Upside Down Peach Cobbler
This light buttermilk cobbler is topped with fresh peaches baked in a gooey 
mixture of brown sugar, butter and rum or brandy.

Ingredients:
* 4 medium peaches 
* 3 tbsp butter, melted 
* 3/4 cup dark brown sugar, packed 
* 1 tbsp rum or brandy, optional 
* 2 large eggs 
* 2 tbsp buttermilk 
* 1/2 tsp vanilla extract 
* 1 cup all purpose flour 
* 3/4 cup granulated sugar 
* 3/4 tsp baking powder 
* 1/4 tsp baking soda 
* 1/4 tsp salt 
* 1/2 tsp powdered ginger 
* 6 tbsp butter, softened 
* 6 tbsp buttermilk 
* 1/2 cup pecans, very finely chopped 
Method
Peel and slice peaches into 1 inch think slices. Mix melted butter, dark brown 
sugar and rum then press into a 9 X 2 cake pan lined with baking paper 
(parchment paper) and sprayed with nonstick spray. Place peach slices into 
sugar mixture around pan with curved side into sugar and pit side overlapping 
the peach before it.. In a small bowl combine eggs, vanilla and 2 tbsp 
buttermilk and set aside.. In a mixing bowl whisk together the flour, white 
sugar, baking powder, baking soda, salt and ginger (on low speed, using a hand 
held or stand up mixer). Add soft butter and buttermilk and mix together until 
just combined. Turn speed up to medium and mix for an additional 1 1/2 minutes. 
Turn mixer back to low and slowly add eggs scraping down sides as needed. Pour 
mixture over fruit in cake pan and spread evenly. Sprinkle pecans on top of 
cake. Bake at 350 degrees until a toothpick inserted comes out clean, 30-45 
minutes. Insert knife around edge to loosen sides
 from pan and invert onto serving platter but do not remove pan. Allow to sit 
with pan on top for 20 minutes. Then gently remove pan and paper.

Notes: Can also be done with plums, however omit ginger and add 1/4 tsp cloves, 
1/4 tsp allspice and 1/2 tsp cinnamon to brown sugar and butter mixture..

1-1/2 cups  vanilla ice cream, softened 
2 pkg. (4-serving size each) JELL-O Chocolate Flavor Instant Pudding  Pie 
Filling 
1   HONEY MAID Graham Pie Crust (6 oz.)

POUR milk into large bowl.. Add ice cream and dry pudding mixes. Beat with wire 
whisk or electric mixer on low speed for 2 minutes or until well blended. Let 
stand 5 minutes or until mixture is very thick and will mound. 
SPOON into crust. 
REFRIGERATE 4 hours or overnight until set. Store leftover pie in refrigerator.
 
How To Soften Ice Cream
To quickly soften rock-hard ice cream, microwave measured amount of ice cream 
on MEDIUM-LOW (30%) for 15 seconds or until slightly softened.

You can customize the flavor of this pie by preparing using your favorite 
flavors of ice cream and JELL-O Instant Pudding.

Ingredients:

6 boneless pork chops, 3/4 thick*
3 tbsp. cornstarch 
1 can (14 oz.) Swanson® Chicken Broth (1 3/4 cups) OR Natural Goodness™ Chicken 
Broth (1 3/4 cups)
2 tbsp. Dijon mustard 
6 cups hot cooked rice 

Directions:

SEASON chops with garlic powder and pepper.
SPRAY nonstick skillet with vegetable cooking spray. Heat 1 min. Add chops and 
cook until browned.
MIX cornstarch, broth and mustard. Add to skillet. Cook and stir until mixture 
boils and thickens. Cover.
COOK over low heat 10 min. or until done. Serve with rice.

Asparagus Chicken Stir-Fry
1/2 pound fresh asparagus
3 tablespoons hoisin sauce
4 tablespoons peanut or vegetable oil, divided
1 tablespoon brown sugar
2 skinless, boneless chicken breast halves, cut into thin 1-inch strips
Hot cooked rice
1. Cut asparagus into 1-inch pieces, discarding tough bottoms of spears.
2. In a small bowl, mix together the hoisin sauce and brown sugar and 
set aside.
3. Heat wok or large skillet over medium high heat. When hot, add 2 
tablespoons of oil. Stir fry asparagus for approximately 2 minutes. Remove from 
the wok and keep warm.
4. Heat wok to high heat. Add remaining 2 tablespoons of oil and the 
chicken pieces and stir fry until the chicken is no longer pink. Add the 
reserved asparagus and hoisin/sugar sauce and stir fry all together until 
pieces are well-coated with sauce.
5. Serve over the hot rice.
Makes 2 servings.

4 pork chops, 3/4-inch thick
2 teaspoons vegetable oil
1/4 cup strawberry preserves
1 tablespoon mustard
1/4 cup cider vinegar
1. Heat oil in large skillet over medium-high heat. Add pork chops, 
cook and turn until brown on both sides. Reduce heat to low. 
2. In small bowl, stir together strawberry preserves, mustard and 
vinegar. Pour sauce over pork chops. Cover pan. Cook pork chops for 10 minutes, 
or until the sauce has thickened. 
3. To serve, spoon glaze over each chop.

Holiday fruit is blended with cream cheese and coconut, and frozen for dessert.
Ingredients
1  (11-ounce) can mandarin oranges in light syrup 
1  (8 1/4-ounce) can crushed pineapple in heavy syrup 
1  (8-ounce) package cream cheese, softened 
1  (14-ounce) can sweetened condensed milk 
2 1/2  cups frozen whipped topping, thawed and divided 
3/4  cup flaked coconut, toasted 
1  (9-ounce) graham cracker crust (extra serving size) 
  Garnishes: maraschino cherries, pecan halves, additional toasted flaked 
coconut 

PreparationDrain oranges and pineapple, reserving 2 tablespoons pineapple 
syrup. Gently press oranges and pineapple between paper towels to remove excess 
moisture. Beat cream cheese at medium-high speed of an electric mixer until 
creamy. Gradually add reserved pineapple syrup and milk, beating until smooth. 
Fold in 1 1/2 cups whipped topping. Gently fold in orange-pineapple mixture and 
3/4 cup coconut. Spoon filling into crust. Cover; freeze until firm. Let pie 
stand at room temperature 20 minutes before serving. Dollop remaining 1 cup 
whipped topping on top of pie. Garnish, if desired.

Yogurt Pralines
 
3 cups of sugar
1/2 teaspoon of baking soda
1 cup of plain yogurt
2 tablespoons of light corn syrup
2 tablespoons of butter
1 teaspoon of vanilla extract
2 cups of pecans

Combine the sugar, baking soda, yogurt and corn syrup in lightly oiled, 4 quart 
saucepan. Cook over low heat, stirring constantly, until the sugar is 
dissolved. Wipe down sugar crystals above liquid line, using a clean pastry 
brush dipped in cold water. Bring to a boil. Insert candy thermometer, cook 
until thermometer registers 234º. Remove from heat. Stir in butter, vanilla and 
pecans. Beat with wooden spoon just until mixture thickens and begins to look 
cloudy. Drop mixture by teaspoons onto well oiled baking sheet. Let cool 
completely. Store in airtight container in cool place. Makes 1 dozen.

1/2  teaspoon MAGGI Instant Chicken Flavor Bouillon
1  lb. boneless, skinless chicken breast halves or 1 1/2 lb. chicken drumsticks
   Chopped cilantro or Japanese seaweed
DIRECTIONS

CUT chicken breasts into 1/2-inch-wide strips.

COMBINE oil, sugar, ginger juice, cornstarch and pepper in large bowl; mix 
well. Blend in seasoning sauce, oyster sauce and bouillon. Add chicken to 
sauce; stir to coat thoroughly. Cover; refrigerate for 1 hour.

PREHEAT grill.

GRILL chicken over moderate heat, turning and basting with marinade until done. 
Discard remaining marinade.

SERVE with rice, if desired. Sprinkle with cilantro.

*To create ginger juice, grate fresh ginger onto cheesecloth. Tighten and 
twist, squeezing the juice into a measuring spoon.

INGREDIENTS
4 skinless, boneless chicken breast halves - pounded to 1/4 inch
thickness
1 cup prepared basil pesto
4 thick slices mozzarella cheese

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Spread 2 to 3 tablespoons of the pesto sauce onto each flattened
chicken breast. Place one slice of cheese over the pesto. Roll up
tightly, and secure with toothpicks. Place in a lightly greased
baking dish.

1 roll (16.5 oz) Pillsbury® Create 'n Bake® refrigerated sugar cookies 
1/4 roll (16.5 oz size) Pillsbury® Create 'n Bake® refrigerated gingerbread 
cookies 
 Round or flower-shaped candy sprinkles 
40 miniature candy-coated chocolate baking bits 
 Drinking straw 
 Red sugar 
 Red and green decorating icing or gel (or other colors as desired) 
 
1 .   Heat oven to 350ºF. Remove half of sugar cookie dough from wrapper; 
refrigerate remaining dough until needed. Cut half of dough into 15 (about 1/4 
inch) slices. Leave 10 slices whole to resemble carolers' heads. On ungreased 
large cookie sheet, place 2 inches apart. 
2 .   Cut remaining 5 slices in half crosswise to make collars and hats (see 
photo). For collars, cut half slice into 2 pieces and attach under head. For 
hats, shape half slice of dough with fingers into hat shape; do not attach at 
this point. 
3 .   Place small portions of gingerbread dough into garlic press. Press to 
make long, short and medium hair; attach to heads gently. Add hats to top of 
heads as desired. 
4 ..   Place candy sprinkles (blue or green) on face for eyes. With drinking 
straw, poke hole for mouth. If desired, shape small pieces of gingerbread dough 
for earmuffs. Sprinkle red sugar on cheeks to resemble blush. Repeat with 
remaining half of dough. 
5 .   Bake 11 to 13 minutes or until light golden brown. Cool 1 minute; 
carefully remove from cookie sheet to cooling rack. If necessary, re-poke holes 
for mouths. Cool completely, about 15 minutes. Decorate hats, collars and faces 
with decorating icing.

