTIONS
In a bowl, dissolve yeast and sugar in warm water. Add 2 tablespoons oil, salt 
and enough flour to form a soft dough. Turn onto a floured surface; knead until 
smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to 
grease top. Cover and let rise in a warm place until doubled, about 1 hour. 
Punch dough down. Turn onto a lightly floured surface; divide in half. 
Press dough onto the bottom and 1 in. up the sides of two greased 14-in. pizza 
pans. Spread 3/4 cup pizza sauce over each. Bake at 450° for 5 minutes. 
Meanwhile, in a skillet, saute onions in remaining oil until tender. 
Arrange tomato slices over pizzas. Combine cheeses; sprinkle over tomatoes. 
Top with onions. Bake 10-15 minutes longer or until cheese is melted. Warm 
remaining pizza sauce; serve with pizza. Yield: 2 pizzas (8 slices each).

This corny salad is pegged to be served with poultry, but also try it with fish

2(11-oz.) cans Green Giant® White Shoepeg Corn, drained
3/4cup sweetened dried cranberries
1/4cup chopped pecans
2tablespoons balsamic vinegar
2tablespoons olive oil
1tablespoon apricot preserves
1teaspoon Dijon mustard
1teaspoon Worcestershire sauce
2tablespoons finely chopped fresh basil
Fresh basil sprigs
8pecan halves



1 .  In medium bowl, combine corn, cranberries and chopped pecans; toss to mix.
2 .  In small bowl, combine vinegar, oil, preserves, mustard and Worcestershire 
sauce; beat with wire whisk until smooth. Add vinegar mixture and chopped basil 
to corn mixture; toss to coat well. Let stand 10 minutes.
3 .  To serve, stir gently to mix. Garnish with basil sprigs and pecan halves.

Makes: 6 (1­cup) servings  

Make an everyday favorite easily when you've got leftover ham and hard cooked 
eggs.


3eggs
7oz. (2 cups) uncooked small shell macaroni
2cups Green Giant Select® Frozen Broccoli Florets 
1 1/2cups cubed cooked ham
1/4cup chopped celery
3/4cup purchased Caesar salad dressing



1 .  Place eggs in small saucepan; cover with cold water. Bring to a boil. 
Reduce heat; simmer about 15 minutes. Immediately drain; run cold water over 
eggs to stop cooking. Peel eggs; coarsely chop.
2 .  Meanwhile, cook macaroni to desired doneness as directed on package, 
adding broccoli during last 5 minutes of cooking time. Drain; rinse with cold 
water to cool. Drain well.
3 .  In large bowl, combine eggs, cooked macaroni, broccoli and all remaining 
ingredients; mix well. Refrigerate at least 1 hour before serving.

1 cup butter, cubed

3/4 pound dried figs 
1/2 cup chopped almonds, toasted 
1/3 cup apricot preserves 
1/4 cup golden raisins 
1/4 cup chopped candied orange peel 
1/3 cup semisweet chocolate chips 
1/4 cup dark rum 
1/2 teaspoon ground cinnamon 
 
1 egg, beaten 
2 tablespoons milk 
 
1/2 cup confectioners' sugar for dusting 
DIRECTIONS
In a medium bowl, stir together the flour, sugar, baking powder, and salt. Cut 
in butter using a pastry blender, or pinching between your fingers. Add egg, 
and mix until a dough forms. It may take a couple of minutes of mixing. When 
the dough starts to hold together, turn it out onto a floured surface and knead 
briefly. Shape dough into a long roll, wrap, and set aside. 
Place the figs, almonds, apricot preserves, raisins, orange peel, chocolate, 
rum, and cinnamon into a food processor or blender. Process until finely 
chopped. If the fruit is hard, it may be soaked in boiling water to soften for 
15 minutes before processing. 
Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, mix 
together the remaining egg and milk to make an egg wash. 
Divide dough into 12 pieces. On a lightly floured surface, roll each piece out 
into a 3x12 inch rectangle. Brush the strips of dough lightly with egg wash. 
Place a strip of the fruit mixture lengthwise down the center of each piece of 
dough, and fold the edges over. Roll gently to seal. This will make the filled 
tube of dough a little bit longer. Cut each tube into 3 inch pieces. Make a one 
inch long slit with a knife down the center of each cut end. Spread the ends 
out to form an X shape. Place cookies 2 inches apart onto lightly greased 
cookie sheets. 
Bake for 15 to 20 minutes in the preheated oven, or until the edges are golden. 
Allow cookies to cool on the tray for at least 5 minutes, so they will not be 
too delicate, before removing to wire racks to cool completely. Dust with 
confectioners' sugar when cool.

INGREDIENTS 
2-1/2 cups all-purpose flour

1-1/2 cups sugar

1 cup chopped pecans

1/2 cup quick-cooking oats

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon ground cinnamon

4 eggs

1 medium zucchini, shredded (about 3/4 cup)

3/4 cup vegetable oil
DIRECTIONS
In a large mixing bowl, combine the flour, sugar, pecans, oats baking powder, 
salt and cinnamon. In a small bowl, beat eggs; combine with zucchini and oil. 
Stir into dry ingredients, stirring only until moistened (batter will be 
lumpy). 
Fill greased muffin cups 3/4 cull. Bake at 400° for 20-25 minutes or until 
a toothpick inserted in the center comes out clean. Cool for 5 minutes before 
removing from pan to a wire rack. Yield: 1 dozen.

Royal Raspberry Tea Cakes

1 c. butter, softened
1/2 c. powdered sugar
2 t. vanilla extract
2 c. all-purpose flour
1/2 t. salt
2/4 c. seedless raspberry preserves

Beat butter  sugar low speed until creamy. Add vanilla, beating 
until blended. Combine flour  salt in small bowl; gradually add to butter 
mixture beating until blended after each addition. Shape dough into 1 in. 
balls, place 2 in. apart on lightly greased baking sheets.

Press thumb or end of wooden spoon into each ball, forming indentation. Fill 
evenly w/raspberry preserves. Bake 325-15 to 20 min. or until edges begin to 
brown. Remove to wire racks to cool.
2-1/2 doz.

DIRECTIONS
Combine the gelatin and boiling water; stir until dissolved. Add the cream 
cheese, mayonnaise and vinegar; mix until blended and refrigerate until 
partially set. 
Add the carrot and pineapple, mix well and chill until set.

28 pretzel sticks
DIRECTIONS
Cut each cake widthwise into seven 1-in. slices. Trim a diagonal slice from the 
long sides of each slice, angling slightly, leaving 1 in. wide at a short end. 
Use food coloring to tint the frosting. Carefully spread or pipe stripes on 
cake slices; top with miniature baking bits. For mallets, press a miniature 
marshmallow into one end of each pretzel stick. Yield: 14 cakes.

Original recipe yield:
1 - 9 x 13 inch pan

INGREDIENTS
1 (18.25 ounce) package yellow cake mix 
1 (16 ounce) can fruit cocktail 
1 1/2 cups flaked coconut 
2 eggs 
1/2 cup packed brown sugar 
1/2 cup chopped walnuts 
1/2 cup butter 
1/2 cup white sugar 
1/2 cup evaporated milk 
DIRECTIONS
Combine cake mix, undrained fruit, 1 cup coconut and eggs. 
Blend; beat at medium speed for 2 minutes and pour into a greased 9 x 13 inch 
pan. 
Sprinkle with brown sugar and nuts. Bake at 325 degrees F (165 degrees C) for 
45 minutes. Bring butter, sugar and milk to a boil. Boil 1 minute. Stir in 1/2 
cup coconut. Spoon over warm cake. Top with prepared whipped topping, if 
desired.

Makes: 12 breadsticks  

These fanciful trees add a holiday touch to any meal, and they're ready in 
minutes!


