From the Better Recipes website... ~ Upside Down Peach Cobbler This light buttermilk cobbler is topped with fresh peaches baked in a gooey mixture of brown sugar, butter and rum or brandy. Ingredients: * 4 medium peaches * 3 tbsp butter, melted * 3/4 cup dark brown sugar, packed * 1 tbsp rum or brandy, optional * 2 large eggs * 2 tbsp buttermilk * 1/2 tsp vanilla extract * 1 cup all purpose flour * 3/4 cup granulated sugar * 3/4 tsp baking powder * 1/4 tsp baking soda * 1/4 tsp salt * 1/2 tsp powdered ginger * 6 tbsp butter, softened * 6 tbsp buttermilk * 1/2 cup pecans, very finely chopped Method Peel and slice peaches into 1 inch think slices. Mix melted butter, dark brown sugar and rum then press into a 9 X 2 cake pan lined with baking paper (parchment paper) and sprayed with nonstick spray. Place peach slices into sugar mixture around pan with curved side into sugar and pit side overlapping the peach before it.. In a small bowl combine eggs, vanilla and 2 tbsp buttermilk and set aside.. In a mixing bowl whisk together the flour, white sugar, baking powder, baking soda, salt and ginger (on low speed, using a hand held or stand up mixer). Add soft butter and buttermilk and mix together until just combined. Turn speed up to medium and mix for an additional 1 1/2 minutes. Turn mixer back to low and slowly add eggs scraping down sides as needed. Pour mixture over fruit in cake pan and spread evenly. Sprinkle pecans on top of cake. Bake at 350 degrees until a toothpick inserted comes out clean, 30-45 minutes. Insert knife around edge to loosen sides from pan and invert onto serving platter but do not remove pan. Allow to sit with pan on top for 20 minutes. Then gently remove pan and paper. Notes: Can also be done with plums, however omit ginger and add 1/4 tsp cloves, 1/4 tsp allspice and 1/2 tsp cinnamon to brown sugar and butter mixture.. Place beans in a Dutch oven; cover with water 2 inches above beans, and let soak 8 hours. Drain beans, and rinse thoroughly; drain and set aside. Cut smoked sausage into 1/4-inch-thick slices. Pulse almonds in a food processor (about 10 quick pulses) until broken unto small pieces. Stir the almonds, coconut, 1/2 cup cranberries and 1/2 cup pistachios into the condensed milk mixture. Beat egg whites and salt in a medium bowl with an electric mixer on medium-high speed until soft peaks form, about 1 minute. Fold 1/2 cup of the egg whites into the coconut mixture. Add the remaining egg whites, gently folding into the mixture until just combined. Drop 1 teaspoon of dough onto a prepared baking sheet and top with another teaspoon of dough, making a double-tall macaroon. Repeat with the remaining batter, spacing the macaroons 1 inch apart. Bake the macaroons, switching the pans back to front and top to bottom halfway through, until the coconut is lightly golden, 18 to 22 minutes (sweetened coconut will brown faster than unsweetened) . Let cool on the pans on a wire rack until cool to the touch, 30 minutes. Optional garnish: Place 1/2 cup chocolate chips in a microwave-safe bowl and melt in the microwave on Medium in 30-second bursts, stirring after each burst to ensure even melting, until completely melted. From the All_Easy_Cookin_ Recipes group ~ Delicious Pecan Sandies 1 cup of granulated sugar 1 cup of confectioners sugar (may be sifted if desired) 1 cup of shortening 1 cup of butter 1 tbsp vanilla 2 eggs 4 cups of all purpose flour (may be sifted if desired) 1 tsp of cream of tartar 1 tsp of salt 1 tsp baking soda 2 cups of chopped pecans 1/2 c of granulated sugar for decoration Preheat oven to 375 degrees. Blend together flour, soda, tartar and salt in a large bowl then set aside. Cream shortening, butter, confectioners sugar, and granulated until light and fluffy (I like to use a mixer for this) then add the eggs one at a time. Then add vanilla. Gradually blend dry mixture with the