Pureed strawberries make a distinctive base for a colorful dressing with a 
creamy consistency. It is also a nice way to dress a salad of arugula, goat

Make Ahead Tip: Cover and refrigerate for up to 2 days.
   
RECIPE INGREDIENTS
 
1 cup strawberries (6 large berries), rinsed, hulled and sliced 
1 tablespoon balsamic vinegar 
3/4 teaspoon freshly ground pepper 
1/2 teaspoon sugar 
1/4 teaspoon salt 
2 tablespoons almond oil or canola oil 
   
RECIPE METHOD
 
Place strawberries, vinegar, pepper, sugar and salt in a blender or food 
processor; process until pureed, stopping once or twice to scrape down the 
sides. Add oil and process until smooth.

Description Ever get tired of Spaghetti in its normal way? Try this. I have 
made this with other types of noodles and it has turned out well.
 
Ingredients
 1 8 oz. pkg. Spaghetti
3/4 tsp. Garlic Salt
1 medium Onion, chopped
1 Tbsp. Butter
1 can Cream of Chicken Soup
1 C.. Cheddar Cheese, grated
1 1/2 C. cooked Chicken, diced
Salt to Taste
Grated Cheese
Cracker Crumbs
1 small jar Pimentos

 
Methods/steps
Cook spaghetti in boiling salted water with garlic salt, rinse with hot water. 
Saute onion in butter until brown. Mix all ingredients except cheese and 
crumbs. Sprinkle with cheese and cracker crumbs. Bake for 25 minutes at 350 
degrees.

Warm Curried Egg Salad
This salad combines hard cooked eggs, celery, parsley, green onion, bell 
pepper, and almonds, with a dressing of mayonnaise, yogurt, and curry paste.

Ingredients:
* 1 dozen hard cooked eggs (Perhaps leftover from an Easter egg hunt?) 
* 2 cups diced celery 
* 1 cup chopped or slivered almonds 
* 1 cup chopped flatleaf parsley 
* 1 cup chopped green onions 
* 1 red bell pepper, diced 
* 1 cup mayonnaise 
* 1 cup lowfat plain yogurt 
* 2 Tbs. curry paste (or as desired) 
* Toast points (dark bread or sliced baguette) 
* 
Method
Chop eggs and mix with all other ingredients, except the toast points or bread. 
Place in microwave safe dish and cover. Cook on high for 2 minutes to heat; 
serve warm with bread.

Notes: To make this especially pretty, serve it in a festive dish with the 
bread lined up around the edges. Sprinkle the top with paprika (or if you're 
really adventurous, use cayenne!) Also, sprinkle a little extra chopped parsley 
or green onion on the top.

Ingredients:

1 tbsp. vegetable oil
1 1/2 lb. beef flank steak
2 medium onions, sliced
2 cloves garlic, minced
1 tsp. Italian seasoning, crushed
2 cups Prego® Traditional Pasta Sauce

Directions:

HEAT oil in skillet. Add steak and cook about 8 min. or until browned.
Remove steak.

ADD onions, garlic and Italian seasoning and cook until tender. Return
steak to pan. Add pasta sauce. Cook over low heat until desired
doneness (3 min. for medium-rare) .

SLICE steak into thin diagonal slices. Serve with sauce.

Ingredients
1  (16-ounce) package dried red kidney beans 
1  pound spicy smoked sausage 
1  tablespoon vegetable oil 
3  celery ribs, chopped 
1  medium-size green bell pepper, chopped 
1  large onion, chopped 
3  garlic cloves, minced 
1  (14 1/2-ounce) can crushed tomatoes 
1  (32-ounce) container chicken broth 
3 1/2  cups water 
2  bay leaves 
1  teaspoon sugar 
1/2  teaspoon salt 
1/2  teaspoon pepper 
  Hot cooked rice 
  Garnish: chopped green onions 

PreparationRinse and sort beans according to package directions. Place beans in 
a Dutch oven; cover with water 2 inches above beans, and let soak 8 hours. 
Drain beans, and rinse thoroughly; drain and set aside. Cut smoked sausage into 
1/4-inch-thick slices. 
Sauté sausage in hot oil in Dutch oven over medium heat 5 to 7 minutes or until 
sausage is golden brown. Remove sausage with a slotted spoon, and drain on 
paper towels, reserving drippings in Dutch oven. (Store sausage in refrigerator 
until you're ready to stir into bean mixture.) Add celery and next 3 
ingredients to hot drippings, and sauté 5 minutes or until vegetables are 
tender. Add tomatoes, and simmer, stirring occasionally, 7 minutes. Stir in 
beans, broth, and next 5 ingredients; increase heat to medium-high, and bring 
to a boil. Boil 10 minutes; reduce heat, and simmer, uncovered, stirring 
occasionally, 1 1/2 to 2 hours or until beans are tender. Stir in sausage, and 
simmer 30 more minutes. Serve over hot cooked rice. Garnish, if desired. Note: 
For quick soaking, place kidney beans in a Dutch oven; cover with water 2 
inches above beans, and bring to a boil. Boil 1 minute; cover, remove from 
heat, and let stand 1 hour. Drain as directed, and
 proceed with recipe. For testing purposes only, we used Conecuh Original 
Smoked Sausage, which is spicy.

* 1/4 teaspoon minced fresh parsley 
DIRECTIONS
1. In a medium bowl, mix the tomato paste, tomato sauce, oregano, 
sugar, garlic, salt and parsley.

Stir in cranberry juice cocktail and enough ice to chill. Just before serving, 
stir in ginger ale.

Make Ahead Tip: These macaroons are best eaten fresh, but will keep for up to 5 
days at room temperature.   
RECIPE INGREDIENTS
 
For Outrageous Macaroons:
 
1 14-ounce can nonfat sweetened condensed milk 
1 teaspoon almond extract 
2 cups sliced almonds 
2 cups coconut flakes, preferably unsweetened 
1/2 cup dried cranberries 
1/2 cup chopped shelled pistachios 
2 large egg whites 
1/4 teaspoon salt 

For Garnish (optional):
 
3/4 cup bittersweet or semisweet chocolate chips 
1/4 cup dried cranberries 
1/4 cup chopped shelled pistachios 
   
RECIPE METHOD
 
Position racks in upper and lower thirds of oven; preheat to 325°F. Line 2 
large baking sheets with parchment paper or silicone baking mats.
 
Whisk condensed milk and almond extract in a large bowl until combined. Pulse 
almonds in a food processor (about 10 quick pulses) until broken unto small 
pieces. Stir the almonds, coconut, 1/2 cup cranberries and 1/2 cup pistachios 
into the condensed milk mixture.
 
Beat egg whites and salt in a medium bowl with an electric mixer on medium-high 
speed until soft peaks form, about 1 minute. Fold 1/2 cup of the egg whites 
into the coconut mixture. Add the remaining egg whites, gently folding into the 
mixture until just combined. Drop 1 teaspoon of dough onto a prepared baking 
sheet and top with another teaspoon of dough, making a double-tall macaroon. 
Repeat with the remaining batter, spacing the macaroons 1 inch apart.
 
Bake the macaroons, switching the pans back to front and top to bottom halfway 
through, until the coconut is lightly golden, 18 to 22 minutes (sweetened 
coconut will brown faster than unsweetened) . Let cool on the pans on a wire 
rack until cool to the touch, 30 minutes.
 
Optional garnish: Place 1/2 cup chocolate chips in a microwave-safe bowl and 
melt in the microwave on Medium in 30-second bursts, stirring after each burst 
to ensure even melting, until completely melted. (Alternatively, melt the 
chocolate in a double boiler over hot water, stirring constantly). Stir the 
remaining 1/4 cup chips into the melted chocolate until smooth. Drizzle or 
spoon the melted chocolate over the top of each cooled macaroon; sprinkle with 
cranberries and pistachios. Let the chocolate dry completely before storing or 
packing.

Ingredients
1 1/3-1 1/2 c sliced cucumber with peel
1 c chopped ripe tomatoes
1/2 c Kraft Light House Italian Salad Dressing
2 Tbsp Kraft Shredded Parmesan, Romano and Asiago Cheeses 


Directions
Wash cucumber and cut in half. Cut off 3 strips of skin. Cut in half and then 
cut in half again. Slice and put into bowl. Wash and chop tomatoes of your 
preference (I use roma). Add salad dress and cheese. Mix well and refrigerate.

INGREDIENTS
* 4 cups all-purpose flour 
* 2/3 cup sugar 
* 1 teaspoon baking powder 
* 1 teaspoon salt 
* 1 cup butter, cubed 
* 1 egg 
*   
* 3/4 pound dried figs 
* 1/2 cup chopped almonds, toasted 
* 1/3 cup apricot preserves 
* 1/4 cup golden raisins 
* 1/4 cup chopped candied orange peel 
* 1/3 cup semisweet chocolate chips 
* 1/4 cup dark rum 
* 1/2 teaspoon ground cinnamon 
*   
* 1 egg, beaten 
* 2 tablespoons milk 
*   
* 1/2 cup confectioners' sugar for dusting
DIRECTIONS
1. In a medium bowl, stir together the flour, sugar, baking powder, and 
salt. Cut in butter using a pastry blender, or pinching between your fingers. 
Add egg, and mix until a dough forms. It may take a couple of minutes of 
mixing. When the dough starts to hold together, turn it out onto a floured 
surface and knead briefly. Shape dough into a long roll, wrap, and set aside. 
2. Place the figs, almonds, apricot preserves, raisins, orange peel, 
chocolate, rum, and cinnamon into a food processor or blender. Process until 
finely chopped. If the fruit is hard, it may be soaked in boiling water to 
soften for 15 minutes before processing. 
3. Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, 
mix together the remaining egg and milk to make an egg wash. 
4. Divide dough into 12 pieces. On a lightly floured surface, roll each 
piece out into a 3x12 inch rectangle. Brush the strips of dough lightly with 
egg wash. Place a strip of the fruit mixture lengthwise down the center of each 
piece of dough, and fold the edges over. Roll gently to seal. This will make 
the filled tube of dough a little bit longer. Cut each tube into 3 inch pieces. 
Make a one inch long slit with a knife down the center of each cut end. Spread 
the ends out to form an X shape. Place cookies 2 inches apart onto lightly 
greased cookie sheets. 
5. Bake for 15 to 20 minutes in the preheated oven, or until the edges 
are golden. Allow cookies to cool on the tray for at least 5 minutes, so they 
will not be too delicate, before removing to wire racks to cool completely. 
Dust with confectioners' sugar when cool.