1can (11 oz) Pillsbury® refrigerated breadsticks
1egg
1tablespoon water
Sesame or poppy seed



1 .  Heat oven to 350°F. Lightly grease cookie sheets. Separate dough into 12 
pieces; unroll each into an 18-inch rope. Cut off 1 inch of each breadstick for 
tree trunk.
2 .  On greased cookie sheet, shape each breadstick into a tree (see diagram). 
Place trunk at base of tree.
3 .  In small bowl, beat egg and water; brush over trees. Sprinkle with sesame 
seed.
4 .  Bake at 350°F. for 14 to 16 minutes or until golden brown. Immediately 
remove from cookie sheets. Serve warm.

A rich holiday classic made even better with a soft custard base.

Prep Time:35 min 
Start to Finish:2 hr 35 min 
Makes:10 servings

Soft Custard
3eggs, slightly beaten
1/3cup granulated sugar
Dash salt
2 1/2cups milk
1teaspoon vanilla
Eggnog
1cup whipping cream
2tablespoons powdered sugar
1/2teaspoon vanilla
1/2cup light rum
1or 2 drops yellow food color, if desired
Ground nutmeg

1.  In 2-quart heavy saucepan, stir eggs, granulated sugar and salt until well 
mixed. Gradually stir in milk. Cook over medium heat 10 to 15 minutes, stirring 
constantly, until mixture just coats a metal spoon; remove from heat. Stir in 1 
teaspoon vanilla. Place saucepan in cold water until custard is cool. (If 
custard curdles, beat vigorously with hand beater until smooth.) Cover and 
refrigerate at least 2 hours but no longer than 24 hours.
2.  Just before serving, in chilled medium bowl, beat whipping cream, powdered 
sugar and 1/2 teaspoon vanilla with electric mixer on high speed until stiff. 
Gently stir 1 cup of the whipped cream, the rum and food color into custard.
3.  Pour custard mixture into small punch bowl. Drop remaining whipped cream in 
mounds onto custard mixture. Sprinkle with nutmeg. Serve immediately. Store in 
refrigerator up to 2 days.

This nut loaf is all nuts. I have never met anyone who didn't like it - except 
for a few nuts!

INGREDIENTS
1 1/2 pounds blanched whole almonds 
1 pound Brazil nuts 
1/2 pound walnut halves 
1/2 pound pecan halves 
1 1/2 pounds pitted dates 
1/3 pound red candied cherries 
1/3 pound green candied cherries 
1 cup all-purpose flour 
1 cup white sugar 
1 teaspoon baking powder 
3/4 teaspoon salt 
4 eggs 
2 teaspoons vanilla extract 
DIRECTIONS
Preheat oven to 275 degrees F (135 degrees C). Line two 5x9 inch loaf pans with 
greased parchment paper. 
Combine the almonds, Brazil nuts, walnuts, pecans, dates, red and green 
cherries; mix well. 
Sift together the flour, sugar, baking powder and salt. Combine with nut 
mixture and mix well. 
Beat eggs and vanilla, add to nut and flour mixture and mix well. 
Press into 2 lined loaf pans and bake for 1 1/2 to 2 hours. Set aside for 5 
minutes and remove from pans. Completely cool on wire rack.

Holiday Angel Cookies
Prep Time: 40 min ; Start to Finish: 1 hr 

Makes: About 2 dozen cookies  

You can almost hear the singing from these heavenly holiday cookies. Make it 
simple with no cookie cutters!


1roll (16.5 oz) Pillsbury® Create 'n Bake® refrigerated sugar cookies
1 1/4cups fluffy white whipped ready-to-spread frosting (from 12-oz container)
Blue and white sugars, if desired
Red decorating gel, if desired
Yellow decorating icing (or other colors as desired)
Small candy decorations, if desired



1 .  Heat oven to 350°F. Lightly spray cookie sheet with cooking spray. Cut 
chilled dough into 30 slices, about 1/4 inch each.
2 .  With 24 of the slices, cut 2 narrow strips from sides of each slice, 
leaving a triangle for body (see illustration). Place 2 strips on each side of 
top point of triangle, curved edges down, for wings. Cut 6 slices into 
quarters. Roll 1 of the quarter slices into ball; flatten slightly and place at 
top of triangle for head. On ungreased cookie sheets, place angels 2 inches 
apart.
3 .  Bake 7 to 11 minutes or until light golden brown. Cool 1 minute; carefully 
remove from cookie sheets to cooling racks. Cool completely, about 20 minutes. 
Spread frosting on cooled cookies. Decorate as desired with remaining 
ingredients.



High Altitude (3500-6500 ft):Bake 9 to 11 minutes.

Yield: 6 cups 

This is a double batch, 3 cups to serve, 3 cups to gift-away. Buy nuts from 
bulk bins in market ? they are better priced than nuts on baking aisle. 

2 cups walnut halves 
1 cup peeled hazelnuts 
1 cup whole unsalted cashews 
1 cup whole pecan halves 
3 tablespoons butter 
1 teaspoon ground anise 
1 teaspoon ground cinnamon 
1 teaspoon coarse black pepper 
1/2 teaspoon freshly grated nutmeg, eyeball it 
1 cup smoked almonds (recommended: Diamond Smokehouse almonds) 
Heat a large skillet and cook nuts over moderate heat 7 to 8 minutes until 
golden and well toasted – your nose will know when they are done. Transfer nuts 
to a plate and return pan to stove top. Add butter to the pan in small pieces. 
Melt butter and spice it with anise, cinnamon, pepper and nutmeg. Let butter 
infuse a minute then pour over nuts. Turn off heat. Add smoked nuts to the 
skillet and turn to combine evenly with butter.

Cut cherries in the shape of poinsettias make these cookies holiday favorites.

Original recipe yield:
3 dozen

INGREDIENTS
1 1/2 cups all-purpose flour 
1/4 teaspoon baking soda 
1/4 teaspoon ground nutmeg 
1/4 teaspoon salt 
1/2 cup butter 
1/3 cup honey 
1 egg 
1 1/2 teaspoons orange zest 
4 teaspoons orange juice 
1 cup chopped pecans 
1/2 cup red candied cherries 
DIRECTIONS
In a large mixing bowl, beat butter until softened. Beat in honey. Add egg 
yolk, orange peel and orange juice and mix well. 
In a separate bowl, stir together the flour, baking soda, nutmeg and salt. Add 
flour mixture to the butter mixture and beat until well mixed. Cover and chill 
at least 3 hours. 
Preheat oven to 325 degree F. 
Separate egg and slightly beat egg white. Shape dough into 1-inch balls. Roll 
in egg white and then in the nuts. Place 2 inches apart on an ungreased cookie 
sheet. 
Cut each cherry into 6-8 wedges. Place 4 or 5 wedges atop each ball so that it 
looks like a flower; press lightly. Bake for 15-18 minutes. Remove and cool on 
rack.

INGREDIENTS
2 pounds processed cheese food (eg. Velveeta) 
2 onions, diced 
3 tomatoes, chopped 
6 jalapeno peppers, seeded and minced 
1 red bell pepper, diced 
1/2 green bell pepper, diced 
DIRECTIONS
Melt the cheese in the top of a double-boiler over medium heat. 
Add the onions, tomatoes, jalapenos, red and green bell peppers. 
Mix well and heat for additional 10 minutes.

1/4 cup chopped onion

1 tablespoon lime juice

1/2 teaspoon chili powder

2 garlic cloves, minced

Dash hot pepper sauce

1/2 cup each shredded reduced-fat cheddar and Monterey Jack cheeses

1 cup chopped tomatoes

1/3 cup sliced green onions

Tortilla chips


DIRECTIONS
In a bowl, combine beans and chilies; mix well. Spread onto a 12-in round 
serving platter. Combine the sour cream and taco seasoning; spoon and spread 
evenly over the bean mixture. Set aside. In a food processor or blender, 
combine peas, onion, lime juice, chili powder, garlic and hot pepper sauce; 
cover and process until smooth. Spread evenly over sour cream layer. Sprinkle 
with cheeses, tomatoes and green onions. Serve with chips. Yield: 14 servings.