butter, sugars, egg and vanilla mixture. Stir in chopped pecans. Refrigerate dough for about 2hrs. Cover cup with a glass lid (from another utensil) or plastic wrap. Cook 25 seconds at 100% power. Turn cup halfway around. Cook 20 seconds at 100% power until egg is hard cooked. (Autrotating oven: Eliminate turn.) Turn out onto small plate, remove and mash yolk on one side of plate, and chop egg white on the other side. Set aside. Fruit-Filled Puff Pancakes Prep: 10 minutes Bake: 25 minutes Ingredients * Nonstick cooking spray * 1/2 cup refrigerated or frozen egg product, thawed, or 1 whole egg plus 1 egg white * 1/4 cup all-purpose flour * 1/4 cup fat-free milk * 1 tablespoon cooking oil * 1/4 teaspoon salt * 2 cups fresh fruit (choose from sliced strawberries, peeled and sliced kiwi fruit or peaches, blackberries, blueberries, seedless grapes, sliced nectarines or apricots, and/or pitted and halved sweet cherries) * 2 tablespoons orange marmalade, warmed Directions 1. For pancakes, coat four 4-1/4-inch pie plates or 4-1/2-inch foil tart pans with cooking spray. Set aside. 2. Grease six custard cups. Finely crush shredded wheat biscuits. Toss cereal and butter until well combined. Set aside 3 tablespoons of the cereal, and divide the rest evenly among the custard cups. Press the mixture evenly against the bottoms and sides of the cups. Divide one-half of the cheese equally among the custard cups, and break an egg into each cup. Marie Callender's German Chocolate Pie 8 baked pastry pie shell 1 small box dark chocolate pudding (cooking kind, not instant) 1 cup semi sweet chocolate chips 1/2 cup fine coconut 1/2 cup chopped nuts (pecans or walnuts) whipped topping (like Cool Whip) Take crust and cover bottom with chocolate chips, just enough for one layer to cover bottom. Heat in oven or microwave to SLIGHTLY warm and soften the chocolate chips. Meanwhile, cook pudding according to directions on box and add coconut nuts, stir well. Pour while hot into pie crust. Chill in refrigerator until set. Once chilled, top with regular whipped topping (like Cool Whip). For more of a restaurant effect put topping into a cake decorating bag with tip pipe on. Sprinkle top with a few chocolate chips, coconut, nuts for a finishing touch. Most people prefer the German Chocolate pie with whipped cream, but if you would prefer a meringue topping... 2 egg whites 1/2 tsp. vanilla 1/4 tsp. cream of tartar 4 Tbsp. sugar Beat egg whites, vanilla, cream of tartar until soft peaks form. Gradually add sugar beating until stiff, glossy peaks form sugar is dissolved. Spread over hot filling; for that Marie Callender's effect leave a smidge of filling visible around the edge, and don't forget to sprinkle the chips, coconut, nuts on top. In a large bowl, whisk together the flour, baking soda, salt, allspice, cinnamon, and mace. In another large bowl, combine the butter and sugar and, with a hand-held electric mixer, mix on low speed until just incorporated. Raise the speed to high and mix until light and fluffy. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.) Add the brown sugar and mix until incorporated. Add the eggs to the butter mixture, one at time, waiting for the first one to be fully incorporated before adding the last. Mix in the vanilla. Reduce the mixer's speed to low. I hope that someone can use it.. 1 Egg 1/2 c Sugar 1 c Flour 1/2 ts Soda 1 ts Baking powder 1 c Buttermilk 1 c Nut, dates and/or raisins 4 c Water in pressure cooker with rack. Combine egg and sugar. Sift flour, soda and baking powder. Add buttermilk anternately with sifted dry ingredients. Mix well. Add nuts and stuff. Turn into buttered bowl and cover with wax paper. Place bowl in cooker on rack with water. Place cover on cooker. Steam without pressure weight for 15 minutes, then cook at cook position for 25 minutes, allow to cool naturally. Works, and makes quite tasty bread.