Cookies 
1     roll (16.5 oz) Pillsbury® Create 'n Bake® refrigerated sugar cookies 
1/2 cup all-purpose flour 
1/2 teaspoon almond extract 
1 tablespoon granulated sugar 
 
Filling 
2 cups powdered sugar 
1/4 cup butter or margarine, softened 
4 teaspoons milk 
1/4 teaspoon almond extract 
1 drop red food color 


DIRECTIONS 
 Heat oven to 350°F. In large bowl, break up cookie dough. Stir or knead in 
flour and almond extract until well blended.
  
 Shape dough into 180 (1/2-inch) balls. Place balls 1 inch apart on ungreased 
cookie sheets. Press bottom of glass dipped into granulated sugar on each ball 
until 1/4 inch thick; prick top of each with a fork.
  
 Bake 6 to 8 minutes until set but not brown. Cool 1 minute; remove from cookie 
sheets to cooling rack. Cool completely, about 15 minutes.
  
 Meanwhile, in small bowl, beat filling ingredients with electric mixer on low 
speed until smooth and creamy. Spread about 1 teaspoon filling on bottoms of 
half of the cookies. Top each with another cookie, bottom side down; press 
gently. Store in refrigerator.

Delicious Pecan Sandies
 
1 cup of granulated sugar
1 cup of confectioners sugar (may be sifted if desired)
1 cup of shortening
1 cup of butter
1 tbsp vanilla
2 eggs
4 cups of all purpose flour (may be sifted if desired)
1 tsp of cream of tartar
1 tsp of salt
1 tsp baking soda
2 cups of chopped pecans 
1/2 c of granulated sugar for decoration

Preheat oven to 375 degrees. Blend together flour, soda, tartar and salt in a 
large bowl then set aside.

Cream shortening, butter, confectioners sugar, and granulated until light and 
fluffy (I like to use a mixer for this) then add the eggs one at a time. Then 
add vanilla. Gradually blend dry mixture with the butter, sugars, egg and 
vanilla mixture. Stir
in chopped pecans. Refrigerate dough for about 2hrs. Once dough has chilled, 
roll dough into balls and then roll the balls in the granulated sugar. Bake on 
cookie sheet for approx 12 minutes or until the edges are browned gently. Cool 
on cooling rack. Makes about 5 -7 dozen depending on the size of the cookies.

1/2 cup (1 stick) butter, melted 
1 (14-ounce) can sweetened condensed milk
  In a decorative jar, layer pecans, butterscotch morsels, coconut, and 
chocolate morsels. Spoon graham cracker crumbs into a small plastic or 
cellophane bag and place on top of the layers. Preheat oven to 350 degrees F. 
Remove graham cracker crumbs from jar. Combine graham cracker crumbs and melted 
butter. Press into bottom of a 9 by 13-inch baking dish. Sprinkle remaining 
ingredients of mix over crumb mixture. Pour sweetened condensed milk over the 
layers. Bake for 30 minutes. Allow to cool and cut into bars.

DIRECTIONS

PREHEAT oven to 350° F. Grease 15 x 10-inch jelly-roll pan.

COMBINE flour, baking powder, cinnamon and salt in medium bowl. Beat sugar, 
butter and vanilla extract in large mixer bowl. Add eggs one at a time, beating 
well after each addition. Beat in pumpkin. Gradually beat in flour mixture. 
Spread into prepared pan.

BAKE for 20 to 25 minutes or until wooden pick inserted in center comes out 
clean. Cool completely in pan; spread with Maple Icing. Cut into bars.

FOR MAPLE ICING:
BEAT 6 ounces softened cream cheese, 2 tablespoons softened butter or margarine 
and 2 cups sifted powdered sugar in small mixer bowl until smooth. Add 1 to 2 
teaspoons maple flavoring.

5. Flip cakes over and spread about 1 1/2 tbsp. frosting on half of them. Top

Microwave Crab Casserole for One

butter for custard cup
1 small egg
¼ tsp. water
2 tbsp. butter
½ tbsp. flour
¼ cup cream or half and half
2 tsp. mayonnaise
¼ tsp. prepared mustard
1/8 tsp. salt
1/16 tsp. pepper
4 oz. (1/2 cup) cooked crab meat*
¾ tsp. sherry

Butter custard cup. Break egg into cup. Puncture egg yolk with fork, then 
sprinkle with water. Cover cup with a glass lid (from another utensil) or 
plastic wrap. Cook 25 seconds at 100% power. Turn cup halfway around. Cook 20 
seconds at 100% power until egg is hard cooked. (Autrotating oven: Eliminate 
turn.) Turn out onto small plate, remove and mash yolk on one side of plate, 
and chop egg white on the other side. Set aside. Place 2 tbsp butter in a 
1-quart bowl and cook 45 seconds at 100% power to melt. Add flour, cream, 
mayonnaise, mustard, salt, pepper, and mashed egg yolk. Mix well with wire 
whisk. Add chopped egg white. Add crab meat and mix with rubber spatula. Add 
sherry, mix well, then pour into petite pan or grab it bowl.

1 tbsp. butter
2 tbsp. bread crumbs

Place 1 tbsp butter in custard cup and cook 30 seconds at 100% power to melt. 
Add bread crumbs and mix with small fork. Sprinkle bread crumb mixture on top 
of crab mixture in petite pan. Cook 2:00 minutes at 100% power. Turn cup 
halfway around. Cook 2:00 minutes at 100% power. (Autrotating oven: Eliminate 
turn.) Let stand one minute before serving.

* A 6 oz. defrosted package of frozen crab meat yields 4 oz. (Defrost for 5:00 
minutes.)
* 3 or 4 cooked whole crabs yields 4 oz. of crab meat. 

NOTES: Cooking times are for a 700-watt oven. Be sure to use fresh or frozen 
crab when creating the recipe below. It really makes a difference in the taste! 
Another reason I am including this recipe is because it solves the mystery of 
hard cooking an egg in the microwave.. Yes, you can do it, but you must remove 
it from the shell (unless you want an exploding egg in your microwave)! Just 
follow the instructions in the first part of the recipe.

1 pound of stew beef cubes
 4-6 carrots, cut up
 10-12 pearl onions
 4-6 potatoes, cut in cubes
 2 cloves garlic
 1/2 cup of red wine
 1 teaspoon of Worcestershire sauce
 2 teaspoons of soy sauce

Brown the stew beef cubes (you can coat in flour). Once they have browned, 
place in the crock pot. Deglaze pan with 1/2 cup red wine and pour into crock 
pot with beef cubes. Add cut up carrots, onions, garlic and potatoes along with 
Worcestershire sauce and soy sauce. Cook on HIGH for 3-4 hours in crock 
pot. Add water as necessary (salt and pepper to taste). Serves 6-8.

1  cup packed dark brown sugar 
2  large eggs 
1/2  teaspoon baking soda

1/2  cup hot water 
1  teaspoon instant espresso granules or 2 teaspoons instant coffee granules 
1  tablespoon powdered sugar 

PreparationPreheat oven to 350°. Coat an 8-inch square pan with cooking spray, 
and dust the pan with 2 teaspoons flour. Place butter in a large microwave-safe 
bowl. Cover and microwave at high 1 minute or until butter melts. Add cocoa, 
stirring well with a whisk. Add brown sugar, stirring well until mixture pulls 
away from sides of bowl. Add eggs, 1 at a time, stirring with a whisk until 
smooth. Stir in baking soda, vanilla, and salt. Lightly spoon 3/4 cup flour 
into dry measuring cups; level with a knife. Gradually add flour to bowl, 
stirring just until blended (do not overstir). Combine hot water and espresso. 
Add to flour mixture, stirring just until blended. Pour batter into prepared 
pan. Bake at 350° for 25 minutes or until a wooden pick inserted in center 
comes out clean. Cool 10 minutes on a wire rack.. Sprinkle with powdered sugar. 
Cut into squares; serve warm or at room temperature. 
Yield
9 servings (serving size: 1 cake square)

6 boneless skinless chicken breasts
salt and pepper to taste
garlic powder to taste
2 cans condensed cream of chicken soup
1 can condensed cheddar cheese soup

Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted 
soup and pour over chicken in crock pot. Cook on low 6-8 hours. Serve over rice 
or noodles.

SERVINGS  SCALING 
Original recipe yield: 1 - 9x9 inch pan 

INGREDIENTS
* 2 cups all-purpose flour 
* 2 eggs 
* 3/4 cup white sugar 
* 1/2 teaspoon salt 
* 1 1/2 teaspoons baking powder 
* 1/3 cup vegetable oil 
* 6 fluid ounces milk 
* 3 tablespoons strawberry jam 
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 
9x9 inch pan. 
2. In a medium bowl, mix the flour, baking powder and salt. Set aside. 
3. In a large bowl, combine oil, eggs, sugar and milk. Beat until 
blended. Add flour mixture and beat until smooth. Fold in jam. Pour batter into 
9x9 inch pan. 
4. Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes, or until 
toothpick inserted into center of cake comes out clean.

1 jar of salad peppers (temperature dependent on preference [hot or medium

Cook on low overnight, break up and serve on hoagie rolls.

Place potatoes in bottom of slow cooker. Beat cream cheese, soup and salad

RICE PUDDING 
 
In 4 quart saucepan, place:

½ cup short grain rice, washed (do not use Uncle Ben's)
3 cups milk
2 cups water
1 stick butter (1/4 lb.)
1 cinnamon stick

Most of the peel of one lemon (use potato peeler, remove only the yellow skin, 
leave as large a piece as possible for easy removal). Bring ingredients to a 
boil, stirring constantly. Reduce heat to low, and cook. about 40 minutes, 
stirring often, until it is quite thick.. 