1 KRAFT 2% Milk Singles 
2 slices whole wheat or white bread 
Cooking spray 
1 OSCAR MAYER 98% Fat Free Wieners, cut in half lengthwise 
2 slices pitted ripe olives 
1 carrot slice 
1 small tomato wedge 
1/4 cup shredded lettuce 


PLACE Singles between slices of bread. Cut off crusts, rounding off corners to 
form large circle. Spray both sides of sandwich with cooking spray. Place on 
cookie sheet. 
WRAP wiener halves around outside of sandwich, with cut sides of wieners facing 
sandwich. Secure with wooden toothpicks. 
BAKE at 400°F for 8 minutes or until golden brown, turning over after 4 
minutes. Place on serving plate. Decorate with olives for eyes, carrot for 
nose and tomato wedge for mouth. Add shredded lettuce for hair.

INGREDIENTS
2 1/4 pounds ground beef 
3/4 cup uncooked long-grain white rice 
1 egg, beaten 
1 (26 ounce) can condensed tomato soup 
26 fluid ounces water 
DIRECTIONS
In a large bowl combine the beef, rice and egg beat. Mix well with hands, 
making mixture into medium sized meatballs. Set aside. 
Pour soup into a large saucepan, and dilute with 1 can of water. Heat to 
simmering over medium heat. 
Lower heat to low, drop meatballs into soup and simmer for 20 to 30 minutes.

1 cup sliced pepperoni 
1 cup sliced Italian sausage 
1/2 French bread loaf, toasted and cubed 
1/2 green pepper, cut into bite-sized pieces 
1/2 cup halved fresh mushrooms 
1/2 cup zucchini slices 
1/4 cup Italian dressing 
1/4 cup shredded mozzarella 
1 cup spaghetti sauce, warmed 

Preheat oven to 350 degrees F. 
Thread meat, bread, and veggies onto skewers. (My kids entirely do this part on 
their own, and I encourage them to make creative patterns.) Arrange in a single 
layer on a baking sheet, and brush with Italian dressing. Sprinkle with cheese 
and bake for 20 minutes, until heated through and cheese is melted. Serve with 
warm spaghetti sauce for dipping.

Meatball sandwiches with a twist ooze with melted cheese and they're so easy 
for kids to handle.

Prep Time:15 min 
Start to Finish:35 min 
Makes:8 sandwiches 

1can (8 ounces) Pillsbury® refrigerated crescent dinner rolls
16(1 1/2-inch) frozen fully cooked Italian meatballs, (about 1 pound), thawed 
and cut in half
1cup tomato-basil pasta sauce
1cup shredded mozzarella cheese (4 ounces)
1egg, slightly beaten
1/4cup grated Parmesan cheese

1.  Heat oven to 375°F. Spray 2 cookie sheets with cooking spray. Separate 
dough into 8 rectangles. Place rectangles on cookie sheets. Firmly press 
perforations to seal.
2.  Place 4 meatball halves lengthwise down center of each rectangle. Top each 
with 2 tablespoons pasta sauce and 2 tablespoons mozzarella cheese. Make cuts 1 
inch apart on each side of filling, using scissors or sharp knife. Alternately 
cross strips over filling. Brush dough with beaten egg; sprinkle with Parmesan 
cheese.
3.  Bake 15 to 20 minutes or until golden brown.

2 cans (6 oz. each) white tuna in water, drained, flaked 
1 pkg. (10 oz.) frozen chopped broccoli, thawed, drained 
4 oz. (1/4 lb.) VELVEETA Made With 2% Milk Reduced Fat Pasteurized Prepared 
Cheese Product, cut up 
1/2 cup BREAKSTONE'S FREE or KNUDSEN FREE Fat Free Sour Cream 
1/4 tsp. black pepper 


COOK pasta as directed on package. 
MEANWHILE, mix all remaining ingredients in 2-quart microwavable bowl. 
Microwave on HIGH 2 minutes; stir. Microwave on HIGH an additional 1 to 2 
minutes or until mixture is heated through.

1can (19 oz) Progresso® Vegetable Classics tomato rotini soup
2cups Progresso® diced tomatoes with Italian herbs, undrained (from 28-oz can)
3slices Canadian bacon, chopped
1/2cup croutons
1oz. (1/4 cup) shredded mozzarella cheese



1 .  In medium saucepan, combine soup, tomatoes and Canadian bacon; mix well.
2 .  Bring to a boil. Reduce heat to low; simmer 5 minutes.
3 .  Divide croutons evenly among 3 bowls. Pour soup over croutons. Sprinkle 
each serving with 1 heaping tablespoonful cheese.

1/8 teaspoon pepper

2 cups crushed herb-seasoned stuffing, divided

2 tablespoons butter or margarine, melted
DIRECTIONS
In a bowl, combine the squash, soup, sour cream, onion, carrot, salt and 
pepper. Sprinkle 1 cup of stuffing into a greased 1-1/2-qt. baking dish. Top 
with squash mixture and remaining stuffing; drizzle with butter. Bake, 
uncovered, at 350° for 35 minutes or until lightly browned. Yield: 6-8 
servings.

1 can (6 ounces) tomato paste

3/4 cup water

1 teaspoon Italian seasoning

1/2 teaspoon salt

Dash pepper

1 package (7 ounces) small pasta shells, cooked and drained

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

2 eggs, beaten

1 cup (4 ounces) shredded sharp cheddar cheese

1/2 cup soft bread crumbs

1/4 cup grated Parmesan cheese
DIRECTIONS
In a saucepan over medium heat, cook beef, onion and garlic until meat is no 
longer pink and vegetables are tender; drain. Add the next seven ingredients; 
bring to a boil. Reduce heat; cover and simmer for 10 minutes. Stir in 
macaroni, spinach, eggs, cheese and bread crumbs. Pour into a greased 13-in. x 
9-in. x 2-in. baking dish. Sprinkle with Parmesan cheese. Cover and bake at 
350° for 30-35 minutes or until bubbly. Let stand for 10 minutes before 
serving. Yield: 10-12 servings.

2 pkg. (4-serving size each) JELL-O Brand Gelatin, any red flavor, 
2 pkg. (4-serving size each) JELL-O Brand Orange Flavor Gelatin 
2 pkg. (4-serving size each) JELL-O Brand Lemon Flavor Gelatin 
2 pkg. (4-serving size each) JELL-O Brand Lime Flavor Gelatin 
2 pkg. (4-serving size each) JELL-O Brand Berry Blue Flavor Gelatin 
1-1/2 cups thawed COOL WHIP Whipped Topping 


STIR 1-1/4 cups of the boiling water into each flavor dry gelatin in separate 
bowls at least 2 minutes until completely dissolved. Pour each flavor of 
gelatin into separate 8- or 9-inch square pans. 
REFRIGERATE 3 hours or until firm. Cut gelatin in each pan into 1-inch cubes. 
ARRANGE the gelatin cubes in rows on a large tray or baking sheet to resemble a 
rainbow, using a different color of gelatin in each row and double stacking the 
cubes if necessary to fit on tray. Spoon whipped topping evenly into 2 small 
serving bowls. Place 1 bowl at each end of the rainbow to resemble clouds. To 
serve, dip the gelatin cubes into the whipped topping.

Kid's Macaroni  Cheese Casserole

1 1/2 lbs ground chuck 
1 (26 ounce) jar spaghetti sauce 
2 (7 1/4 ounce) boxes Kraft macaroni and cheese, prepared following box 
directions 
2 cups shredded cheddar cheese


Brown ground chuck and onion in a large skillet. 
Add the jar of spahetti sauce and simmer for 5-10 minutes. 
Butter a large casserole dish and place half the mac cheese mixture on the 
bottom. 
Top with meat sauce and 1 cup of the shredded cheese. 
Add the rest of the mac cheese, the remaining meat sauce and finish with a cup 
of cheese. 
Cover and bake at 350 for 20 minutes.