ADD:
1 can condensed milk
1 can water 

Stirring constantly, bring it back to a boil on medium heat and cook about 15 
minutes more on low heat. Remove lemon peel and cinnamon stick. Pour into 
individual dessert cups and sprinkle cinnamon on top. DELICIOUS!

BREAKFAST CASSEROLES:

CHILI RELLENO CASSEROLE
1 lb cheddar cheese grated 1 small can evaporated milk 
1 lb monterey jack cheese grated 4 eggs, separated
4 cans diced, green chilies 1 TB flour
1 tsp black pepper 

Put cheese in a large bowl. Add chilies and mix well. Press cheese and chillies 
into greased 9X13 casserole dish. Beat egg yolks, milk, flour and pepper 
together in medium bowl. Set aside. Whip egg whites, and fold in egg mixture. 
Pour over mixture in casserole dish, stab with fork so egg mixture will seep 
through. Bake at 325 for 25-30 minutes or until golden brown.

1/2 cup onion,chopped
4 cups potatoes,peeled and chopped(or small potatoes,left whole)

Fry bacon, sausagelinks, and chopped onions in a skillet. Drain the grease. Put 
the bacon, sausagelinks, onion, potatoes and water into a crock pot. cook on 
low for 6-8 hours.

INGREDIENTS
* 2 cups chopped yellow squash 
* 3 cups crumbled prepared cornbread 
* 1/2 cup chopped onion 
* 1/2 cup chopped celery 
* 1 tablespoon white sugar 
* 1 egg 
* 1/2 (26 ounce) can condensed cream of chicken soup 
* 1/2 cup margarine, softened 
* 1 cup shredded Cheddar cheese, divided 
* 1 teaspoon dried sage 
* 1/2 teaspoon salt 
* 1 pinch ground black pepper 
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease and 
flour a medium baking dish. 
2. Place squash in a pot with enough water to cover. Bring to a boil 
and cook 5 minutes, or until tender; drain. 
3. In a bowl, mix cooked squash, cornbread, onion, celery, sugar, egg, 
soup, margarine, and 1/2 cup cheese. Season with sage, salt, and pepper. 
Transfer to the prepared baking dish. 
4. Bake 45 minutes in the preheated oven. Top with remaining cheese, 
and continue cooking 15 minutes, or until cheese is melted and bubbly.

Chicken layered with a spicy sauce and cheese--popular in Texas and now made 
more healthful for Tex-Mex lovers everywhere.   
RECIPE INGREDIENTS
 
1 1/2 cups reduced-sodium chicken broth 
1 cup skim milk 
1/2 cup all-purpose flour 
1/2 cup nonfat plain yogurt 
1 14-ounce can diced tomatoes, drained 
1 4-ounce can chopped green chilies, drained 
1/4 cup chopped fresh cilantro or parsley 
1 tablespoon chili powder 
1 teaspoon dried oregano 
1/2 teaspoon ground cumin 
Salt  freshly ground pepper to taste 
1 1/2 teaspoons canola oil 
1 large onion, chopped 
1 red or green bell pepper, seeded and diced 
2 cloves garlic, minced 
2 cups diced skinless cooked chicken 
10 corn tortillas, cut in quarters 
1/2 cup shredded reduced-fat Cheddar cheese 
   
RECIPE METHOD
 
Preheat oven to 375°F.
 
Bring chicken broth to a simmer in a medium saucepan. Whisk together milk and 
flour in a small bowl to make a smooth paste. Add to the broth and cook over 
medium, whisking constantly, until thickened and smooth, about 3 minutes. 
Remove from the heat and stir in yogurt, tomatoes, chilies, cilantro (or 
parsley), chili powder, oregano and cumin. Season to taste with salt and 
pepper. Set aside.
 
Heat oil in a large nonstick skillet over medium-high heat. Add onion, bell 
pepper and garlic; cook, stirring occasionally, until tender-crisp, about 3 
minutes.
 
Line the bottom of a shallow 3-qt. baking dish with half the tortillas. Top 
with half of the chicken and half of the onion mixture. Spoon half of the sauce 
evenly over the top. Repeat layers with remaining tortillas, chicken, onion 
mixture and sauce. Sprinkle with cheese and bake until bubbly, 25 to 30 minutes.

1 tube crescent rolls
2 cups shredded cheddar
7 large eggs 
1 lb cooked sausage or ground turkey, drain 

In a 9X13 casserole dish, lightly spray with cooking spray. Unroll tube of 
rolls and pinch seams together. Place meat over rolls, and sprinkle lightly 
with cheese. Beat eggs and pour over meat and cheese. Cook at 350 for 35-40 
minutes or until set. Add remaining cheese, let stand for 10 minutes and serve.

45 sugar plums 

1/4  lb dried and pitted dates  
1/4  lb dried figs  
1/4  lb golden seedless raisins  
1/4  lb black currants  
1/4  lb slivered almonds  
1/4  lb chopped pecans  
1/2  cup crystallized ginger  
1 1/2  tablespoons brandy  
1/2  cup icing sugar 

1. In a food processor, whirl dates, figs, raisins, and currants until 
coarsely chopped. 
2. Turn into a large mixing bowl. 
3. In a food processor, whirl almonds, pecans and ginger, using an 
on-and-off motion, until coarsely chopped. 
4. Add to chopped fruit along with Brandy and mix well to blend. 
5. Place icing sugar in a shallow dish. 
6. Form fruit mixture into tight 1 inch balls and roll in icing sugar. 
7. Place sugar plums in a covered container using wax paper to separate 
each layer and keep refrigerated. 
8. They will keep for several weeks when refrigerated. 
9. Remove from refrigerator 10 minutes before using.

Cookie Base and Topping 
1   pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix 
1/4 cup cold butter or margarine 
4 oz (half of 8-oz package) cream cheese 
1/2 cup sliced almonds 
 
Filling 
2 1/2 packages (8 oz each) cream cheese (20 oz), softened 
1/2 cup sugar 
2 tablespoons Gold Medal® all-purpose flour 
1 teaspoon almond extract 
2 eggs 
1 can (21 oz) cherry pie filling 
  
Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking 
spray.. Place cookie mix in large bowl. Cut in butter and 4 oz cream cheese, 
using pastry blender or fork, until mixture is crumbly. Reserve 1 1/2 cups 
mixture for topping. Press remaining mixture in bottom of pan. Bake 12 minutes.
  
 Meanwhile, in large bowl, beat 20 oz cream cheese, the sugar, flour, almond 
extract and eggs with electric mixer on medium speed until smooth.
  
 Spread cream cheese mixture evenly over partially baked cookie base. Spoon pie 
filling evenly over cream cheese mixture. Sprinkle with reserved topping and 
almonds.
  
 Bake 40 to 45 minutes or until light golden brown. Cool 30 minutes. 
Refrigerate about 2 hours or until chilled. For bars, cut into 6 rows by 4 
rows. Store covered in refrigerator.
  
High Altitude (3500-6500 ft): In step 1, bake cookie base 15 minutes. In step 
4, bake 45 to 50 minutes.

4 boneless chicken breast halves 
1 can Campbell's® Condensed Cream of Chicken with Herbs Soup 
1/2 cup milk 
Broth Simmered Rice 

Directions:

HEAT oil in skillet. Add chicken and cook until browned.
ADD soup and milk. Heat to a boil. Cover and cook over low heat 5 min. or until 
done. Serve with Broth Simmered Rice.
TIP: Broth Simmered Rice: Heat 1 can Campbell's® Condensed Chicken Broth and 1 
cup water to a boil. Stir in 2 cups uncooked Minute® White Rice. Cover and 
remove from heat. Let stand 5 min. Fluff with fork.

46 ounces tomato-vegetable juice cocktail 
1 diced tomatoes 
1(15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can black beans, rinsed and drained
1 whole kernel corn
2 (1 ounce) packages taco seasoning mix

In a large stock pot brown ground beef. Drain grease and add tomato
vegetable juice, tomatoes, kidney beans, black beans, corn and taco
seasoning. Heat through and serve.

2 tubes refrigerated Biscuits
1 (15oz.) can Pizza Sauce
Green Pepper
Mushrooms
2 cups Cheddar Cheese
1-2 cups Mozzarella Cheese

SIMMER hamburger  onion. In large bowl, cut biscuits into quarters. 
Add pizza sauce, green pepper  mushrooms. Drain hamburger  onions; mix with 
other ingredients. Pour into greased 9x13 inch pan. Bake at  400 for 20 
minutes. Top with both cheeses. Bake another 10 minutes, or  until cheese is 
melted.

**Can use other ingredients to fit your taste**
**Add ground turkey in place of hamburger for a healthier substitute**

* 1 pound well trimmed boneless beef top sirloin steak, 3/4 inch thick 
* 1/4 cup NAKANO® Seasoned Rice Vinegar - Original or Red Pepper 
* 2 jalapenos, seeded and minced 
* 1 tablespoon vegetable oil 
* 1 cup red bell pepper, cut into thin strips 
* 1 cup yellow bell pepper, cut into thin strips 
* 1 cup green bell pepper, cut into thin strips 
* 1 small onion, cut into thin wedges 
* 2 cloves garlic, minced 
* 2 teaspoons Mexican or fajita seasoning 
* 8 (8 inch) flour tortillas, warmed 
* Optional toppings: salsa, guacamole, sour cream, chopped cilantro 
DIRECTIONS
1. Cut steak across the grain into thin slices; cut long slices in 
half. Place in resealable plastic bag.. Add rice vinegar and jalapeno. Close 
bag securely, turning to coat. Refrigerate at least 2 hours or overnight. 
2. Heat oil in a large skillet over high heat. Drain steak and discard 
marinade. Cook steak until barely pink in center, about 4 minutes. Transfer to 
a plate; set aside. 
3. Add bell peppers, onion and garlic to skillet; cook over high heat 
until vegetables are almost tender, 3 to 4 minutes. Sprinkle with fajita 
seasoning. Return steak to skillet. Cook 1 minute or until heated through. 
Spoon steak mixture into warm tortillas. Serve with toppings, as desired. 
Variation
Substitute 1 pound boneless skinless chicken thighs or breasts, pork 
tenderloin, or portabello mushrooms for the beef; cut into thin strips.

1 pound uncooked lean ground beef

1 can (15 ounces) tomato sauce, divided

1/2 cup dry bread crumbs

1/4 cup chopped onion

1/4 cup chopped green pepper, optional

1/2 teaspoon Italian seasoning

1/8 teaspoon dried oregano

1/8 teaspoon pepper

1 can (6 ounces) tomato paste

2-1/2 cups cooked rice

1 cup (4 ounces) shredded cheddar cheese, divided

SERVINGS 6-8

DIRECTIONS

In a bowl, combine beef, 3/4 cup tomato sauce, bread crumbs, onion,

In a bowl, combine the tomato paste and remaining tomato sauce. 
Stir in the rice and 3/4 cup cheese; pour into crust. Place pie

until the meat is no longer pink. Uncover; drain. Sprinkle with 
remaining cheese.. bake 10-15 minutes longer or until the cheese is 
melted. Let stand for 5 minutes before cutting. Yield: 6-8 servings.

* 8 slices bacon

* 1 clove garlic, minced 
* 1 tablespoon balsamic vinegar, or to taste

* 1/2 pound ground beef 
* 1/2 cup dry bread crumbs 
* 1 teaspoon Italian seasoning 
* 1 1/2 tablespoons grated Parmesan cheese 
* 1 egg 
* salt and pepper to taste 
* 1 malted wheat hamburger bun, split in half 
* 2 slices tomato 
* 2 slices Swiss cheese 
DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). 
2. Place bacon in a skillet over medium heat, and cook until brown and 
crisp. Remove bacon from skillet and drain on paper towels. 
3. Return the skillet to the heat and increase the temperature to 
medium-high. Add the onion and garlic, and stir fry until the onion is soft and 
the garlic begins to brown. Add the balsamic vinegar, and cook while stirring 
for one minute. Add the chopped mushrooms, and cook for three additional 
minutes. Remove pan from heat and set aside. 
4. Finely chop 4 slices of the bacon (reserving the remaining 4). In a 
medium bowl, combine the chopped bacon, ground beef, bread crumbs, Italian 
seasoning, Parmesan cheese, mushroom mixture and egg. Mix well using hands. 
Season with salt and pepper, and form into two patties. 
5. Open the two halves of the hamburger bun on an ungreased cookie 
sheet. Place one beef patty on each half, and cover each with one slice of 
tomato, 2 slices of the reserved bacon and one slice of Swiss cheese. 
6. Bake for 25 minutes in the preheated oven, or until meat has cooked 
through.

Ingredients
* 4  beef tenderloin steaks, cut 3/4 inch thick (about 1 pound total) 
*   Salt and black pepper 
* 1  tablespoon olive oil 
* 3  cups sliced fresh mushrooms (about 8 ounces) 
* 1/4  cup seasoned beef broth 
* 1/4  cup whipping cream 
Directions
1. Sprinkle steaks lightly with salt and pepper. In a large skillet cook steaks 
in hot oil over medium-high heat for 7 to 9 minutes or to desired doneness (145 
degrees F for medium-rare or 160 degrees F for medium), turning once halfway 
through cooking. Transfer steaks to a serving platter; keep warm. 
2. In the same skillet cook and stir mushrooms over medium-high heat for 4 to 5 
minutes or until tender. Stir in broth and cream. Cook and stir over 
medium-high heat for 2 minutes. Season sauce to taste with additional salt and 
pepper. Spoon mushroom mixture over steaks to serve. 
3. Makes 4 servings

Potato Lasagna 
 
1-1/2 pounds ground beef
1 medium onion, chopped
1 Jar spaghetti sauce
1 tsp each dried basil and oregano
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1/3 cup water
1 can mushroom stems and pieces drained
5 medium potatoes peeled and thinly sliced
2 cups shredded mozzarella cheese
 
In a skillet brown beef with onion, drain. Stir in spaghetti sauce, seasonings, 
water and mushrooms, mix well. Pour half into a 13 x 9 x 2 baking dish. Cover 
with potatoes, pour remaining sauce over potatoes, cover tightly with foil. 
Bake at 350 for one hour and 15 minute, or until potatoes are tender. Sprinkle 
with cheese and return to over for another 10 minutes to melt cheese.

Spaghetti Sauce

1 pound lean ground beef
1 large can diced tomatoes
1 large can tomato paste
1 medium size can regular tomatoe sauce
2 diced onions
2 bay leaves
2 tbs. Italian Seasoning
salt to taste
1 clove fresh crushed garlic

Brown ground beef and onion in frying pan. Drain fat and put in your favorite 
crockpot. Add all remaining ingredients.. Simmer on low-medium heat 8-12 hours.

Combination Pizza Pie

1 can sliced mushrooms, drained, reserve liquid
1 egg, lightly beaten
2 slices bread, crusts removed, and bread crumbled
1/2 t. oregano
1/2 t. salt
1/4 t. black pepper
1 lb. ground beef
8 slices mozzarella cheese, cut diagonally in half
1 (8 oz.) jar pizza sauce
1/2 onion, chopped

Add water to mushroom liquid to equal 1/3 c. Combine mushroom liquid, egg, 
bread, oregano, salt, and pepper; set stand for 4 to 5 min. Add beef and mix 
well. Pat into a 9 pie plate. Place half of the cheese over the  meat. Spoon 
pizza sauce over cheese. Sprinkle on mushrooms and onion. Bake at 350° for 45 
to 60 min. Top with remaining cheese and bake 5 to 10 min. or until cheese 
isgolden. Makes 4 to 8 servings.

Ingredients
1  pound boneless Boston Butt pork roast, cut into 1/2-inch pieces 
2  cups chopped onion 
1  pound ground sirloin 
1/4  cup dry red wine 
1  cup water 
2  tablespoons chopped fresh basil 
1  teaspoon sugar 
1/2  teaspoon salt 
2  (28-ounce) can crushed tomatoes, undrained 
8  cups hot cooked rigatoni (large tube-shaped) pasta 
  Fresh basil (optional) 

PreparationHeat a Dutch oven over medium-high heat; add pork. Cook 3 minutes, 
browning on all sides. Add onion; cook 4 minutes. Add beef; cook 3 minutes or 
until beef loses its pink color, stirring to crumble. Add wine; cook 7 minutes 
or until liquid almost evaporates. Add water and next 4 ingredients (water 
through tomatoes); bring to a boil. Cover, reduce heat, and simmer 30 minutes. 
Uncover and cook 1 hour or until pork is tender. Serve with pasta. Garnish with 
basil, if desired. 
Yield
8 servings (serving size: 1 cup pasta and 1 cup sauce)

Make Ahead Tip: Cover and refrigerate for up to 2 days or freeze for up to 2 
months.   
RECIPE INGREDIENTS
 
1 pound beef round, trimmed and cut into 1/2-inch chunks 
Salt  freshly ground pepper to taste 
1 1/2 tablespoons canola oil, divided 
3 onions, chopped 
1 green bell pepper, seeded and chopped 
1 red bell pepper, seeded and chopped 
6 cloves garlic, minced 
2 jalapeno peppers, seeded and finely chopped 
2 tablespoons ground cumin 
2 tablespoons chili powder 
1 tablespoon paprika 
2 teaspoons dried oregano 
12 ounces dark or light beer 
1 28-ounce can diced tomatoes 
8 sun-dried tomatoes (not packed in oil), snipped into small pieces 
2 bay leaves 
3 19-ounce cans dark kidney beans, rinsed 
1/4 cup chopped fresh cilantro 
2 tablespoons lime juice 

Tip: For a hot, smoky chili, add 1 tablespoon chopped chipotle pepper in adobo 
sauce. 
   
RECIPE METHOD
 
Season beef with salt and pepper. Heat 1 1/2 teaspoons oil in a Dutch oven over 
medium-high heat. Add half the beef and cook, stirring occasionally, until 
browned on all sides, 2 to 5 minutes. Transfer to a plate lined with paper 
towels. Repeat with another 1 1/2 teaspoons oil and remaining beef.
 
Reduce heat to medium and add remaining 1 1/2 teaspoons oil to the pot. Add 
onions and bell peppers; cook, stirring frequently, until onions are golden 
brown, 10 to 20 minutes. Add garlic, jalapenos, cumin, chili powder, paprika 
and oregano. Stir until aromatic, about 2 minutes.
 
Add beer and simmer, scraping up any browned bits, for about 3 minutes. Add 
diced tomatoes, sun-dried tomatoes, bay leaves and reserved beef. Cover and 
simmer, stirring occasionally, until beef is very tender, 1 1/2 to 2 hours.
 
Add beans; cook, covered, stirring occasionally, until chili has thickened, 30 
to 45 minutes. Remove bay leaves. Stir in cilantro and lime juice. Adjust 
seasoning with salt and pepper.

Sweet And Sour Meat Loaf

1 egg
5 T. ketchup, divided
2 T. prepared mustard
1/2 c. dry bread crumbs
2 T. onion soup mix
1/4 t. salt
1/4 t. pepper
1 lb. ground beef
1/4 c. sugar
2 T. brown sugar
2 T. cider vinegar

In a bowl, lightly beat the egg. Add 2 T. of ketchup, mustard, bread crumbs, 
soup mix, salt and pepper. Crumble beef over mixture and mix well. Shape into 
an oval loaf. Place in a shallow 1 qt. microwave safe dish; cover with waxed 
paper. Microwave on high for 11 to 12 min. or
until meat is brown, rotating a half turn once; drain. In a sm. bowl, combine 
the sugars, vinegar and remaining ketchup; drizzle over the meat loaf. Cover 
and microwave on high for 3 to 5 min. or until meat is no longer pink. Let meat 
loaf stand for 10 in. before slicing. Makes 4
servings.