2cups cooked chicken strips
1/2teaspoon ground cumin
1/2teaspoon paprika
4Old El Paso® Stand 'N Stuff™ taco shells (from 4.7-oz box)
1medium red bell pepper, cut into thin strips
1cup barbecue baked beans (from 16-oz can)
1cup shredded Monterey Jack cheese (4 oz)
4slices bacon, crisply cooked, crumbled

1.  Heat oven to 400°F. In small bowl, toss chicken strips with cumin and 
paprika to coat. In 8-inch square (2-quart) glass baking dish, stand taco 
shells side by side.
2.  Fill each shell evenly with seasoned chicken. Divide pepper strips evenly 
over chicken. Top each with 1/4 cup baked beans and 1/4 cup cheese. Sprinkle 
with bacon.

2(3.4 to 3.9-oz.) pkg. instant pudding and pie filling mix (any flavor)
2 3/4cups cold milk
1cup refrigerated or frozen whipped topping, thawed



1 .  Prepare pie crust as directed on package for one-crust baked shell using 
9-inch pie pan. Cool 15 minutes or until completely cooled.
2 .  In large bowl, combine pudding mix and milk; beat 2 minutes with wire 
whisk. Pour into cooled baked shell. Refrigerate at least 1 hour or until set.

Potato Gratin 
1 clove garlic 
2 tablespoons butter 
4 large russet potatoes, peeled and thinly sliced 
1 cup milk 
1 cup water 
1 bay leaf 
Salt 
1 1/2 cups grated Swiss cheese 
Fresh ground pepper 
Nutmeg 
2/3 cup heavy cream 
Preheat oven to 375 degrees. Rub a baking dish with garlic clove and then with 
butter. 
In a medium saucepan, combine potatoes, milk, water, bay leaf and pinch of 
salt. Bring to a boil, stir, reduce heat and simmer until potatoes are tender. 
Drain the potatoes and layer half of them in the buttered baking dish. Sprinkle 
on half of the cheese and season with salt, pepper and nutmeg. Spread out 
remaining potatoes and top with remaining cheese and seasoning. Pour heavy 
cream over potatoes. Bake for 45 minutes to 1 hour or until golden and bubbly.

Free Recipes Bodacious Blondies

Bodacious Blondies
From: Family Time
Prep Time: 15 minutes

Serves: 20

Ingredients:


2 cups all-purpose flour 
2 tsp. baking powder 
1/2 tsp. salt 
1 cup unsalted butter at room temperature (2 sticks)
1 cup brown sugar 
1/2 cup granulated sugar 
2 eggs at room temperature
1 tbsp. vanilla extract 
2 cups MM's® Semi-Sweet or Milk Chocolate Mini Baking Bits


Directions:


Preheat the oven to 350 degrees F. Line a 13-by-9-inch pan with aluminum foil 
so that the foil extends about 2 inches beyond the long sides of the pan. 
Lightly grease the foil. 
In a bowl, whisk together the flour, baking powder, and salt. 
In the bowl of an electric mixer set on medium speed, beat the butter and both 
sugars for 2 to 3 minutes until well mixed, light, and fluffy. 
Add the eggs, one at a time, beating well after each addition. Beat in the 
vanilla extract.
Reduce the speed to low and slowly add the flour. Beat just until the flour is 
combined.
Remove the bowl from the mixer and use a wooden spoon to stir in 1 3/4 cups of 
the MM's. 
Scrape the batter into the pan and spread evenly with the back of the wooden 
spoon or a rubber spatula. Sprinkle the remaining 1/4 cup of MM's over the top 
of the blondies. 
Bake for 30 to 35 minutes, or until the blondies look set, are just barely 
beginning to pull away from the sides of the pan, and a toothpick inserted in 
the center of the pan comes out with a few moist crumbs clinging to it
Set the pan on a wire rack to cool for 30 minutes. Using the foil sides as 
handles, lift the blondies from the pan and set the foil directly on the wire 
rack to complete cooling for at least 2 hours. Cut the cooled blondies into 
squares and serve immediately or store. 
TIP: To store, put the blondies in an airtight container, such as a tin or 
rigid plastic storage container. For longer storage, wrap the blondies in wax 
paper or plastic and then in a double layer of aluminum foil and freeze for up 
to 3 months. Defrost at room temperature.

INGREDIENTS 
1 carton (16 ounces) plain nonfat yogurt

2 tablespoons brown sugar

1 tablespoon orange juice concentrate

Dash ground cinnamon
DIRECTIONS
Line a strainer with a paper coffee filter or cheesecloth; place over a bowl. 
Put yogurt in strainer; refrigerate for 8 hours. Discard liquid in bowl. 
Combine yogurt, brown sugar, orange juice concentrate and cinnamon; mix well. 
Serve with fresh fruit. Yield: 1-1/4 cups.

Light Sour Cream Chicken Enchiladas

Makes: 6 servings  

Rich, smooth and creamy describe these easy, lower-fat enchiladas.


1(8-oz.) container light sour cream
1(8-oz.) container nonfat plain yogurt
1(10 3/4-oz.) can condensed 99%-fat-free cream of chicken soup with 1/3 less 
salt
1(4-oz.) can diced green chiles
12(6 or 7-inch) white corn or flour tortillas
4oz. (1 cup) shredded 1/3-less-fat Cheddar cheese
1 1/2cups chopped cooked chicken
1/4cup sliced green onions



1 .  Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with nonstick 
cooking spray. In medium bowl, combine sour cream, yogurt, soup and chiles; mix 
well.
2 .  Spoon about 3 tablespoons sour cream mixture down center of each tortilla. 
Reserve 1/4 cup of the cheese; sprinkle tortillas with remaining cheese, 
chicken and onions. Roll up; place in sprayed dish. Spoon remaining sour cream 
mixture over tortillas. Cover with foil.
3 .  Bake at 350°F. for 25 to 30 minutes or until hot and bubbly. Remove foil; 
sprinkle with reserved 1/4 cup cheese. Bake uncovered for an additional 5 
minutes or until cheese is melted. If desired, garnish with shredded lettuce 
and chopped tomatoes.

Ingredients:


3 1/2 cups Swanson® Chicken Broth 
1/2 tsp. garlic powder 
1 medium carrot, shredded
1 cup uncooked corkscrew-shaped pasta 
1 cup uncooked mafalda pasta OR medium egg noodles 
1 cup broccoli flowerets 
1 cup cubed cooked chicken 
Chopped fresh parsley 


Directions:


MIX broth, garlic powder and carrot in saucepan. Heat to a boil.
ADD pastas. Cook over medium heat 10 min.
ADD broccoli and chicken. Cook 5 min. or until broccoli is tender-crisp. 
Sprinkle with parsley.
TIP: Swanson Kitchen Tip: This recipe is also great using Swanson® Natural 
Goodness™ or Certified Organic Chicken Broth in place of the regular chicken 
broth.

Fix 'em and forget 'em! Morning brings a treat of warm, gooey, finger lickin' 
homemade rolls with no fuss.


Rolls
3to 3 1/2 cups all-purpose flour
1/4cup sugar
1teaspoon salt
1pkg. active dry yeast
1/2cup applesauce
1/2cup milk
1/4cup butter
1egg
Caramel Topping
1/2cup firmly packed brown sugar
1/2cup applesauce
3tablespoons butter, melted
Filling
2tablespoons butter, softened
1/3cup sugar
1teaspoon cinnamon



1 .  Lightly spoon flour into measuring cup; level off. In large bowl, combine 
1 cup flour, 1/4 cup sugar, salt and yeast; mix well.
2 .  In small saucepan, combine 1/2 cup applesauce, milk and 1/4 cup butter; 
cook over medium heat until very warm (120 to 130°F.), stirring constantly. Add 
warm mixture and egg to flour mixture; blend at low speed until moistened. Beat 
2 minutes at medium speed. By hand, stir in 1 1/2 to 1 3/4 cups flour until 
dough pulls cleanly away from sides of bowl.
3 .  On floured surface, knead in an additional 1/2 to 3/4 cup flour until 
dough is smooth and elastic, about 5 minutes. Place dough in greased bowl; 
cover loosely with greased plastic wrap and cloth towel. Let rise in warm place 
(80 to 85°F.) until light and doubled in size, 45 to 60 minutes.
4 .  Grease 13x9-inch pan. Combine topping ingredients in pan; mix well. Spread 
evenly in pan.
5 .  On lightly floured surface, roll dough to 15x12-inch rectangle. Spread 
dough with 2 tablespoons butter. In small bowl, combine 1/3 cup sugar and 
cinnamon; mix well. Sprinkle over butter.
6 .  Starting with 15-inch side, roll up tightly, pinching edges to seal. Cut 
roll into 12 slices; place cut side down over topping in pan. Cover; 
refrigerate at least 8 hours or overnight.
7 .  When ready to bake, let rolls stand at room temperature for 30 minutes. 
Heat oven to 400°F. Uncover rolls; bake 20 to 25 minutes or until golden brown. 
Cool in pan 1 minute; invert onto serving platter or tray. Scrape any remaining 
topping onto rolls. Serve warm.