INGREDIENTS
* 1 pound ground beef 
* 2 eggs, beaten 
* 1 cup panko bread crumbs 
* 3/4 cup ketchup, divided 
* 1 tablespoon salt-free seasoning blend 
* 1 tablespoon garlic powder 
* 1 tablespoon onion powder 
* salt to taste 
* ground black pepper to taste 
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 
baking pan. 
2. Place the ground beef, eggs, panko, and 1/2 cup ketchup in a large 
bowl. Mix by hand, and season with salt-free seasoning blend, garlic powder, 
onion powder, salt, and pepper. Form into a loaf shape, and place on the 
prepared baking pan. Drizzle with remaining 1/4 cup ketchup. 
3. Bake 1 hour in the preheated oven, to an internal temperature of 160 
degrees F (70 degrees C).

Ingredients
 1  cup egg substitute*
1/3  cup skim milk
1  teaspoon vanilla extract
1/2  teaspoon ground cinnamon
8  slices day-old bread
2  tablespoons butter or margarine, divided  
 
Directions
 
Combine egg substitute, milk, vanilla and cinnamon in a shallow bowl or pie 
plate; set aside. Cut bread lengthwise into thirds; set aside.

Heat a large nonstick griddle or skillet over medium-high heat. Melt 2 
teaspoons butter. Dip bread sticks in egg mixture to coat; transfer to griddle. 
Cook sticks on each side until golden, adding remaining butter as needed. Dust 
lightly with powdered sugar and serve with pure maple syrup, if desired. 

*4 eggs can be used in place of egg substitute.

Just layer hashbrowns, ham, cheese and eggs in the crockpot for a hot, homemade 
breakfast ready and waiting when you wake up.

INGREDIENTS

* 1 32 oz bag frozen hash brown potatoes 
* 1 lb bacon diced, cooked and drained or 1 lb. cooked ham, cubed 
* 1 medium onion, diced 
* 1 green bell pepper, diced 
* 1 1/2 cups shredded cheddar or Monterey Jack cheese 
* 12 eggs 
* 1 cup milk 
* 1 tsp salt 
* 1 tsp pepper or to taste 
DIRECTIONS
 
Place a layer of frozen potatoes in slow cooker, followed by a layer of bacon, 
onions, green pepper and cheese. Repeat layering process two or three more 
times, ending with a layer of cheese. Beat eggs, milk, salt and pepper 
together. Pour over crock pot mixture, cover, turn on low heat and cook 10-12 
hours.
 
Notes: Instead of using onions and bell pepper, you may use a vegetable of your 
choice.

 3 cups prepared strawberries(buy about 3 pt. fully ripe strawberries)  
3/4 cup water  
1 box SURE.JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin  
1/2 cup SPLENDA® No Calorie Sweetener, Granularor 12 SPLENDA® Packets No 
Calorie Sweetener   


BRING boiling-water canner, half full with water, to simmer. Wash jars and 
screw bands in hot soapy water; rinse with warm water. Pour boiling water over 
flat lids in saucepan off the heat. Let stand in hot water until ready to use. 
Drain jars well before filling.  
STEM and crush strawberries thoroughly, one layer at a time. Measure exactly 3 
cups prepared fruit into 6- or 8-quart saucepot. Stir in water. Gradually add 
pectin, stirring until well blended.  
BRING mixture to full rolling boil (a boil that doesn't stop bubbling when 
stirred) on high heat, stirring constantly. Boil exactly 1 minute, stirring 
constantly. Remove from heat. Stir in SPLENDA® Granular or SPLENDA® Packets. 
Skim off any foam with metal spoon.  
LADLE immediately into prepared jars, filling to within 1/8 inch of tops.. Wipe 
jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars 
on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 
to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle 
boil. Process 10 minutes. Remove jars and place upright on towel to cool 
completely. After jars cool, check seals by pressing middle of lid with finger. 
(If lid springs back, lid is not sealed and refrigeration is necessary.)  
Substitute 
Prepare as directed, substituting 1 thawed can (12 oz.) frozen white grape 
juice or apple juice concentrate for the 3/4 cup water. Makes about 4 (1-cup) 
jars or 64 servings, 1 Tbsp. each. (Nutrition Information Per Serving with 
White Grape Juice: 20 calories, 5g carbohydrate, 4g sugars. Nutrition 
Information Per Serving with Apple Juice: 15 calories, 4g carbohydrate, 3g 
sugars. )

Inversion Method 
To use inversion instead of boiling water bath method, turn jars upside-down 
after bands have been screwed tightly. After 5 minutes, turn upright. Avoid 
improper lid seal by filling jars immediately with hot fruit mixture.

1 pkg. (16 oz) frozen hash browns
2 C. shredded Cheddar cheese
1 can (10 oz) cream of chicken soup
1 C. Miracle Whip
1/2 C. chopped onion
1/8 t. pepper
2 C. crushed corn flakes
2 T. butter melted

Heat oven to 350.  Mix potatoes, cheese, soup, Miracle Whip, onion and pepper.  
Spoon into 9x13 baking dish.  Sprinkle with combined crushed corn flakes and 
butter.  Bake 45-55 minutes or until thoroughly heated.

Chicken in Phyllo Pastry
(Marinate overnight.)
3 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon minced garlic
1 teaspoon oregano
4 skinless, boneless chicken breast halves, cut in 1/2 cubes
1/2 pound phyllo pastry, thawed
1/4 pound unsalted butter, melted

Combine lemon juice, olive oil, garlic, and oregano. Toss with 
chicken and marinate, covered and refrigerated, overnight.

Preheat oven to 400F.

With a scissors, cut stack of phyllo pastry in half lengthwise, 
making two long strips. Working with one sheet of pastry at a time 
and keeping the rest covered, fold a sheet in half crosswise and 
brush with butter.

Place a few pieces of chicken at the short end. Roll up pastry once 
to cover chicken, then fold in both sides and continue rolling to 
make a neat package. Brush with butter. Arrange seam side down on a 
baking sheet. Repeat with remaining packets.

Bake 20-25 minutes, until golden. Serve hot or at room temperature.

Here are the basic ingredients for a smoothie that changes colors, depending on 
your whim. 
 
2 cups ice
1 cup yogurt
Some fruit (such as a couple of bananas, a handful of strawberries, a can of 
fruit packed in its own juice)
I cup liquid (such as milk or juice)
Put all ingredients in a blender and mix on high for 1 minute. Serves 4. Can 
put into 3 ounce paper cups, cover with plastic wrap and insert wooden stick. 
Freeze.it now.

6 Eggs, slightly beaten, or equivalent Egg substitute
1 cup milk
1/4 cup melted butter or margarine
1/4 - 1/2 tsp. salt
Sweet Apple Slices **recipe follows**
Toasted sliced almonds, bananas, fresh or frozen berries, lemon wedges, 
or warm syrup

IN a large bowl, beat flour into eggs. Stir in milk, butter  salt. 
Pour into well-greased, cold 12-inch skillet or 2 (9inch) skillets. 
Bake at 400 for 18-20 minutes until pancake is puffed  golden. Loosen 
pancake all the way around. Serve in skillet. Top with favorite topping.

Sweet Apple Slices
HEAT 1-2 tablespoons butter or margarine in medium skillet. Core  
thinly slice 3 or 4 Cortland or McIntosh apples. Add to skillet  cook 
over medium heat about 7 minutes, or until apples are soft but hold 
their shape. Stir in 2 tablespoons firmly-packed brown sugar; cook 
another minute. Serve with pancake puff..

6 Tbsp. butter or margarine, melted 
3   ripe medium bananas, mashed 
1/2 cup chopped PLANTERS Walnuts 

COMBINE cereal, flour, sugar and baking powder in large bowl; set aside. 
BEAT eggs, milk and butter in medium bowl with wire whisk until well blended. 
Add bananas; mix well.. Add to dry ingredients; stir just until moistened. 
(Batter will be slightly lumpy.) Let stand 10 min.; stir in walnuts. 
HEAT lightly greased electric griddle to 350°F or skillet on medium-high heat. 
Pour scant 1/4 cup batter onto griddle for each pancake. Cook until bubbles 
form on tops; turn over to brown other sides.
 
Makes 15 servings, about 2 pancakes each.

Christmas Brunch Casserole

Make this up on Christmas Eve, refrigerate and bake on Christmas morning.

1 pound bacon
1 tblsp butter or margarine
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 tsp salt
1/4 tsp garlic salt
1/2 tsp black pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Preheat oven to 400 degrees. Grease a 13x9 inch casserole dish. Place bacon in 
a large deep skillet. Cook over medium high heat until evenly brown. Drain, 
crumble and set aside. In a separate skillet, melt butter and fry onions and 
mushrooms until tender. Place potatoes in bottom of prepared dish. Sprinkle 
with salt, garlic salt and pepper. Top with bacon, then onions and mushrooms. 
In a large bowl, beat eggs with milk and parsley. Pour over casserole. Top with 
grated cheese. Cover and refrigerate overnight. Bake in preheated oven for 1 
hour or until set. If preparing and baking the same day, cook for 45 minutes.

Christmas Morning Casserole

2 pounds hot bulk sausage (mild can be used)
8 slices bread, crusts removed
3/4 pound grated sharp cheddar cheese
8 large eggs, beaten
3 cups milk
1 1/2 teaspoons salt
1 1/2 teaspoons dry mustard

In a large skillet, brown sausage, crumble and drain. Butter a 9x13 inch 
casserole dish. Place bread (torn into bite-sized pieces) in bottom of dish. 
Place sausage on top of bread. Sprinkle cheese over top. In a large bowl, mix 
beaten eggs, milk, salt and dry mustard. Blend well. Pour over other 
ingredients. Cover and refrigerate overnight. The next morning, bake at 350 
degrees for 45 minutes uncovered.. Slice into squares

This recipe is so easy! Try using the spicy salsa verde and HOT chilies for 
some extra spice. We usually mix some cooked rice with the finished product and 
serve it with tortillas, sour cream and cheese! Enjoy!