A Pillsbury Bake-Off® Contest recipe from 1959, this recipe is considered a 
classic.


1Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box
1 1/2cups sugar
3tablespoons all-purpose flour
3/4teaspoon instant coffee granules or crystals
1/4teaspoon ground cinnamon
Dash salt
4eggs
1/2cup buttermilk
1 1/2teaspoons vanilla
1/2cup butter or margarine, softened
2oz unsweetened baking chocolate, melted
1/4cup slivered almonds



1 .  Heat oven to 400°F. Make pie crust as directed on box for One-Crust Filled 
Pie using 9-inch glass pie pan.
2 .  In medium bowl, mix sugar, flour, instant coffee, cinnamon and salt. In 
large bowl, beat eggs with electric mixer on high speed until light in color. 
Beat in sugar mixture. Beat in buttermilk, vanilla, butter and chocolate until 
well combined (filling may look curdled). Pour into crust-lined pan. Sprinkle 
with almonds.
3 .  Bake 25 to 30 minutes or until center is set and crust is deep golden 
brown. After 15 to 20 minutes of baking, cover edge of crust with strips of 
foil to prevent excessive browning. Cool completely, about 1 hour.



High Altitude (3500-6500 ft):Bake 30 to 35 minutes.

1(1-lb.) pkg. Green Giant Select® Frozen Broccoli Spears
1to 2 tablespoons olive or vegetable oil
1/4to 1/2 cup pine nuts
1medium yellow or red bell pepper, cut into thin strips
1cup purchased ranch salad dressing
1tablespoon chopped fresh dill or 1 teaspoon dried dill weed
1teaspoon prepared horseradish
1teaspoon honey
1/4teaspoon garlic powder
Shredded fresh Parmesan cheese, if desired



1 .  Cook broccoli as directed on package. Drain; keep warm.
2 .  Meanwhile, heat oil in large skillet over medium heat until hot. Add pine 
nuts and bell pepper; cook and stir 5 minutes or until pine nuts are golden 
brown and bell pepper is crisp-tender. Drain; cover to keep warm.
3 .  In small saucepan, combine salad dressing, dill, horseradish, honey and 
garlic powder; mix well. Cook over medium heat for 2 minutes or until 
thoroughly heated, stirring constantly. DO NOT BOIL.
4 .  To serve, arrange broccoli spears on serving platter. Top with pine nuts 
and bell pepper. Spoon sauce over top. Garnish with cheese.

3 to 4 whole dove or quail, cooked and deboned

1 cup (4 ounces) shredded cheddar cheese

1 serano or jalapeno pepper, seeded

Salt and pepper to taste

2 bacon strips, cooked and crumbled

DIRECTIONS
Remove stems from mushrooms; set caps aside. (Discard stems or save for another 
use.) In a food processor, combine the dove, cheese, serrano, salt and pepper. 
Cover and pulse until finely chopped. Stuff mushroom caps with meat mixture. 
Sprinkle with bacon. Place on a baking sheet. Bake at 400° for 10-15 minutes or 
until cheese is melted. Yield: 1 dozen.

Vanilla Custard Cups

1 egg
1 cup milk
3 tablespoons brown sugar
3/4 teaspoon vanilla extract
1/8 teaspoon salt -- optional
1/8 teaspoon ground nutmeg 
In a bowl, beat egg, milk, brown sugar, vanilla and salt if desired until 
blended. Pour into two ungreased 6-oz. custard cups. Sprinkle with nutmeg. 
Place cups in a 9-inch square baking Pan. Fill pan with hot water to a depth of 
1 inch. Bake, uncovered, at 350°F for 30 - 35 minutes or until a
knife inserted near the center comes out clean. 
Yield: 2 servings.

Easy Beef Taco Dish

Beef taco dinner mix made in a skillet in 30 minutes gets topped with taco 
salad fixin’s. Olé!

Prep Time:5 min 
Start to Finish:30 min 
Makes:5 servings 

1pound lean ground beef
3 2/3cups hot water
1package Hamburger Helper® beef taco
2cups Progresso® red kidney beans (from 19-oz can), drained, rinsed
1/4cup milk
1cup shredded lettuce
1large tomato, chopped (1 cup)
Sliced ripe olives, if desired

1.  Cook beef in 10-inch skillet over medium-high heat, stirring occasionally, 
until brown; drain.
2.  Stir in hot water, Sauce Mix and beans. Heat to boiling, stirring 
occasionally. Stir in uncooked Pasta.
3.  Reduce heat; cover and simmer 9 to 11 minutes, stirring occasionally, until 
pasta is tender (sauce will thicken as it stands). Meanwhile, stir Topping mix 
and milk in bowl 30 seconds; set aside.
4.  Remove from heat. Spoon and lightly spread topping evenly over beef 
mixture. Sprinkle with remaining ingredients.

Hot Dogs 'n Crescents

What fun! Hot dogs are baked in their own buns! This is a favorite for kids of 
all ages.

Prep Time:15 min 
Start to Finish:25 min 
Makes:8 crescents 

1 3/4cups Original Bisquick® mix
1/3cup milk
1tablespoon yellow mustard
3tablespoons pickle relish, drained
2slices process American cheese food, cut into 4 strips
8hot dogs
Additional pickle relish, if desired

1.  Heat oven to 425ºF. Grease cookie sheet. Mix Bisquick, milk and mustard 
until soft dough forms; beat 30 seconds. Turn dough onto surface dusted with 
Bisquick; roll in Bisquick to coat. Shape into ball; knead 10 times. 
2.  Roll dough into 13-inch circle; cut into 8 wedges. Place about 1 teaspoon 
pickle relish and 1 cheese strip on each wedge about 1 inch from rounded edge. 
Top with hot dog. Roll up, beginning at rounded edge. Place crescents, with 
tips underneath, on cookie sheet.
3.  Bake about 12 minutes or until golden brown. Serve with additional pickle 
relish.

that leftover Easter ham or other dinner leftovers in a quick, tasty family 
dish.

Original recipe yield:

READY IN 55 Min


INGREDIENTS
1/2 cup uncooked egg noodles 
2 tablespoons butter 
2 tablespoons all-purpose flour 
1 cup milk 
1/2 cup cooked, cubed chicken breast meat 
1/2 cup cooked, diced ham 
1/4 cup chopped celery 
1/4 teaspoon salt 
1/4 teaspoon ground black pepper 
3 ounces shredded Cheddar cheese 
1 teaspoon paprika 
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a medium baking 
dish. 
Bring a saucepan of lightly salted water to a boil. Cook egg noodles in boiling 
water for 6 to 8 minutes, or until al dente. Drain. 
Melt butter in a saucepan over medium-low heat. Mix in flour, heating until 
bubbly. Slowly whisk in milk. Cook for 5 minutes, stirring constantly, or until 
thick and smooth. Remove the saucepan from heat. Mix in the noodles, chicken, 
ham, celery, salt, and pepper. Spoon the mixture into the prepared baking dish. 
Bake for 15 minutes in the preheated oven. Sprinkle with cheese and paprika, 
and continue baking for another 5 minutes. Serve hot!