2 1/2 cups salsa verde 
1 (4 ounce) can chopped anaheim chilies 
3 boneless skinless chicken breasts 
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can white beans, drained and rinsed
hot cooked rice 

1. Place 2 cups of the salsa verde in the Crock-Pot. Stir in the chilies. Add 
meat.
2. Cook on high for 4 hours.
3. Take meat out of Crock-Pot and shred.
4. Add back to Crock-Pot along with remaining 1/2 cup salsa and the 2 cans of 
beans.
5. Stir and cook on high for 30 more minutes.
6. Serve over rice.

Quick Mix Hot Cross Buns. 
 
 Hot cross buns are traditionally served for Easter but are also a 
special treat on other occasions. 
 
 2 c. Quick Mix 
 1/4 c. currants or raisins 
 1/4 c. mixed candied fruit 
 1 tsp. cinnamon 
 1 tsp.. instant coffee powder 
 1/4 c. sugar 
 1/2 c. milk 
 1 egg yolk 
 1 T. water 
 
 Frosting. 
 
 1/3 c. confectioners' sugar 
 1 tsp. milk 
 
 Preheat oven to 450F. Stir together Quick Mix, currants, candied 
fruit, cinnamon, coffee powder, and sugar. Add milk and stir to form 
a soft dough. Knead on a floured surface 25 times. Shape into 8 
balls and place close together in a greased, floured 8 round baking 
pan. 
 
 Combine egg yolk and water. Brush over tops of buns. Bake for 15 
minutes, or until golden brown. Cool and drizzle frosting over each 
bun to form an X. Makes 8 buns.

Method

Sprinkle over batter. Bake at 400 degrees for 20 to 25 minutes.

1 (.25 ounce) package active dry yeast 
1 tablespoon white sugar 
1 cup warm water (110 degrees F/45 degrees C) 
1 cup milk, room temperature 
2 eggs 
2 teaspoons salt 
2 tablespoons butter, softened 
1/4 cup chopped fresh parsley 
1/4 cup chopped fresh chives 
6 cups bread flour 
1 egg white 
2 tablespoons water 
DIRECTIONS:
In a small mixing bowl, dissolve yeast and sugar in 1
cup warm water. Let stand until creamy; about 10
minutes. 
In a large bowl, stir together the yeast mixture with
milk, eggs, salt, butter, parsley, chives, and 4 cups
flour. Add the remaining flour, 1/2 cup at a time,
until dough has pulled together. Turn dough out onto a
lightly floured surface, and knead until smooth and
elastic, about 8 minutes. Lightly oil a large bowl,
place the dough in the bowl, and turn to coat with
oil. Cover with a damp cloth and put in a warm place
to rise until doubled in volume, about 1 hour. 
Grease two 9x13 inch baking pans. Deflate the dough,
and turn it out onto a lightly floured surface. Divide
the dough into 24 pieces. Shape each piece into a
round ball, and place into the prepared pans. Cover
the rolls with a warm, damp cloth, and let rise until
doubled in volume, about 40 minutes. 
Preheat oven to 350 degrees F (175 degrees C). In a
small bowl, lightly beat the egg white with 2
tablespoons of water; brush egg wash over tops of
rolls. 
Bake in preheated oven for about 30 minutes, or until
golden brown.

* 1/4  cup fat-free milk

* 2  cups fresh fruit (choose from sliced strawberries, peeled and 
sliced kiwi fruit or peaches, blackberries, blueberries, seedless grapes, 
sliced nectarines or apricots, and/or pitted and halved sweet cherries) 
* 2  tablespoons orange marmalade, warmed 
Directions
1. For pancakes, coat four 4-1/4-inch pie plates or 4-1/2-inch foil tart pans 
with cooking spray. Set aside. 
2. In a large mixing bowl use a rotary beater or wire whisk to beat egg product 
or whole egg plus egg white, flour, milk, oil, and salt until smooth. Divide 
batter among prepared pans. Bake in a 400 degree F oven about 25 minutes or 
until brown and puffy. Turn off oven; let stand in oven for 5 minutes. 
3. To serve, immediately after removing the pancakes from oven, transfer to 4

6 shredded wheat biscuits
3 tablespoons unsalted butter, melted
1 cup grated Cheddar cheese
6 eggs
6 tablespoons milk
Salt
Freshly-ground black pepper
Paprika
 
Heat oven to 350 degrees F. Grease six custard cups. Finely crush shredded 
wheat biscuits. Toss cereal and butter until well combined. Set aside 3 
tablespoons of the cereal, and divide the rest evenly among the custard cups. 
Press the mixture evenly against the bottoms and sides of the cups. Divide 
one-half of the cheese equally among the custard cups, and break an egg into 
each cup. Spoon 1 tablespoon of milk over each egg, and sprinkle it with salt 
and pepper. Cover with the remaining cheese, and spread about 1 tablespoon of 
the reserved cereal around the edge of each cup. Sprinkle the top of each cup 
with paprika. Place the custard cups on a baking sheet. Bake for 15 to 20 
minutes, or until the eggs are firm. Serve the eggs hot.

place on lightly greased baking sheets. Bake at 450° for 7 to 9 minutes or 
until lightly browned. Brush tops evenly with remaining 1 tablespoon melted 
butter. 

Note: For testing purposes only, we used Bisquick all-purpose baking mix. 

To make ahead: Freeze unbaked biscuits on a lightly greased baking sheet 30 
minutes or until frozen. Store in a zip-top plastic freezer bag up to 3 months. 
Bake as directed for 8 to 10 minutes. 
  
Cranberry-Orange- Glazed Biscuits: Decrease baking mix to 2 cups plus 2 
tablespoons. Add 1/2 cup chopped dried cranberries to baking mix. Prepare 
dough, and bake as directed. Omit 1 tablespoon butter for brushing biscuits 
after baking. Stir together 6 tablespoons powdered sugar, 1 tablespoon orange 
juice, and 1/4 teaspoon grated orange rind. Drizzle evenly over warm biscuits. 
  
To make ahead: Freeze unbaked biscuits on a lightly greased baking sheet 30 
minutes or until frozen. Store in a zip-top plastic freezer bag up to 3 months. 
Bake as directed for 8 to 10 minutes or until lightly browned. Proceed with 
recipe as directed.

Marie Callender's German Chocolate Pie 

8 baked pastry pie shell
1 small box dark chocolate pudding (cooking kind, not instant) 
1 cup semi sweet chocolate chips 
1/2 cup fine coconut 
1/2 cup chopped nuts (pecans or walnuts) 
whipped topping (like Cool Whip) 

Take crust and cover bottom with chocolate chips, just enough for one layer to 
cover bottom. Heat in oven or microwave to SLIGHTLY warm and soften the 
chocolate chips. Meanwhile, cook pudding according to directions on box and add 
coconut  nuts, stir well. Pour while hot into pie crust. Chill in refrigerator 
until set. Once chilled, top with regular whipped 
topping (like Cool Whip). For more of a restaurant effect put topping into a 
cake decorating bag with tip  pipe on. 
Sprinkle top with a few chocolate chips, coconut,  nuts for a finishing touch. 
Most people prefer the German Chocolate pie with whipped cream, but if you 
would prefer a meringue topping... 

2 egg whites 
1/2 tsp. vanilla 
1/4 tsp. cream of tartar 
4 Tbsp. sugar 

Beat egg whites, vanilla,  cream of tartar until soft peaks form. Gradually 
add sugar beating until stiff, glossy peaks form  sugar is dissolved. Spread 
over hot filling; for that Marie Callender's effect leave a smidge of filling 
visible around the edge, and don't forget to sprinkle the chips, coconut,  
nuts on top. Bake at 350° for 12-15 min or till meringue is golden. Chill in 
fridge.

Heat waffle maker. Place cereal in resealable food-storage plastic bag; seal 
bag and crush with rolling pin or meat mallet (or crush in food processor). 
  
 
 
  In large bowl, mix cereal and buttermilk; let stand 5 minutes. Stir in egg, 
oil and vanilla. Stir in remaining ingredients just until smooth. (Batter will 
be thick.)
  
 For each waffle, brush hot waffle maker with vegetable oil. Spread batter onto 
center of hot waffle maker. (Waffle makers vary in size; check manufacturer' s 
directions for recommended amount of batter.) Close lid of waffle maker.
  
 Bake about 5 minutes or until steaming stops and waffle is golden brown. 
Carefully remove waffle. Serve immediately. Repeat with remaining batter. Serve

1 cup water

1/4 teaspoon onion powder
2 tablespoons butter
1 cup finely crushed herb-seasoned dry bread stuffing mix
1 cup cooked, diced turkey meat
1 cup shredded Cheddar cheese
2 cups leftover mashed potatoes

Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish. Melt 3 
tablespoons butter in a saucepan over low heat. Blend in the flour. Slowly stir 
in evaporated milk and water, then season with salt, pepper, and onion powder. 
Stir sauce over low heat for 5 minutes. In a separate saucepan over low heat, 
melt 2 tablespoons butter. Blend in the dry stuffing mix. Place the turkey in 
the prepared baking dish. Pour the sauce over turkey, then sprinkle with 
Cheddar cheese. Spread mashed potatoes over cheese. Top mashed potatoes with 
the stuffing mixture. Makes 6 servings.

1/4 cup warm water (about 100 degrees F), plus 1 cup warm water 
4 cups flour, plus more for rolling out dough 
1/4 cup dry white wine 
1/4 cup extra-virgin olive oil 
Salt and pepper 
  
 
Filling: 
1/4 cup extra-virgin olive oil, plus more for the pan and drizzling the crust 
2 pounds leeks, very thinly sliced 
3 tablespoons milk 
1 teaspoon sugar 
6 anchovy fillets, rinsed, drained, and chopped 
1/2 cup pitted black olives, chopped 
1/4 cup finely chopped parsley 
1/2 cup canned tomatoes, coarsely chopped 
1/2 cup golden raisins, soaked in hot water to plump 
1 teaspoon sugar
  
Sprinkle the dried yeast over 1/4 cup warm water in a small bowl. When it 
blooms, add remaining water. In a larger bowl, mix flour with wine, olive 
oil, water, salt, and pepper. Stir in the yeast water and work it into the 
dough with your hands. Transfer to a lightly floured board and knead until it 
just loses its stickiness. Set aside, covered with a damp cloth. Warm 1/4 cup 
olive oil in a saute pan over medium-low heat. Add the leeks and cook gently 15 
minutes, or until soft but not browned. Add the milk and cook 5 additional 
minutes. Stir in sugar and cook another 5 minutes. The leeks should be very 
soft. Add the anchovies, black olives, parsley, and tomatoes. Stir to mix well 
and continue cooking until the sauce is thick and liquid has evaporated. Remove 
from heat and stir in raisins. Lightly oil a 12-inch pizza pan. Divide the 
dough into two pieces, one slightly larger than the other. Roll the larger 
piece out to 1/8-inch thickness ad place on the
 pizza pan. Spread the filling evenly across this piece, leaving a 1-inch 
border around the edges. Roll out the other piece of dough and fit it on top of 
the first, and roll the edges of the two pieces of dough together. Brush the 
remaining oil over the top crust, sprinkle with sugar, prick in several places 
with a fork, and set aside for 30 minutes. Preheat the oven to 450 degrees F. 
Bake in the oven for 15 minutes, then turn the heat down to 350 degrees F and 
bake another 30 minutes. Serve hot or at room temperature.

Raspberry Nut Muffins 

1 3/4 cup flour 
1 1/2 teaspoon baking powder 
1/2 teaspoon baking soda 
1 teaspoon salt 
6 tablespoons butter 
3/4 cup sugar 
2 eggs 
1 cup plain or raspberry yogurt 
1 tablespoon lemon juice 
6 tablespoons milk 
1 cup each raspberries (frozen drained or fresh) 
1 cup chopped nuts 

Combine flour, baking powder, soda and salt. Cream butter and sugar. Add eggs, 
one at a time, beating well after each. Combine yogurt, lemon juice and milk. 
Add flour and yogurt mixture alternately to the creamed mixture. Fold in 
raspberries and nuts. Fill greased muffin tins 3/4 full. Let stand 5 minutes, 
then bake at 350 degrees for 25 minutes. 

Yield: 18 2 1/2 muffins.

Braided Stuffed Pizza Bread
 
Three cheeses blend with favorite pizza ingredients, all wrapped in a tender 
crust.

12 servings

 

INGREDIENTS 
1   can (13.8 oz) Pillsbury® refrigerated classic pizza crust 
2 tablespoons Boursin cheese with garlic and herbs 
3 oz thinly sliced Canadian bacon 
10 slices pepperoni 
1 cup shredded mozzarella cheese (4 oz) 
2 tablespoons shredded Parmesan cheese 
1 egg yolk 
1 teaspoon water 
1 to 2 teaspoons poppy seed 
 Pizza sauce, if desired 


DIRECTIONS 
 Heat oven to 400°F. Spray cookie sheet with cooking spray. Unroll dough on 
cookie sheet, forming 14x11-inch rectangle.
  
 Spread garlic and herb cheese lengthwise down center 1/3 of rectangle to 
within 1/2 inch of short ends. Top with Canadian bacon, pepperoni, mozzarella 
and Parmesan cheese.
  
 With scissors or sharp knife, make cuts 1 inch apart on long sides of dough to 
within 1/2 inch of filling. Alternately cross strips over filling. Fold ends 
under to seal.
  
 In small bowl, mix egg yolk and water until well blended. Brush over dough; 
sprinkle with poppy seed.
  
 Bake 11 to 16 minutes or until golden brown. Cut into crosswise slices. Serve 
with pizza sauce.
  
High Altitude (3500-6500 ft): Bake 15 to 19 minutes.

Bran Apple Muffins

Makes:
18 servings, 1 muffin each

1-1/2 cups flour 
1 Tbsp.  CALUMET Baking Powder 
1 tsp. ground cinnamon 
1/2 tsp.  salt 
2-1/2 cups POST Bran Flakes 
1 cup  milk 
3/4 cup (1-1/2 sticks) vegetable oil spread 
1/2 cup  sugar 
1 egg, lightly beaten 
1 cup  chopped apple 

PREHEAT oven to 400°F. Mix flour, baking powder, cinnamon and salt until well 
blended; set aside. Mix cereal and milk in medium bowl; let stand 5 minutes. 
BEAT vegetable oil spread and sugar in large bowl with electric mixer on medium 
speed until light and fluffy. Add cereal mixture and egg; mix well. Add flour 
mixture; stir just until moistened. Stir in apple. Spoon evenly into 18 greased 
or paper-lined medium muffin cups, filling each cup 2/3 full. 
BAKE 25 minutes or until toothpick inserted in centers comes out clean. Cool on 
wire racks.

Substitute
Substitute apple juice for the milk.

Ingredients

3 C. Half and Half Cream, divided
1/2 C. Vanilla Baking Chips
1 Cinnamon Stick
1/8 tsp. Ground Nutmeg
1 tsp. Vanilla Extract
1/4 tsp. Almond Extract
Ground Cinnamon, Optional

Directions

In a saucepan, combine 1/2 cup cream, vanilla chips, cinnamon stick and nutmeg. 
Stir over low heat until chips are melted; discard cinnamon stick. Add 
remaining cream; stir until heated through. Remove from the heat; add extracts. 
Sprinkle each serving with ground cinnamon if you like.

Vanilla Crepes With Orange Sauce

1 Cup milk
2 tablespoons vanilla extract
1/2 cup sugar
3 tablespoons all-purpose flour
3 Eggs -- divided
16 Crepes
2 tablespoons melted butter
Orange sauce -- (see recipe)

Scald milk and vanilla.. Set aside. Combine sugar, flour, and egg yolks. Stir 
in milk mixture. Cook over medium heat, stirring constantly, until mixture 
comes to a boil. Cook a few seconds; remove from heat. Beat egg whites until 
stiff; fold gently into egg yolk mixture. Place about 3 Tbsp. batter on each 
crepe; roll crepes loosely over batter. Place on cookie sheet; brush crepes 
with melted butter. Bake at 350 degrees for 20 to 25 minutes. Arrange crepes on 
platter; serve immediately with Orange sauce.

Roast Pork Tenderloin

A delicate rosemary-kissed orange sauce makes this pork tenderloin memerable.

Ingredients

2 (3/4 lb) pork tenderloins
2 Tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1/2 c dry red wine, divided
2 fresh rosemary sprigs
1 med onion, sliced
2 Tbsp butter/margarine, melted
1/2 c fresh orange juice

Directions

Brush pork with oil; sprinkle with salt and pepper.  Place pork in a roasting 
pan.  Pour 1/4 c wine over pork.  Place rosemary on pork.  Bake, uncovered, at 
350 degrees for 15 minutes..  Pour remaining 1/4 c wine over pork.  Bake 20 
additional minutes or until meat thermometer inserted in thickest part of 
tenderlion registers 160 degrees (medium).  Cook onion in butter in a 
small saucepan over medium-high heat, stirring constantly, until tender.  Add 
orange juice, and cook 5 minutes, stirring occasionally.  Serve tenderlin with 
onion mixture.  Makes 6 servings.

Oatmeal Cookies 
From Food Network Kitchens 

Prep Time: 30 minutes 
Cook Time: 1 hour 
Yield: about 20 cookies 
 
1 cup all-purpose flour 
3/4 teaspoon baking soda 
1/2 teaspoon fine salt 
1/2 teaspoon ground allspice 
1/2 teaspoon ground cinnamon 
1/8 teaspoon ground mace 
3/4 cup unsalted butter, at room temperature 
1/2 cup sugar 
3/4 cup packed light brown sugar 
2 large eggs, at room temperature 
1 teaspoon vanilla extract, at room temperature 
2 3/4 cups rolled oats 
3/4 cup raisins 
3/4 cup chopped pecans Position the racks in the top and lower third of the 
oven and preheat to 350 degrees F. 
In a large bowl, whisk together the flour, baking soda, salt, allspice, 
cinnamon, and mace. 
In another large bowl, combine the butter and sugar and, with a hand-held 
electric mixer, mix on low speed until just incorporated. Raise the speed to 
high and mix until light and fluffy. (Occasionally turn the mixer off, and 
scrape the sides of the bowl down with a rubber spatula.) 
Add the brown sugar and mix until incorporated. Add the eggs to the butter 
mixture, one at time, waiting for the first one to be fully incorporated before 
adding the last. Mix in the vanilla. 
Reduce the mixer's speed to low. Add the flour mixture, little by little, until 
a smooth dough is formed (scrape the bowl down occasionally) . Turn off the 
machine, stir in the oats, raisins, and pecans with a rubber spatula. 
Line 2 baking sheets with parchment paper.. Using a spoon, drop heaping 
tablespoons of the dough onto the sheets, spaced about 2 inches apart. 
Bake the cookies in batches, turning the pans once, until golden brown, but 
still soft and spongy, about 15 minutes per batch. Let the cookies cool 
slightly on the baking sheets, and then transfer to racks to cool completely.

Buttermilk Bread In A Pressure Cooker
I have never done this becuase I do not have a pressure cooker. I hope that 
someone can use it.. 

1 Egg
1/2 c Sugar
1 c Flour
1/2 ts Soda
1 ts Baking powder
1 c Buttermilk
1 c Nut, dates and/or raisins
4 c Water in pressure cooker with rack.

Combine egg and sugar. Sift flour, soda and baking powder. Add buttermilk 
anternately with sifted dry ingredients. Mix well. Add nuts and stuff. Turn 
into buttered bowl and cover with wax paper. Place bowl in cooker on rack with 
water. Place cover on cooker. Steam without pressure weight for 15 minutes, 
then cook at cook position for 25 minutes, allow to cool naturally.  Works, and 
makes quite tasty bread. I've also got a really good receipe for making brown 
bread and boston brown bread in a pressure cooker.

Ingredients:
 • Chocolate
 • Frog Shaped chocolate mold - available at cake decorating stores or online
 • Pop Rocks candy
Directions:
 1.  Melt chocolate in microwave or in a double boiler
 2.  Stir - in Pop Rocks Candy
 3.  Pour into mold and let cool
 4.  When cool package in a snack size plastic bag with a wizard card.