Yield: 5 servings 

1 pound lean ground beef 
1/2 cup sweet onions, preferably Vidalia onion 
1 tablespoon steak seasoning (recommended: Montreal) 
1 tablespoon steak seasoning sauce (recommended: Dale's Steak Seasoning Sauce) 
5 slices cheese, preferably American, Swiss, or sharp Cheddar 
1 sheet frozen puff pastry dough* 
1 egg yolk 

*Frozen puff pastry dough should sit at room temperature for about 20 minutes. 
Preheat the oven to 375 degrees F and preheat the grill. 
Mix the ground beef, onion, steak seasoning, and seasoning sauce together 
(using your hands is the most efficient way to do this). Form into 5 small flat 
patties. Grill the hamburgers to medium-well. (You may also pan-fry the 
patties.) Remove from the grill and top each burger with a slice of cheese of 
your choice. 
Roll the puff pastry sheet to flatten slightly. Cut it into 5 relatively even 
rectangles. 
Cover each burger with a piece of puff pastry and wrap it around the bottom, 
pinching all of the edges to seal. Place on an un-greased baking sheet, pinched 
side down. 
Whish together the egg yolk and 1 teaspoon water to make an egg wash. Brush 
each wrapped pastry with the egg wash. Bake for about 15 minutes, until the 
puff pastry is nice and brown.

2 broiler/fryer chickens (about 3 pounds each), cut up and skinned

3 tablespoons vegetable oil

2 quarts chicken broth

1 cup uncooked brown rice

1/2 cup medium pearl barley

1 medium onion, chopped

2 bay leaves

1/2 teaspoon dried basil

2 teaspoons salt

1/4 teaspoon pepper

8 carrots, cut into 1-inch pieces

2-1/2 cups frozen cut green beans

2 celery ribs, cut into 1-inch pieces
DIRECTIONS
In an 8-qt. kettle or Dutch oven, brown chicken in oil. Remove chicken and set 
aside. Drain. In the same kettle, combine the broth, rice, barley, onion, bay 
leaves, basil, salt and pepper; bring to a boil. Reduce heat. Return chicken to 
pan; cover and simmer for 45 minutes. 
Stir in the carrots, beans and celery. Cook over medium heat for 30 minutes 
or until the chicken and grains are tender. Remove bay leaves before serving. 
Yield: 6-8 servings.

Ingredients
1 (4-pound) cured corned beef brisket, trimmed 
16 cups water 
2 cups chopped onion 
1 cup chopped celery 
1 cup chopped carrot 
1 1/2 teaspoons pickling spice 
3 garlic cloves, peeled 
 Cooking spray 
1 tablespoon caraway seeds 
1 (2 1/2-pound) head green cabbage, cored and cut into 1-inch strips 
4 pounds small red potatoes, quartered 
2 tablespoons chopped fresh parsley 
2 teaspoons butter 
2 teaspoons grated lemon rind 
2 teaspoons fresh lemon juice 
1/8 teaspoon black pepper 
1/2 cup dry breadcrumbs 
1 (5-ounce) jar prepared horseradish, drained and squeezed dry 
3 tablespoons Dijon mustard 

Preparation
Place brisket in a large stockpot; add water and next 5 ingredients (water 
through garlic). Bring to a boil. Cover, reduce heat, and simmer 3 hours. 
Remove brisket from pot. 
Place brisket on the rack of a broiler pan or roasting pan coated with cooking 
spray; place rack in pan. Strain cooking liquid through a colander into 2 large 
bowls; discard solids. Return liquid to pot. Add caraway seeds and cabbage; 
bring to a boil. Reduce heat; simmer 20 minutes. Drain. 
While cabbage is cooking, place potatoes in a large Dutch oven. Cover with 
water. Bring to a boil; cook 20 minutes or until tender. Drain. Return potatoes 
to pan. Stir in parsley, butter, rind, juice, and pepper; toss to coat. 
Preheat broiler. 
Combine breadcrumbs and horseradish. Spread mustard over one side of brisket. 
Press breadcrumb mixture onto mustard. Broil 3 minutes or until lightly 
browned. Serve brisket with cabbage and potatoes. 
Yield
8 servings (serving size: 3 ounces beef, about 1 1/2 cups cabbage, and about 1 
1/3 cups potatoes)

1/4 cup chopped sun-dried tomatoes packed in oil, drained with 2 tablespoons 
oil reserved
2 cloves garlic, minced
2 catfish fillets (about 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 package (10 ounces) fresh spinach, cleaned

In a large deep skillet, heat the 2 tablespoons reserved oil over medium heat; 
sauté the garlic for 1 to 2 minutes, until golden. 
Sprinkle both sides of the fish with salt and pepper. Place the fish in the 
skillet; cover, and cook for 8 to 10 minutes, or until the fish flakes easily 
with a fork. 
Add the spinach and sun-dried tomatoes to the skillet. Cover, and cook for 1 to 
2 minutes, or until the spinach wilts but is still bright green. 
Place the spinach on a serving plate and top with the fish fillets. Drizzle 
with the pan drippings, and serve.
Serves 2

6 boneless skinless chicken breast
1 cup uncooked rice
2 cups water
¼ cup margarine
1 envelope onion soup mix

Layer rice, water, chicken, margarine and soup mix in a baking dish.
Bake, covered at 350° for 30 minutes. Remove cover.
Bake for 15 more minutes or until rice and chicken are cooked through.

INGREDIENTS
1/2 pound penne pasta 
1/2 pound lean ground beef 
1 (26 ounce) jar pasta sauce 
1 (15 ounce) container ricotta cheese 
8 ounces shredded mozzarella cheese, divided 
1/4 cup grated Parmesan cheese 
1 egg, beaten 
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 2 1/2 quart baking 
dish. 
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 
to 10 minutes or until al dente; drain. 
In a large skillet over medium heat, cook beef until brown; drain. Stir in 
pasta sauce; remove from heat. 
In a bowl, combine ricotta, 1 cup mozzarella, Parmesan and beaten egg. Stir 
until well combined. 
In the prepared dish layer half the pasta, half the sauce and half the cheese 
mixture. Repeat. Top with remaining mozzarella. 
Bake in preheated oven 34 to 40 minutes, until hot and bubbly.

1 teaspoon dill weed

1 teaspoon caraway seed

1 teaspoon paprika

1/2 cup water

1 cup (8 ounces) sour cream

1 can (27 ounces) sauerkraut

Additional paprika
DIRECTIONS
In a bowl or plastic bag, combine flour, salt and pepper. Add beef; dredge or 
shake to coat. In a Dutch oven, brown the beef, half at a time, in oil; drain. 
Add onions, garlic, dill, caraway, paprika and water. Cover and simmer for 2 
hours or until meat is tender, stirring occasionally. 
Stir in sour cream; heat through but do not boil. Heat sauerkraut; drain 
and spoon onto a serving platter. Top with the beef mixture. Sprinkle with

Chicken  Stuffing Skillet

Prep/Cook Time: 20 minutes

Serves: 4

Ingredients:


1 tbsp. butter OR margarine 
4 boneless chicken breast halves 
1 box (6 oz.) Pepperidge Farm® Farmhouse One Step Chicken Stuffing Mix 
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup OR 98% Fat Free 
Cream of Chicken Soup 
1/2 cup milk 
1/2 cup shredded Cheddar cheese 


Directions:


HEAT butter in skillet. Add chicken and cook 12 to 15 min. or until done. 
Remove chicken.
PREPARE stuffing in skillet according to pkg. directions except let stand 2 min.
TOP with chicken. Mix soup and milk. Pour over chicken. Sprinkle with cheese. 
Cover and heat through.
TIP: *Delicious with Campbell's® Cream of Celery or Cream of Mushroom Soup.
Serve with a vegetable combination. For dessert serve Pepperidge Farm® cookies 
and ice cream.

16 ounces cheddar cheese, shredded

1 1/2 lbs ground beef 
4 ounces taco seasoning mix 
8 ounces kidney beans, drained 
1 (8 ounce) container sour cream


Brown beef and drain. Add taco seasoning, tomato sauce and beans. Simmer 10 
minutes. Place tortillas on a plate top with meat mixture then add cheese and 
sour cream.

PREHEAT oven to 400ºF. Prepare Dinner as directed on package, omitting butter.

Prep Time: 45 min 

Makes: 4 calzones

For the finishing touch to these nourishing chicken crescents, ladle on some 
gravy and garnish with paprika and green onions.


1(8-oz.) can Pillsbury® Refrigerated Crescent Dinner Rolls
4(2-oz.) slices oven-roasted chicken (from deli)
4(1-oz.) slices Monterey Jack cheese
1(8-oz.) can Green Giant® Mushroom Pieces and Stems, drained
1egg, beaten
1/2cup Progresso® Plain Bread Crumbs
1(12-oz.) jar chicken gravy
1/4cup sliced green onions
1/4teaspoon paprika



1 .  Heat oven to 375°F. Spray cookie sheet with nonstick cooking spray.
2 .  Separate dough into 4 rectangles. Firmly press perforations to seal. Press 
each to form 6x5-inch rectangle. Top each rectangle to within 1/2 inch of edge 
with slice of chicken, slice of cheese and 1 tablespoon of the mushrooms. 
Reserve remaining mushrooms for gravy. Fold dough in half, forming a square; 
pinch edges to seal. Dip each calzone in egg; coat with bread crumbs. Place on 
sprayed cookie sheet.
3 .  Bake at 375°F. for 20 to 25 minutes or until deep golden brown.
4 .  Meanwhile, in medium saucepan, combine gravy and reserved mushrooms; cook 
over medium heat until hot, stirring occasionally. Serve gravy over calzones; 
sprinkle with onions and paprika.

Susie's Cheese Bacon Meatloaf 

2 lbs. ground sirloin or ground round
1 cup seasoned bread crumbs, I purchase it that way
1 large egg plus catsup for both to equal 1 cup
1/2 cup onion, chopped
salt  pepper to taste
1 to 2 tablespoons Hormel 50% fat free bacon pieces in the jar
1/2 to 1 cup sharp cheese

In a large bowl put the ground meat, bread crumbs, onion, salt, pepper, bacon 
and cheese. Put the egg and measure the catsup to equal 1 cup. Then beat this 
mixture together and pour over the other ingredients and mix well. Put this in 
a large loaf pan and cook at 350ºF for 1 hour to 1 hour and 15 minutes. Most do 
this step or it will fall apart. Then tent foil over pan and rest for 15 
minutes. Depending on the thickness of the slices you can get 6 to 10 or more 
slices per pan.

1 kg pork, marbled with a little fat 
1 cup ketjap manis (thick soya sauce) 
2 onions, cut in wedges 
1/2 teaspoon white pepper


Place everything in a heavy based pan and simmer gently with the lid on for 1 
1/2 to 2 hours or until meat is meltingly soft. Alternatively, just pop 
everything in an oven safe dish with a lid, and bake in a preheated oven for 2 
hours at 160 degrees Celcius. 
Serve and enjoy.

No, you don't have to turn your slow cooker upside down to enjoy this savory 
pot pie. Pop biscuits in the oven about 30 minutes before it's done, then serve 
the chicken mixture over the biscuits. Bottoms up!

Prep Time:10 min 
Start to Finish:10 hr 25 min 
Makes:8 servings (3/4 cup each)

1 1/4pounds boneless skinless chicken thighs
1tablespoon instant chopped onion
1dried bay leaf
1/4teaspoon pepper
1jar (18 oz) chicken gravy
2medium celery stalks, cut into 1/2-inch slices
2 1/4cups Original Bisquick® mix
2/3cup milk
1bag (1 lb) Green Giant® frozen mixed vegetables

1.  Place chicken in 3 1/2- to 4-quart slow cooker. Top with onion, bay leaf, 
pepper and gravy. Place celery on gravy.
2.  Cover and cook on Low heat setting 8 to 10 hours. 
3.  About 30 minutes before serving, make and bake 8 biscuits using Bisquick 
mix and milk as directed on package.
4.  Meanwhile, gently stir frozen vegetables into chicken mixture. Increase 
heat setting to High. Cover and cook 15 minutes. Remove bay leaf.
5.  For each serving, split biscuit and place in soup bowl or tart pan. Spoon 
about 3/4 cup chicken mixture on top of biscuit.

1/2 lb Boneless Chicken Breast
4 tb Sesame Oil
2 c Chicken Stock
2 tb Sherry
1 c Fresh Mushrooms, quartered
2 tb Fresh Parsley, chopped 
Thinly slice the chicken breast meat. Bring the chicken stock to a rolling boil 
and add the chicken and mushrooms. 
When the soup starts to boil again and all of the ingredients float to the top, 
remove from the heat. 
Add the sesame oil and sherry and taste for seasoning. Add salt and pepper if 
necessary. 
Serve in individual soup bowls and sprinkle the parsley on top. 
Serves: 2

Prep/Cook Time: 25 minutes

Serves: 4

Ingredients:


1 lb. boneless beef sirloin steak OR top round steak, 3/4 thick*
2 tbsp. cornstarch 
1 can (10 1/2 oz.) Campbell's® Condensed Beef Broth 
2 tbsp. soy sauce 
2 tbsp. vegetable oil 
3 cups cut-up vegetables **
1/4 tsp. garlic powder OR 1 clove garlic, minced
Hot cooked rice 


Directions:


SLICE beef into very thin strips. Mix cornstarch, broth and soy until smooth. 
Set aside.
HEAT oil in skillet. Add beef and stir-fry until browned and juices evaporate. 
Push beef to one side of skillet.
ADD vegetables and garlic powder and stir-fry until tender-crisp.
STIR cornstarch mixture and add. Cook and stir until mixture boils and 
thickens. Serve over rice.
TIP: *To make slicing beef easier, freeze beef 1 hr.
**Use broccoli flowerets, sliced carrots and green or red pepper strips.
Serve with Pepperidge Farm® Hot  Crusty French Rolls. For dessert serve orange 
wedges.

Barbecued Shredded Chicken Sandwiches 

8-10 Servings

2 broiler fryer chickens about 3-3 1/2 lbs each cooked and shredded. I usually 
throw these in the slow cooker very early in the morning for about 4 hours in 
high.

1 large onion, chopped
2 cups water
1-1/4 cups ketchup
1/4 cup brown sugar, packed
1/4 cup Worcestershire sauce
1/4 cup red wine vinegar or cider vinegar (I prefer the red wine vinegar)
1 tsp salt
1 tsp celery seed
1 tsp chili powder
1/4 tsp hot pepper sauce

Combine all the above ingredients including the chicken in your slow cooker and 
mix well. Cook on low for 6-8 hours.
Serve on hamburger or hot doll rolls.

68 NILLA Wafers, divided 
3 cups sliced strawberries, divided 
3 cups cold milk 
2 pkg. (4-serving size each) JELL-O Cheesecake Flavor Instant Pudding  Pie 
Filling 
1 tub (8-oz.) COOL WHIP Strawberry Whipped Topping, thawed 


COVER bottom of 2-1/2-qt. clear glass serving bowl with 24 of the wafers; top 
with 1 cup of the strawberry slices. Set aside. 
POUR milk into medium bowl. Add dry pudding mixes. Beat with wire whisk 2 min. 
or until well blended. Spoon half of the pudding mixture over strawberry layer; 
cover with 1 cup of the whipped topping. Repeat layers using 24 wafers,1 cup 
strawberries, remaining pudding mixture and 1 cup of the remaining whipped 
topping. Refrigerate at least 2 hours. 
ARRANGE 8 whole wafers and 8 strawberry slices alternately around edge of 
serving bowl. Top with the remaining 12 wafers, 1/2 cup of the remaining 
strawberry slices and the remaining whipped topping. Garnish with remaining 
strawberries.

1 C. self rising flour

1 large can sliced peaches

Melt butter in a 9 x 13 baking dish. Mix together sugar, flour and milk, and 
pour over butter. Do Not Stir. Place peaches over batter. You can pour 1/2 C. 
of the peach liquid over the batter.

Bake at 350 for 25-30 minutes or until golden brown. 
Other fruit can be substituted.

This cake won me First Prize at the county fair last year. It is very 
chocolaty.

Original recipe yield:
1 12 cup Bundt cake

INGREDIENTS
1 (18.25 ounce) package devil's food cake mix 
1 (5.9 ounce) package instant chocolate pudding mix 
1 cup sour cream 
1 cup vegetable oil 
4 eggs 
1/2 cup warm water 
2 cups semisweet chocolate chips 
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). 
In a large bowl, mix together the cake and pudding mixes, sour cream, oil, 
beaten eggs and water. Stir in the chocolate chips and pour batter into a well 
greased 12 cup bundt pan. 
Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden 
toothpick inserted comes out clean. Cool cake thoroughly in pan at least an 
hour and a half before inverting onto a plate If desired, dust the cake with 
powdered sugar.

1 cup heavy cream 
8 ounces chopped bittersweet chocolate 
1 tablespoon butter 
1 tablespoon cabernet sauvignon 
Pound cake cubes, for dipping 
Strawberries, cleaned, for dipping 
Biscotti bits, for dipping 
In a microwave-safe bowl, mix the sugar, heavy cream, chocolate, and butter 
together and microwave for 2 minutes. 
Take out of microwave and give it a quick whisk. Add wine and whisk again. 
Transfer to a fondue pot with a flame underneath. Serve with pound cake cubes, 
strawberries, and biscotti bits on the side, for dipping.

Ingredients:


8 cups mixed berries (strawberries, blueberries, raspberries and/or 
blackberries)
1 tbsp. finely grated lemon peel
3 tbsp. cornstarch 
3 tbsp. water 
Vanilla ice cream 
1/2 cup of a 17.3 ounce package Pepperidge Farm® Frozen Puff Pastry Sheets (1 
sheet)
1/2 cup sugar 


Directions:


THAW the pastry at room temperature for 40 minutes or until it’s easy to 
handle. Heat the oven to 400°F. Line a baking sheet with parchment paper or 
spray with vegetable cooking spray
SPRINKLE work surface with 2 tablespoons of the sugar. Unfold the pastry sheet 
on the sugar. Roll gently to a 10 x 9–inch rectangle to have sugar adhere to 
pastry. Cut into 8 (4 1/2 x 2 1/2-inch) rectangles. 
PLACE the berries, lemon peel and remaining sugar in a 2-quart saucepan over 
medium-high heat to a boil. Stir the cornstarch and water in a small bowl until 
smooth. Stir into the berry mixture. Cook and stir for 5 minutes or until 
mixture boils and thickens. Spoon the berry mixture into a 13 x 9 x 2-inch 
shallow baking dish. Top with the pastry pieces, sugared-side up, but not 
touching, over the berry mixture. 
BAKE for 20 minutes or until crust is golden and filling is bubbly. Cool for 5 
minutes on a wire rack. Serve warm with ice cream.

Preheat oven to 350 degrees F. 
In a large bowl sift flour, baking soda, and baking powder together. Add 
remaining ingredients and blend well. Dough will be soft and wet. On a floured 
surface shape the dough into a disk, cover with plastic wrap and refrigerate 
for 1 hour. Flour surface again and roll dough out until approximately 1/4 inch 
thick. Cut dough into desired shapes and bake on a slightly greased sheet pan 
for 10 to 12 minutes.

Maple Cream Brownie Dessert
Candy bars, maple cream topping and chocolate syrup? Brownie mix jumpstarts 
dessert with these indulgent toppers.

Prep Time:15 min 
Start to Finish:1 hr 45 min 
Makes:12 servings

Brownie
1package (1 pound 3.8 ounces) Betty Crocker® fudge brownie mix
1/4cup water
1/2cup vegetable oil
2eggs
1teaspoon maple extract
4bars (7.5 ounces each) chocolate-covered peanut and maple candy, coarsely 
chopped
1/4cup chocolate sundae syrup or regular chocolate syrup
Maple Cream Frosting
2cups frozen (thawed) whipped topping
2teaspoons maple extract

1.  Heat oven to 350ºF. Grease bottom only of rectangular pan, 13x9x2 inches, 
with shortening. Make brownie mix as directed on package, using water, oil and 
eggs and adding 1 teaspoon maple extract. Spread batter in pan. Bake as 
directed. Cool completely in pan on wire rack, about 1 hour.
2.  Meanwhile, mix all Maple Cream Frosting ingredients until well blended; 
refrigerate. Spread frosting over cooled brownies. Cover and refrigerate until 
serving.
3.  Cut dessert into 4 rows by 3 rows. Sprinkle each serving with chopped candy 
bars; drizzle with syrup. Store covered in refrigerator.

This cake is easy to make, and it's so delicious. Everyone that's tried it has 
said it tasted just like the ones in a deli! You'll love it!

Original recipe yield:
1 - 9 inch springform panPREP TIME 30 Min
COOK TIME 1 Hr 
READY IN 7 Hrs 30 Min


INGREDIENTS
15 graham crackers, crushed 
2 tablespoons butter, melted 
 
4 (8 ounce) packages cream cheese 
1 1/2 cups white sugar 
3/4 cup milk 
4 eggs 
1 cup sour cream 
1 tablespoon vanilla extract 
1/4 cup all-purpose flour 
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan. 
In a medium bowl, mix graham cracker crumbs with melted butter. Press onto 
bottom of springform pan. 
In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and 
then mix in the eggs one at a time, mixing just enough to incorporate. Mix in 
sour cream, vanilla and flour until smooth. Pour filling into prepared crust. 
Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven 
with the door closed for 5 to 6 hours; this prevents cracking. Chill in 
refrigerator until serving.

INGREDIENTS 
2 pounds ground beef

1 medium onion, chopped

2 cans (14-1/2 ounces each) diced tomatoes, undrained

3 cups frozen peas

2/3 cup ketchup

1/4 cup chopped fresh parsley

2 tablespoons all-purpose flour

2 teaspoons beef bouillon granules

2 teaspoons dried marjoram

1 teaspoon salt

1/2 teaspoon pepper

6 cups hot mashed potatoes (prepared with milk and butter)

2 eggs
DIRECTIONS
In a large skillet, cook the beef and onion over medium heat until the beef is 
no longer pink; drain. Stir in the next nine ingredients. Bring to a boil; cook 
an stir for 2 minutes. 
Pour into an ungreased shallow 3-qt. baking dish. Combine potatoes and 
eggs. Drop by 1/2 cupfuls onto beef mixture. Bake, uncovered, at 350° for 35-40 
minutes or until bubbly and potatoes are lightly browned. Yield: 12 servings.

Frozen Chocolate Soufflés

Total Time: 5 hr 10 min
Makes: 8 servings, one soufflé each

3 cups milk 
1 pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Chocolate Flavor 
Instant Pudding  Pie Filling 
2 cups thawed COOL WHIP Whipped Topping 
16 OREO Chocolate Sandwich Cookies, chopped (about 2 cups) 
8 maraschino cherries 


POUR milk into medium bowl. Add dry pudding mix. Beat with wire whisk 2 min. 
Gently stir in whipped topping. 
SPOON 2 Tbsp. of the chopped cookies into each of eight 8- to 9-oz. paper 
drinking cups. Cover evenly with half of the pudding mixture. Repeat layers. 
Cover with foil. 
FREEZE 5 hours or until firm. Remove from freezer about 15 min. before serving. 
Let stand at room temperature to soften slightly. Peel away paper to unmold 
onto dessert plates. Top each with a cherry. Store leftovers in freezer.

My Favourite Blueberry Cake

1 cup sugar (scant)
2 cups flour
4 tsp. baking powder
1/4 tsp. salt
1 egg - well beaten
1 cup milk
4 tbspn. melted shortening
1 cup berries.

Sift dry ingredients thoroughly, into mixing bowl. Add berries and make sure 
they are completely coated. Combine egg, milk and melted shortening.

Turn into dry ingredients, stirring just enough to combine.
Mixture has a rough appearance.
Fill greased cake tin two-thirds full, handling batter as little as possible. 
Bake in hot oven.

About 375ºF to 400ºF for 25-30 minutes, or until golden brown.
